MINI CARAMEL APPLE TARTS (TARTE TATIN) RECIPE BY TASTY

Mini Caramel Apple Tarts (Tarte Tatin) Recipe by Tasty image

Here's what you need: apples, sugar, unsalted butter, salt, lemon, puff pastry, large muffin tin

Provided by Tasty

Categories     Desserts

Yield 6 tarts

Number Of Ingredients 7

3 apples, for one muffin tin's worth of apples, preferably Pink Lady or Braeburn
1 cup sugar
2 tablespoons unsalted butter
1 teaspoon salt
½ lemon, juiced
1 sheet puff pastry
large muffin tin

Steps:

  • To begin, peel, halve, and core your apples (melon ballers make a good tool for coring halved apples). You'll need one apple for every two tarts.
  • In a medium sauce pan, about 3 quarts (1 liter), slowly heat sugar. You'll want to stir frequently until it dissolves into a brown syrup. Melt 1 tablespoon of butter into the sugar, stirring frequently. Add a dash of salt and the juice from ½ lemon.
  • Lower the heat as low as it will go and add your apple halves. Toss to coat with caramel and let simmer 5-10 minutes until tender, flipping once.
  • Cut puff pastry into circles to fit just within the top of your muffin tin.
  • Place apple halves curve-side down in a large muffin tin. Pour remaining caramel over each apple half. Top with a circle of puff pastry to fit just inside the muffin tin.
  • Bake 14-20 minutes at 450°F (230°C). Invert muffin pan onto baking sheet immediately. Serve with vanilla ice cream.
  • Enjoy!

Yield Makes 8 servings

Number Of Ingredients 16

Caramel sauce
1 1/2 cups (packed) dark brown sugar
1 1/2 cups heavy whipping cream
6 tablespoons (3/4 stick) unsalted butter
Crust
1 1/4 cups unbleached all purpose flour
3/4 cup powdered sugar
1/4 teaspoon coarse kosher salt
1/2 cup (1 stick) chilled unsalted butter, diced
2 large egg yolks
Filling
2 tablespoons sugar
1 tablespoon unbleached all purpose flour
1/2 teaspoon ground cinnamon
1/2 teaspoon ground cardamom
6 large McIntosh or Golden Delicious apples (about 2 3/4 pounds), peeled, quartered, cored

Steps:

  • For caramel sauce:
  • Bring sugar, cream, and butter to boil in heavy medium saucepan over medium-high heat, whisking constantly until sugar dissolves. Boil until caramel thickens enough to coat spoon thickly, whisking often, about 10 minutes. DO AHEAD Caramel sauce can be made 5 days ahead. Cover; chill. Whisk over low heat until warm before using.
  • For crust:
  • Blend flour, powdered sugar, and salt in processor. Add butter and blend until coarse meal forms. Add egg yolks. Pulse until moist clumps form. Gather dough into ball; flatten into disk. Wrap and chill at least 1 hour. DO AHEAD Dough for tart crust can be made 1 day ahead. Keep chilled.
  • For filling:
  • Whisk first 4 ingredients in large bowl to blend. Add apples and toss until evenly coated.
  • Preheat oven to 375°F. Roll out dough on lightly floured surface to 13-inch round. Transfer to 9-inch-diameter tart pan with removable bottom. Cut overhang even with top of pan sides. Press sides of dough to bring 1/4 inch above sides of pan. Arrange apple quarters, cut side down, in circle around outer edge of pan, fitting snugly. Cut remaining apple quarters lengthwise in half; stand in center of tart, fitting snugly.
  • Bake tart until apples are tender, about 1 hour 15 minutes. Remove tart from oven; brush with some of caramel sauce. Cool tart to room temperature. Rewarm remaining caramel sauce. Drizzle tart lightly with sauce. Serve, passing remaining sauce separately.

INDIVIDUAL APPLE TART WITH ICE CREAM AND CARAMEL WALNUTS

Individual Apple Tart With Ice Cream And Caramel Walnuts image

Provided by Joanna Pruess

Categories     for one, ice creams and sorbets, dessert

Time 1h

Yield One serving and one pint of ice cream

Number Of Ingredients 12

2 cups milk
1/2 vanilla bean
6 egg yolks
2/3 cup sugar
1/2 cup sugar
1 teaspoon lemon juice
2 teaspoons water
1/4 cup large walnut pieces
1 sheet phyllo
1 Granny Smith apple, peeled and cored
1 tablespoon sugar mixed with the scrapings from inside of 1 vanilla bean and a pinch of cinnamon
1 teaspoon butter

Steps:

  • To prepare the ice cream, scald the milk with one-half vanilla bean in a small saucepan.
  • Whip the egg yolks with sugar until they are pale yellow. Pour the scalded milk mixture slowly over the eggs, beating constantly. Transfer the mixture to a small saucepan, and cook over low heat for four or five minutes, stirring constantly with a wooden spoon. Do not boil!
  • Remove from heat and cool. Add to an ice cream machine and follow directions to freeze.
  • To prepare caramel walnuts, combine sugar, lemon juice and water in a small saucepan and bring to a boil. Continue boiling until syrup is golden caramel in color. Turn off heat, stir in nuts, then remove them with a slotted spoon to a sheet of wax paper or a buttered cookie sheet.
  • For the tart, preheat oven to 375 degrees. Lightly butter a cookie sheet. Fold phyllo into approximately a 7-inch square. Cut out a 6- or 7-inch circle from the phyllo. Discard scraps.
  • Cut the apple in half from stem to blossom end. With flat side down, cut apple into thin-as-possible slices. Layer slices on the phyllo, starting from the outside and working toward the middle. Sprinkle with the sugar, vanilla and cinnamon mixture, and place butter in the middle.
  • Transfer the tart to a cookie sheet, and bake for 12 to 15 minutes, or until the tart is nicely browned and the sugar is glazed.
  • Serve with slightly softened vanilla ice cream and the caramel walnuts.

INDIVIDUAL RUSTIC APPLE TARTS

Individual Rustic Apple Tarts image

For a few brief months in fall, apples are suddenly abundant. Each firm, ripe fruit is full of delicious potential -- destined, perhaps, to be used in a dessert recipe, such as this one for rustic individual tarts.

Provided by Martha Stewart

Categories     Food & Cooking     Dessert & Treats Recipes     Pie & Tarts Recipes

Yield Makes 6

Number Of Ingredients 9

Pate Brisee for Plum Crumb Pie
2 tablespoons all-purpose flour, plus more for dusting
2 pounds Rome, Empire, or any good baking apples, peeled and sliced 1/4 inch thick
1/4 cup sugar, plus more for sprinkling
Juice of 1/2 lemon (2 tablespoons)
Pinch of ground cinnamon
Pinch of salt
6 tablespoons Applesauce, or good-quality prepared applesauce
1 large egg

Steps:

  • Preheat oven to 400 degrees. Line a baking sheet with a Silpat; set aside. Roll out dough to a 1/8-inch thickness. Cut out six 6-inch rounds. Transfer rounds to prepared baking sheet. Reserve dough scraps for another use.
  • Combine apples, sugar, flour, lemon juice, cinnamon, and salt in a medium bowl. Toss to combine. Sprinkle each dough round with sugar. Place 1 tablespoon of applesauce in center of each round. Mound apples over applesauce, leaving a 1-inch border. Fold dough up and over apples, making a crease or fold every 1 to 2 inches to enclose fruit and prevent juices from seeping out. Refrigerate for 30 minutes.
  • Lightly beat egg to make egg wash. Brush edges of dough with egg wash, and sprinkle with sugar. Bake until apples are tender and crust is golden brown, about 30 minutes.

3-Ingredient Caramel Apple Tart image

Provided by Anna Stockwell

Categories     3-Ingredient Recipes     Thanksgiving     Apple     Dessert     Butterscotch/Caramel     Phyllo/Puff Pastry Dough

Yield Serves 8-10

Number Of Ingredients 4

1 (14-17-ounce) package frozen puff pastry, thawed
1 cup store-bought caramel sauce, divided
5 large apples (preferably a mix of Granny Smith, Gala, and/or Cortland), cored, cut into 1/4" slices (about 2 1/2 pounds)
1/2 teaspoon kosher salt

Steps:

  • Arrange a rack in middle of oven; preheat to 400°F. Arrange puff pastry sheets next to each other on parchment so that longer sides are touching. Pinch seam together and gently roll to an 18x13" rectangle. Transfer with parchment to a rimmed baking sheet. Using a sharp knife, lightly score a 1/2" border around pastry (for a decorative border, make small shallow diagonal cuts with a paring knife).
  • Heat caramel in a small bowl in a microwave on high until smooth and pourable, about 30 seconds, or heat in a small pot over medium, stirring occasionally, until smooth and runny, about 5 minutes. Transfer 1 Tbsp. caramel to another small bowl; set aside.
  • Toss apples and salt in a large bowl. Pour remaining caramel over and toss to combine.
  • Arrange apple slices in 4 tight, overlapping rows on pastry, leaving a 1/2" border on all sides. Drizzle with any remaining caramel left in bowl.
  • Bake tart until crust and edges of apples are golden brown, about 35 minutes. Transfer to a wire rack and let cool.
  • Add 1 Tbsp. hot water to reserved caramel in small bowl, whisk to combine, and brush over apples with a pastry brush. Cut into pieces to serve.
  • Do Ahead
  • Tart can be made 6 hours ahead; store uncovered at room temperature and brush with glaze just before serving.
