SAUSAGE POTATO CASSEROLE
Steps:
- Preheat oven to 350° and spray a 3 quart baking dish or 13 x 9 baking dish with non stick spray right before filling.
- Add diced potatoes to large saucepan, cover with water, and boil for 15-20 minutes. Drain and return potatoes to pan.
- In a large frying pan, add ⅓ cup of water, smoked sausage and onions. Cook until sausage has browned on both sides. Add more water, if needed.
- Stir minced garlic into sausage and onions and continue cooking for an additional minute. Remove from heat and place on a plate lined with paper towels, set aside.
- Mix soups, broth, all three cheeses and seasonings into potatoes. Stir.
- Add in sausage and onion mixture. Stir until combined.
- Pour into prepared baking dish and bake for 40 minutes uncovered. Carefully remove from oven, let sit for 10 minutes before serving.
- Optional: top with sour cream, green onions, cilantro

- In a large saucepan, cook sausages over medium heat until a thermometer reads 160°. Remove with a slotted spoon; drain, reserving 2 tablespoons drippings. Cut sausages into 1/2-inch slices; set aside., In the drippings, saute onion and pepper until crisp-tender. Stir in the broth, tomatoes, apple juice, parsley, garlic, basil, oregano and sausages. Bring to a boil; add pasta. - In a large microwave-safe bowl, combine potatoes, 1 tablespoon oil and salt. Microwave, covered, on high for 6-8 minutes or until tender, stirring every 2 minutes., Meanwhile, in a large skillet, cook sausage over medium heat 6-8 minutes or until no longer pink, breaking into crumbles; remove with a slotted spoon., In same skillet, heat remaining oil over medium-low heat. Add apple and carrot; cook, covered, 5-7 minutes or until carrot is just tender, stirring occasionally. Return sausage to pan. Stir in sweet potatoes and seasonings; cook, covered, 10-12 minutes or until carrot is tender.

Steps:
- Combine sausage, 1/2 cup mozzarella cheese, 1/4 cup onion, bread crumbs and water. Press onto the bottom and up the sides of an ungreased 9-in. pie pan, forming a rim along edge of pan. Bake at 375° for 20 minutes or until juices run clear; drain. Meanwhile, in a skillet, cook bacon until crisp; remove to paper towels to drain. Reserve 1 tablespoon of drippings. Add potato; cook over medium-high heat for 10 minutes or until browned, stirring occasionally. Add green pepper and the remaining onion. Reduce heat to medium; cook for 5 minutes or until vegetables are tender, stirring occasionally. In bowl, whisk together eggs, milk, salt and pepper; stir in cheddar cheese. Add to skillet; reduce heat and cook for 2-3 minutes or until eggs are slightly moist. Spoon into sausage shell. Sprinkle with remaining mozzarella; crumble bacon over top. Return to the oven for 5 minutes or until cheese melts.

HEARTY SAUSAGE AND HASH BROWNS PIE
This is from one of those grocery store checkout recipe booklets, entitled New Great American Pies... probably from the 1990s. I've been making it for years when we have guests staying over. It makes a great breakfast. Instead of the American cheese, use a shredded cheese of your choice. To make easily when people wake, prebrown the sausage and onion, and prebake the crust. Then you can simply mix up the egg filling, pour into crust, top with cheese and bake.

- CRUST:.
- Mix the beef base into the melted butter.
- In medium bowl, combine potatoes, butter and bouillon.
- Spoon potato mixture into 2 lightly greased 10 inch pie plate; press on bottom and up side to rim to form crust. Bake 25 minutes.
- Reduce oven temperature to 350.
- SAUSAGE:.

- Heat the oil in a frying pan and gently cook the sausages over a medium-high heat for 10-12 mins, turning them until browned on all sides. Transfer to a plate, then put the butter in the pan and heat until sizzling. Tip in the onions, stirring them into the butter, then sprinkle over the sugar and fry for 8-10 mins until the onions are golden. Scatter over the flour and stir to make a paste, then add the tomato purée. Cook for a minute, then add the vinegar, pour in the stock and bring to the boil. Turn down to a simmer. Tip in any juices from the sausages, then cut the sausages into thick slices and add to the pan. Simmer everything together for 5 mins until you have a glossy onion gravy. Tip the mixture into a baking dish.
- To make the mash, tip the potatoes into a pan of cold salted water and bring to the boil, then turn down and simmer for 10-12 mins or until just cooked (the tip of a knife should slide in easily). Drain and leave for a minute. Pour the milk into the pan and bring to a simmer, then tip in the drained potatoes and butter, and mash thoroughly. Season to taste.
- Top the sausages and gravy with the mash, starting from the edge of the dish and working your way into the middle. Use a fork to scrape lines in the topping and scatter over the cheese, if using. Can be assembled, covered and chilled for up to two days or frozen for three months. Defrost completely before cooking. Heat the oven to 200C/180C fan/gas 6. Bake the pie on a tray for 35-40 mins until the top has browned. Leave to cool for 5 mins before scooping straight from the baking dish at the table and serving with peas, if you like.

- Combine potatoes, egg and onion powder.
- Press into well greased 9" pie pan.
