MEXICAN LASAGNA

Steps:
- Preheat the oven to 425 degrees F.
- Preheat a large skillet over medium high heat. Add 2 tablespoons extra-virgin olive oil - twice around the pan. Add chicken and season with chili powder, cumin, and red onion. Brown the meat, 5 minutes. Add taco sauce or stewed or fire roasted tomatoes. Add black beans and corn. Heat the mixture through, 2 to 3 minutes then season with salt, to your taste.
- Coat a shallow baking dish with remaining extra-virgin olive oil, about 1 tablespoon oil. Cut the tortillas in half or quarters to make them easy to layer with. Build lasagna in layers of meat and beans, then tortillas, then cheese. Repeat: meat, tortilla, cheese again. Bake lasagna 12 to 15 minutes until cheese is brown and bubbly. Top with the scallions and serve.

- Heat oven to 375°F.
- Brown meat with onions and peppers in large skillet; drain. Return meat to skillet. Add salsa, corn and seasonings; mix well.
- Layer 1/3 of the meat mixture, and half each of the tortillas and cottage cheese in 13x9-inch baking dish sprayed with cooking spray. Repeat layers; cover with remaining meat sauce. Sprinkle with cheddar and olives.
- Bake 30 min. or until heated through.

INDIANA MEXICAN LASAGNA
This is one of our family favorites and I guarantee will be a hit for you too! VERY easy to make and can be "personalized" at the table.

Steps:
- Brown ground beef and drain.
- Add to it the burrito seasoning mix, following directions on the back of the package.
- In 9 x 13 pan spread thin coat of enchilada sauce on bottom.
- Lay two tortillas in bottom of pan (they will overlap in middle).
- Spread about 1/3 of seasoned meat over tortillas.
- Next, place about 1/4 of the cheeses you are using.
- Drizzle (I use the back of a spoon while slowly pouring sauce) Enchilada Sauce here and there, not using more than 1/4 of your sauce.
- It will seem that you are not using enough, but you don't want it to get too saucy!
- Repeat layers 2 more times.
- After placing the last 2 tortillas on top,"paint" remaining sauce over entire surface of tortillas, cover w/ remaining cheeses.
- Cover pan w/ lid and/or foil and bake at 350 for about 30 minutes.
- Take lid/foil off and bake until cheeses are melted and bubbly!
- Let sit for about 10 minutes before cutting into.
- Offer lettuce, onion, olives, tomato, sour cream and sauces at table.
- I have also made this lasagna using seasoned chicken strips and spanish rice.

- Heat oven to 375°F. Cook and drain noodles as directed on package.
- Cook beef, onion, cilantro and red chilies in 10-inch skillet over medium heat 8 to 10 minutes, stirring occasionally, until beef is brown; drain.
- Place 5 of the noodles in bottom of ungreased rectangular baking dish, 13x9x2 inches. Layer with 1 1/2 cups of the beef mixture, 1 cup of the ricotta cheese and 1 1/4 cups of the salsa. Repeat with remaining noodles, beef mixture, ricotta cheese and salsa. Sprinkle with Monterey Jack cheese.
- Bake uncovered 35 to 40 minutes or until hot. Let stand 10 minutes before cutting.

- In a large nonstick skillet, cook beef over medium heat until no longer pink; drain. Stir in the beans, corn, jalapeno, taco seasoning and 3/4 cup tomato sauce. , Combine salsa and remaining tomato sauce. Spread 1/4 cup into a 13x9-in. baking dish coated with cooking spray. Layer with four noodles (noodles will overlap slightly), half of the meat sauce, 1 cup salsa mixture, 1/2 cup Monterey Jack cheese and 1/2 cup cheddar cheese. Repeat layers. Top with the remaining noodles, salsa mixture and cheeses. , Cover and bake at 350° for 45-50 minutes or until edges are bubbly and cheese is melted. Let stand for 10 minutes before cutting. - Place a large skillet or saute pan over medium-high heat, and drizzle in about 2-3 tablespoons of the oil; once hot, add in the onion, and saute for several minutes until it begins to become softened.
- Crumble in the ground beef, breaking it up with a spatula or a wooden spoon, and stir it into the onions to cook for a few minutes; once the meat is no longer pink, add in a couple of good pinches of salt and pepper, plus the cumin, coriander, chili powder, and oregano, and stir to incorporate.
- Stir in the garlic and the diced chilies, and once the garlic becomes aromatic, add in the tomato paste, and stir to combine, cooking the paste for about 30 seconds -1 minute.
