SPICY ROASTED CHICKPEAS

Number Of Ingredients 10

1 can (15oz chickpeas, drained, rinsed, and dried between paper towels)
drizzle of oil
cumin
ginger powder
garam masala
garlic powder
paprika
turmeric
salt
pepper

Steps:

  • Preheat oven to 350°F (180°C).
  • Drain and rinse chickpeas AND pat dry with paper towels.
  • On a baking sheet lined with parchment, toss chickpeas in oil and seasonings.
  • Roast 25-30 minutes.
  • Remove from oven and allow to cool. (They'll crisp up more as they cool!)
  • Enjoy as a snack, or on top of a Buddha bowl!
  • Yields ~ 1½ cups spicy roasted chickpeas.

1/2 teaspoon ground cumin
1 1/2 tablespoons curry powder
1 teaspoon salt
2 teaspoons olive oil
1/4 teaspoon ground coriander
31 ounces canned chick-peas
1 dash cooking spray

Steps:

  • Preheat oven to 400°F Coat a cookie sheet with cooking spray.
  • Heat a small pan over medium-high heat. Add oil, spices and salt and stir until fragrant, about 1 to 2 minutes.
  • Place chickpeas in a large bowl. Add spice mixture and mix well to coat chickpeas.
  • Place chickpeas on cookie sheet in a single layer and roast in oven until crunchy, checking and shaking pan twice during cooking, about 1 1/4 hours. Yields about 1/2 cup per serving. (Store any leftovers in an air-tight container.).

2 cups canned chickpeas, rinsed and drained
1 tablespoon lemon juice
2 tablespoons olive oil
1 teaspoon brown sugar
1 ½ teaspoons ground cumin
½ teaspoon ground coriander
¼ teaspoon ground cinnamon
1 teaspoon garam masala
1 pinch ground black pepper
1 pinch cayenne pepper, or to taste
½ teaspoon salt, or to taste

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Line a baking sheet with aluminum foil.
  • Stir together the chickpeas, lemon juice, olive oil, brown sugar, cumin, coriander, cinnamon, garam masala, black pepper, cayenne pepper, and salt in a mixing bowl. Spread the chickpea mixture in a single layer on the prepared baking sheet.
  • Roast in the preheated oven until the chickpeas are dark brown in spots, crisp, and have shrunk quite a bit, 25 to 30 minutes, stirring halfway through the cooking time. Cool to room temperature before serving.
