Easy recipe for making a classic goulash. Can also be done in a slow cooker. Inspired by Paula Deen's Bobby's Goulash.

2 pounds lean ground beef
2 large yellow onions, chopped
3 cloves garlic, chopped
3 cups water
2 (15 ounce) cans tomato sauce
2 (14.5 ounce) cans diced tomatoes
3 tablespoons soy sauce
2 tablespoons dried Italian herb seasoning
3 bay leaves
1 tablespoon seasoned salt, or to taste
2 cups uncooked elbow macaroni

Steps:

  • Cook and stir the ground beef in a large Dutch oven over medium-high heat, breaking the meat up as it cooks, until the meat is no longer pink and has started to brown, about 10 minutes. Skim off excess fat, and stir in the onions and garlic. Cook and stir the meat mixture until the onions are translucent, about 10 more minutes.
  • Stir water, tomato sauce, diced tomatoes, soy sauce, Italian seasoning, bay leaves, and seasoned salt into the meat mixture and bring to a boil over medium heat. Reduce heat to low, cover, and simmer 20 minutes, stirring occasionally.
  • Stir macaroni into the mixture, cover, and simmer over low heat until the pasta is tender, about 25 minutes, stirring occasionally. Remove from heat, discard bay leaves, and serve.

This easy-to-make traditional Hungarian beef dish is cooked with paprika, finished with sour cream, and served over buttered noodles.

2 to 3 pounds boneless chuck roast (cut into 1-inch chunks)
Kosher salt
Freshly ground black pepper
2 tablespoons all-purpose flour
3 tablespoons olive oil (divided)
4 medium sweet onions (sliced and separated into rings)
8 ounces baby portobello mushrooms (or cremini mushrooms, brushed clean and cut in half)
1 head garlic (about 12 cloves, peeled, large cloves cut in half)
1/2 cup sweet red wine
1 3/4 cups beef broth
1 (4-ounce) jar diced roasted red peppers
1/4 cup sweet Hungarian paprika
1 cup sour cream
4 cups cooked buttered noodles
A handful of chopped fresh parsley

  • Return beef and any accumulated juices to the pan. Stir until well-combined.

EASY GOULASH

This is not the traditional Hungarian recipe by any stretch of the imagination. My mother "threw this together" back in the late 1960s and named it goulash, when she was a young bride and money was very tight. I took her "recipe" and altered it to my own taste, mainly by adding spices. The last time I prepared this dish I made measurements, so I could share this tasty concoction with you. I serve this with a side green salad, garlic toast, and plenty of grated parmesan cheese on top. Note: Without the noodles, this recipe makes a great stir-in to your favorite canned spaghetti sauce!

1 lb ground beef
1/2 medium onion (chopped very fine)
1/2 teaspoon red pepper flakes (optional)
1 teaspoon Mrs. Dash seasoning mix
1 teaspoon dried oregano
1 teaspoon dried basil
1 teaspoon paprika (sweet, not smoked or hot)
salt (to taste)
fresh ground pepper (to taste)
2 tablespoons light brown sugar (more or less, depending on your taste)
1 tablespoon vinegar (I use apple cider vinegar, but whatever you have on hand is fine)
1/2 cup ketchup (I use Heinz)
1 1/2 teaspoons mustard
8 ounces egg noodles (or elbow macaroni)

Steps:

  • Place ground beef and onion into large pan and season with spices, herbs, salt, and pepper. Cook until beef is done but not browned. (If the beef is very lean, you may need a bit of oil to get things started).
  • Add brown sugar, vinegar, ketchup, and mustard to the cooked beef mixture. Stir until all is very well blended. Reduce heat to simmer.
  • While beef mixture is simmering, prepare the noodles or macaroni according to package instructions.
  • When noodles are done, drain them and add them to the pan with the beef mixture. Mix everything very well and serve immediately.

MACARONI GOULASH

This may not be what some people would consider as "Goulash" but it is the name my mom gave this when I was a child. Delicious and brings back wonderful memories. Hope you enjoy it too.

1 small green pepper
1 large onion
1 tablespoon margarine or 1 tablespoon oil
1 teaspoon salt
1/2 teaspoon black pepper
4 cups cooked macaroni
1 quart tomatoes
1 (32 ounce) can tomato sauce

Steps:

  • Saute green pepper and onions in margarine or oil.
  • Add ground beef, salt and black pepper.
  • Cook until browned.
  • Add this to tomatoes, tomato sauce and macaroni.
  • Simmer on low heat about 15 minutes.
  • Stir occasionally to prevent sticking.
  • Some water can be added if needed.

BEEF GOULASH

4 tbsp olive oil
700g stewing steak, cut into chunks
30g plain flour
1 large onion, thinly sliced
2 garlic cloves, finely chopped
1 green pepper, deseeded and thinly sliced
1 red pepper, deseeded and thinly sliced
2 tbsp tomato purée
2 tbsp paprika
2 large tomatoes, diced
75ml dry white wine
300ml beef stock, homemade or shop-bought
2 tbsp flat-leaf parsley leaves
150ml soured cream

Steps:

  • Heat oven to 160C/140C fan/gas 3.
  • Heat 1 tbsp olive oil in a flameproof casserole dish or heavy-based saucepan. Sprinkle 700g stewing steak chunks with 30g plain flour and brown well in three batches, adding an extra 1 tbsp oil for each batch. Set the browned meat aside.
  • Add in the remaining 1 tbsp oil to the casserole dish, followed by 1 large thinly sliced onion, 2 finely chopped garlic cloves, 1 green pepper and 1 red pepper, both finely sliced. Fry until softened, around 5-10 mins.
  • Return the beef to the pan with 2 tbsp tomato purée and 2 tbsp paprika. Cook, stirring, for 2 mins.
  • Add in 2 large diced tomatoes, 75ml dry white wine and 300ml beef stock. Cover and bake in the oven for 1 hr 30 mins - 2 hrs. Alternatively, cover and cook it on the hob on a gentle heat for about an hour, removing the lid after 45 mins.
  • Sprinkle over 2 tbsp flat-leaf parsley leaves and season well with salt and freshly ground pepper. Stir in 150ml soured cream and serve.

Growing up in Boston, I never knew that this 50's "once-a-week-at-home dinner" and "once-a-week-at-school lunch" was a regional dish! I still make this probably once every 2 weeks. Easy, cheap and comfort food all rolled into one huge pot! (It is always called American Chop Suey here, but while I was living in LA friends called it Goulash - so I've compromised!)

1 lb ground beef
1 large onion, chopped
1 large green pepper, chopped
1 tablespoon garlic salt
1 teaspoon pepper
28 ounces diced tomatoes with their juice
15 ounces tomato sauce
1 lb medium pasta shells or 1 lb elbow macaroni
1 cup cheddar cheese or 1 cup monterey jack cheese, shredded

Steps:

  • Brown ground beef, onion and pepper.
  • Season with garlic salt and pepper.
  • Add tomatoes and tomato sauce.
  • Simmer 10 minutes while macaroni is cooking.
  • Boil macaroni al dente, drain, rinse.
  • Return macaroni to pot, add beef and tomato mixture.
  • Serve in bowls with shredded cheese.
  • Even better left over and reheated (add a little water or tomato juice when reheating, if too dry).

EASY HUNGARIAN GOULASH

The amounts of garlic, onions, and especially paprika may seem excessive, but they all melt into an incredibly rich and flavorful pan gravy during the slow cooking process. The sauce is further enriched by the addition of sour cream. (Have not made yet.)

2 -3 lbs boneless chuck roast, cut into 1-inch chunks
kosher salt
fresh ground black pepper
2 tablespoons all-purpose flour
3 tablespoons olive oil, divided use
4 medium sweet onions, sliced and separated into rings
8 ounces baby portabella mushrooms or 8 ounces cremini mushrooms, brushed clean and cut in half
1 head garlic, peeled, large cloves cut in half (about 12 cloves)
1/2 cup sweet red wine
1 3/4 cups beef broth
1/4 cup sweet Hungarian paprika (see Note)
1 cup sour cream
4 cups cooked noodles, buttered, with chopped parsley

Steps:

  • Place beef chunks in a large bowl. Sprinkle liberally with kosher salt and freshly ground pepper.
  • Toss with the flour.
  • Heat a heavy Dutch oven over medium high heat and add 1 tablespoon of the olive oil. Swirl to coat the bottom of the pan. Place beef chunks in a single layer and brown on two sides. You will probably need to do this in batches. Do not crowd the meat or it will boil instead of brown. Remove browned beef chunks to a bowl.
  • Reduce heat to medium-low. To the drippings in the Dutch oven, add the remaining 2 tablespoons of olive oil, sweet onion rings, mushrooms, and garlic. Toss to coat with the olive oil. Cover tightly and sweat the vegetables, stirring occasionally, until onions are limp but not browned and mushrooms are releasing their liquid, about 10 minutes.
  • Add red wine to the vegetables and cook 2 minutes. Add beef broth and paprika. Return beef to the pan. Stir until well-combined. Cover tightly, reduce heat, and simmer on low heat for 1-1/2 to 2 hours, stirring occasionally, until beef is fork-tender.
  • Remove Dutch oven from heat and wait for boiling to subside. Taste and add additional salt if necessary. Stir in sour cream until completely incorporated into the gravy.
  • Serve Hungarian gulash over hot buttered noodles with chopped parsley.
  • Note: The amount of paprika is correct. Please do use it all. If you cannot use the wine, use an equal amount of additional beef broth. The goulash may be frozen, before the addition of the sour cream. Reheat and add the sour cream just before serving.
