GRILLED CORN ON THE COB

Steps:
- 1. Keeping the husks attached, peel them back in sections on each ear of corn, and remove the silk. Cover the exposed corn with the husk.
- Soak the corn in cold water for 5 to 10 minutes.
- 2. Preheat one grate of a well-oiled charcoal or gas grill to medium-high and another to high.
- 3. Place the cilantro, lime juice, garlic, salt, and pepper in a small food processor or in a blender and pulse to combine. With the machine running, slowly drizzle in the oils. Alternately the pesto can be combined by hand. Set aside.
- 4. Place the corn, still covered by the husk, on the medium-high grate. Cook for 3 minutes, turn to the other side, and cook for 3 minutes.
- Remove from the grill, peel back the husk, return to the high grate to mark and lightly char the corn on all sides, turning and jockeying between medium and high as need for 5 to 7 minutes total.
- 5. Remove the corn from the grill and brush generously with the pesto. Squeeze lime over the ears and sprinkle with fleur de sel. Serve with any remaining limes, and pats of butter on the side.

- Microwave corn on HIGH 16 min., turning after 8 min. Meanwhile, mix remaining ingredients until blended.
- Cut bottom ends off corn cobs. Carefully remove husks and silk from corn. (Husks and corn will be hot.)
- Spread corn with dressing mixture.

When we go camping or at home, we have an old cooler we fill with water.We buy corn and soak it in the husk in the cooler. We made this for our friends about 10 years ago and this is the way they do it now.We have a lot of corn like this at night time around the firepit.

Steps:
- Soak at least 4 hours in water or overnight.
- You can also cook this on the bar-b-q.
- Drain excess water and place on grill; turn over about every 15 minutes.
- (Takes about 40 minutes to cook.).
- When you take it off the grill, pull the husk back but don't break it off--the silk will come off easy.
- Use the husk as a handle and roll the cob in butter.
IN-THEIR-HUSKS GRILLED CORN ON THE COB

- Preheat gas grill to medium-high heat or prepare charcoal grill.
- Brush the husks with the oil and set aside on a tray. When the grill is ready, place corn directly on the grill and grill until husks are charred, rotating them so that they grill evenly on all sides. Transfer to a tray and let stand until cool enough to handle. Remove husks, spread a little butter over the whole surface of the cobs, sprinkle with salt and pepper and serve.

- Prepare grill.
- Peel back corn husks carefully, without breaking off, and discard silks. Fold husks back into place and tie ends together with strips of outer husk or kitchen string. In large bowls cover corn with cold water and soak 10 minutes. Drain corn and grill on a rack set 5 to 6 inches over glowing coals, turning occasionally, 15 minutes.
IN-THE-HUSK CORN ON THE COB
Steps:
- Prepare a grill for medium heat.
- Throw the corn (in the husk) on the grill and grill, turning occasionally, until the corn is cooked and the husks have char marks, 10 to 15 minutes. Strip the husks off the corn.
- While the corn is cooking, add the butter, garlic powder, smoked paprika and some salt and pepper to a small bowl and mix well.
- Spread the butter mixture generously on the corn and sprinkle with the feta cheese.

- Place a trivet into Ninja Foodi. If you don’t have a trivet you can use a steamer basket that has very short feet on it. You want to raise the corn just enough so that it is not sitting in the water.
- Place the corn on the cob onto the trivet. Lay the corn down across the trivet. I was able to fit 5 ears of corn on one layer. If you are cooking a lot of corn on the cob you can stack them on top of each other or place them in the Ninja Foodi standing straight up.
- Close lid. Turn valve to “seal” and cook on high pressure for 2 minutes for shucked corn or 3 minutes for corn with the husks still on them. When timer beeps, quick release pressure. Remove lid and enjoy with butter and salt!
