Tiraimisu is one of my favorite desserts, but sometimes it's hard to find marscapone cheese. This easy recipe uses cream cheese instead. My mom got this recipe from Martha Stewarts Everyday Food magazine a while ago and we have been making it ever since.

3 tablespoons instant espresso powder
3 tablespoons boiling water
1 1/2 cups cold water
8 ounces cream cheese, softened
3/4 cup heavy cream
1/3 cup sugar
2 (3 ounce) packages ladyfingers
unsweetened cocoa powder, for dusting

Steps:

  • In a small mixing bowl stir together espresso powder and boiling water until dissolved. Stir in cold water, set aside.
  • In a medium mixing bowl with an electric mixer on medium speed beat cream cheese, cream, and sugar until fluffy.
  • Spread a few tablespoons of cream cheese mixture in the bottom of a 2 quart serving dish. One by one, dip a third of the ladyfingers in espresso, then arrange in bottom of dish. Spread with a third of the cream cheese mixture. Repeat twice with remaining ladyfingers, espresso, and cream cheese mixture. Cover and chill for up to one day.
  • Dust tiramisu with cocoa just before serving.

Making this classic Italian dessert is surprisingly easy. We start the custard with a traditional Marsala-flavored zabaglione -- a cooked mixture of egg yolks and sugar. Then we lighten it with tangy mascarpone cheese, which provides just the right creamy, mousse-like texture. Once assembled, the ladyfingers soften sufficiently after 4 hours in the refrigerator, but if you can wait longer, the flavors will meld even more.

4 large egg yolks
1/2 cup sugar
2 tablespoons sweet Marsala
Two 8-ounce containers (16 ounces) mascarpone cheese
4 tablespoons instant espresso powder
3 to 4 tablespoons sweet Marsala (see Cook's Note)
1 teaspoon plus 1 tablespoon unsweetened cocoa powder, for dusting
One 7-ounce package ladyfingers, such as Savoiardi (see Cook's Note)

Steps:

  • For the mascarpone custard: Add the egg yolks, sugar and Marsala to a medium heatproof bowl and whisk to combine. Set the bowl over a medium saucepan of gently simmering water (do not allow the bowl to touch the water). Whisk constantly until the mixture is pale, hot to the touch and has doubled in volume, 4 to 6 minutes, scraping down the sides of the bowl occasionally with a rubber spatula. (This can be done with an electric mixer to speed up the process.) Remove from the heat and continue whisking until slightly cooled, about 1 minute. Whisk in the mascarpone cheese until combined. Refrigerate until ready to assemble.
  • To assemble: Stir together 1 1/4 cups hot water, espresso powder and 3 to 4 tablespoons Marsala in a liquid measuring cup. Evenly divide the mixture between two medium bowls. Dust the bottom of an 8-by-8-inch baking dish with 1 teaspoon cocoa powder.
  • Working one at a time, dip half of the ladyfingers into one bowl of the espresso mixture for 2 seconds per side, until soaked but not soggy. Arrange them over the cocoa powder in one layer, breaking up as needed to fill in any gaps. Pour any remaining liquid from the first bowl over the layer of ladyfingers. Spread half the mascarpone custard over the ladyfingers. Repeat the process with another layer of ladyfingers and the remaining bowl of espresso mixture, then spread with the remaining mascarpone custard.
  • Cover with plastic wrap and refrigerate for at least 4 hours or up to overnight. Sift the remaining 1 tablespoon cocoa powder over the top just before serving.

3 cups thawed COOL WHIP LITE Whipped Topping
2 tsp. unsweetened cocoa powder

Steps:

  • Arrange half the ladyfingers on bottom of 12x8-inch dish. Mix coffee, 2 Tbsp. sugar and 1 tsp. vanilla; brush half over ladyfingers in dish.
  • Beat ricotta cheese, remaining sugar and vanilla in medium bowl with mixer until blended. Gently stir in COOL WHIP.
  • Spoon half the ricotta mixture over ladyfingers in dish; cover with remaining ladyfingers. Brush with remaining coffee mixture; top with remaining ricotta mixture. Sift cocoa over top of dessert. Refrigerate several hours or until chilled.

3 tsp instant coffee granules
3 tbsp coffee liqueur (or Camp Chicory & Coffee Essence)
250g tub mascarpone
85g condensed milk
1 tsp vanilla extract
4-6 sponge fingers
1 tbsp cocoa powder

Steps:

  • Mix the coffee granules with 2 tbsp boiling water in a large jug and stir to combine. Add the coffee liqueur and 75ml cold water. Pour into a shallow dish and set aside.
  • Make the cream layer by beating the mascarpone, condensed milk and vanilla extract with an electric whisk until thick and smooth.
  • Break the sponge fingers into two or three pieces and soak in the coffee mixture for a few secs. Put a few bits of the sponge in the bottom of two wine or sundae glasses and top with the cream. Sift over the cocoa and chill for at least 1 hr before serving.

Steps:

  • Arrange 36 wafers on bottom and up side of 9-inch pie plate. Drizzle 2 Tbsp. coffee over wafers on bottom of pie plate.
  • Beat Neufchatel in large bowl with mixer until creamy. Gradually beat in milk. Add dry pudding mix; beat 1 min. Gently stir in 2 cups COOL WHIP.
  • Spread 1/2 the pudding mixture over wafers on bottom of pie plate; sprinkle with 1/2 the chocolate. Cover with remaining wafers; drizzle with remaining coffee. Top with remaining pudding mixture, chocolate and COOL WHIP.

250 g light cream cheese, room temperature
1 teaspoon vanilla extract
1/2 cup powdered sugar
2 tablespoons liqueur, of choice kahlua, rum are good
1 cup whipping cream, chilled
12 ladyfingers
1/4 cup espresso coffee, cold
1/4 cup liqueur, same flavour as above
2 teaspoons cocoa

Steps:

  • Beat cream cheese, vanilla extract and powdered sugar in a large bowl with an electric mixer on medium speed until smooth.
  • Beat in the 2 tablespoons liqueur on low speed. Set aside.
  • In a separate bowl whip whipping cream on high speed until stiff peaks form. Fold into the cream cheese mixture.
  • Mix together the espresso coffee and 1/4 cup of liqueur. Set aside.
  • Split ladyfingers horizontally in half. Arrange half of the ladyfingers, cut sides up, on the bottom of a sprayed 8x8x2 inches square pan.
  • Drizzle 1/4 cup of the espresso/liqueur mixture over ladyfingers.
  • Spread half of the cream cheese/whipped cream mixture over ladyfingers.
  • Arrange remaining ladyfingers, cut sides up, on the cream cheese/whipped cream layer. Drizzle with remaining 1/4 cup of the espresso/liqueur mixture.
  • Spread with remaining cream cheese/whipped cream mixture.
  • Sift cocoa powder over top.
  • Cover and refrigerate about 4 hours or until filling is firm. Store covered in refrigerator.

1 cup fresh brewed espresso, cool, or 1 cup cold strong coffee or cold brew
2 tablespoons brown sugar
1 to 2 tablespoons dark rum
16 ounces cold mascarpone
1 cup confectioners' sugar
1/8 teaspoon kosher salt
1 1/2 cups cold heavy cream
2 teaspoons vanilla extract
1 to 2 tablespoons coffee liqueur
24 to 30 ladyfingers (crunchy, not soft)
2 tablespoons finely chopped semisweet or bittersweet chocolate
1 tablespoon cocoa powder

Steps:

  • For the soaking syrup: Line an 8-inch or 9-inch round springform pan with plastic wrap, allowing it to drape over the sides. Set aside.
  • Mix the espresso, brown sugar and rum in a bowl large enough to fit a ladyfinger, then set aside.
  • For the mascarpone cream: Beat the mascarpone, confectioners' sugar and salt in a stand mixer fitted with the whisk attachment on low speed to combine. Scrape the bowl and whip on medium-high until smooth. Turn the mixer on low and slowly add the heavy cream and then the vanilla and coffee liqueur. (The mixture will look like thin cheesecake batter.) Gradually raise the mixer speed to medium and whip until the cream has reached medium peaks, 1 to 2 minutes. Set aside.
  • To assemble: Break a ladyfinger in half and give it a quick dip in the soaking syrup, then place in the bottom of the lined pan. Repeat this process to create one layer of dipped ladyfingers. Sprinkle 1 tablespoon chopped chocolate over the ladyfingers. Spoon about a third of the mascarpone cream over the ladyfingers and spread until smooth.
  • Repeat the ladyfinger dipping and arranging process to create a second layer of ladyfingers over the cream. Sprinkle on the remaining tablespoon chopped chocolate. Top with the remaining cream and spread smooth. Wrap with plastic wrap and freeze for at least 8 hours, or up to overnight.
  • Two hours before serving, unlatch the pan and remove the tiramisu from the pan and plastic wrap to a serving platter. Sprinkle the top of the tiramisu with the cocoa powder.

Steps:

1 cup light sour cream
4 eggs
1 cup (about 1/2 of 8-oz. tub) thawed COOL WHIP LITE Whipped Topping

Steps:

  • Heat oven to 325°F.
  • Line 13x9-inch pan with foil, with ends of foil extending over sides. Spread 1/2 the wafers onto bottom of prepared pan.
  • Add 2 Tbsp. hot water to 2 tsp. coffee granules; stir until dissolved. Brush 1/2 the dissolved coffee onto wafers in pan; reserve remaining dissolved coffee for later use.
  • Beat Neufchatel and sugar in large bowl with mixer until blended. Add sour cream; mix well. Add eggs, one at a time, mixing on low speed after each just until blended. Remove 3-1/2 cups batter; place in medium bowl.
  • Dissolve remaining coffee granules in remaining hot water. Stir into removed batter; spread over wafers in pan. Top with remaining wafers; brush with reserved dissolved coffee. Cover with remaining plain batter.
  • Bake 45 min. or until center is almost set. Cool.
  • Refrigerate 3 hrs. Use foil handles to lift cheesecake from pan. Spread with COOL WHIP just before serving; sprinkle with cocoa powder.
