CHEESEBURGER TATER TOT CASSEROLE
Cheeseburger Tater Tot Casserole is everything you need for a cozy weeknight dinner. Even better, the recipe easily doubles or triples to feed a crowd!

- Preheat oven to 350°F. Butter a 2-quart casserole dish, or spray with nonstick cooking spray.
- In a large skillet over medium heat, cook beef and onion stirring occasionally, until beef is brown; drain.
- Stir in ketchup, mustard, relish and ½ teaspoon salt. Taste and adjust seasoning as needed. Spoon mixture into prepared casserole dish and smooth into an even layer.
- In a medium saucepan over medium heat, melt butter completely. Slowly whisk in the flour until smooth. Continue to whisk while cooking the roux until it is golden brown.
- Slowly whisk in the milk, taking care to fully incorporate it with the roux. Keep whisking until the sauce is thick and bubbling; about 5 minutes. Stir in ¼ teaspoon salt and pepper.
- Remove the pan from heat and whisk in 1 1/2 cups of cheese until it is completely melted and the sauce is smooth.
- Evenly pour the sauce over the meat mixture.
- Arrange the frozen tater tots in an even layer over the cheese sauce. You may have extra tots.
- Bake in preheated oven for 35 minutes. Remove from oven and sprinkle remaining cheese over the top. Return to the oven for an additional 5 minutes, or until the cheese is melted.
- If desired, sprinkle with fresh Italian parsley just before serving.

- Heat oven to 350°F. Spray 13x9-inch (3-quart) glass baking dish with cooking spray.
- In 10-inch nonstick skillet, cook beef and onion over medium-high heat 7 to 9 minutes, stirring frequently, until brown; drain, and return to skillet. Stir in seasoning, soup and sour cream; stir to blend completely.
- Place half of the frozen potatoes in single layer in baking dish. Spoon beef mixture on top. Top with half of the chopped bacon, 1 cup of the Cheddar cheese, the remaining frozen potatoes, then remaining 1 cup cheese.
- Bake 40 minutes; top with remaining chopped bacon. Bake 5 to 10 minutes or until casserole edges are bubbly and potatoes are lightly browned. Sprinkle with green onions.

Steps:
- Place onion in a microwave-safe bowl and cover with water. Microwave on High until soft, 7 to 8 minutes. Drain.
- Preheat the oven to 350 degrees F (175 degrees C). Spray a 9x13-inch casserole dish with cooking spray.
- Cook and stir ground beef in a large nonstick skillet over medium-high heat until browned and crumbly, 5 to 7 minutes. Drain and discard grease.
- Transfer beef to the prepared casserole dish and spread onion pieces evenly over top. Spread soup over the onions and sprinkle Cheddar cheese evenly over soup. Layer frozen potato nuggets in rows on top of the cheese.
- Bake in the preheated oven for 20 minutes. Lightly spray the potato nuggets with cooking spray, and bake until cooked through and crunchy, about 10 minutes more.

- Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish.
- Place bacon, onion, bell peppers, salt, and pepper into a large skillet and cook over medium-high heat, turning occasionally, until bacon is evenly browned and crispy, about 10 minutes. OPIE'S CHEESY TATER TOT CASSEROLE
I created this recipe over time in homage to the original from Opie's BBQ in Spicewood, TX. Some things to note: Ore-Ida tater tots have lots of salt and seasoning; typically off-brand do not. I would probably add over a tsp for off-brand tots.

- Mix everything but the Colby cheese and french's onions in a large bowl (make sure tots are still frozen so they don't break apart).
- Scoop mixture into one 9x13 pan.
- Bake uncovered at 350 degrees for one hour.
- Top with Colby cheese and then French's onions and bake for another 5-10 minutes until onions are golden brown.
