2 Mini Babybel® Sharp Original semisoft cheeses
5 slices of cucumber
5 slices of turkey pepperoni
A sprinkle of parsley or dried basil

Steps:

Dice Mini Babybel. Top the cucumber slices with the pepperoni and then the Mini Babybel. Sprinkle with parsley.

In the summer I get a ridiculous amount of cucumbers from my garden, so I'm always looking for ways to utilize these yummy veggies. These are lovely hors d'oeuvres for any party. They're attractive and tasty!

Ingredients

2 can(s) (5 oz.) chunk chicken, drained and flaked
1 hard cooked egg, finely chopped
1/2 c mayonnaise
1/4 c grated onion
2 Tbsp pecan chips
1 dash(es) salt
1 dash(es) white pepper
2 whole cucumbers
35 intact pecan halves

Steps:

1. Combine all ingredients except pecan halves and cucumbers; cover and refrigerate at least 2 hours.
2. Thoroughly wash cucumbers. Peel one strip down the side of cucumber, leaving 1/4-inch of peel intact; repeat procedure around the perimeter of the entire cucumber. Slice into 1/4-inch slices.
3. Spoon 1 Tablespoon of chicken mixture on each cucumber slice; top each with a toasted pecan half. Yield 3 dozen

2 medium cucumbers, sliced
2 (8 ounce) packages cream cheese, softened
2 (1 ounce) packets Italian salad dressing mix
2 loaves French bread, ready to bake- Pillsbury is nice
dill weed, to taste

Steps:

Bake the french bread according to the directions. Once baked, cut into 1 inch slices.
Mix the powdered italian dressing mix with the softened cream cheese and spread evenly over each slice of bread.
Place a slice of cucumber on top of each piece. Set a few sprigs of dill weed on top of the cucumber.

This is such a yummy blend of cucumbers and onions in a sweet creamy sauce. When I was young my Grandma would make this for me all the time. That was over 30 years ago. It is a wonderful go to recipe for those hot summer days when you don't want to cook. I prefer using Vadalia onions, but any yellow onion will do. I try not to use too big of cucumber (diameter) because there are too many seeds. I have even substituted splenda for the sugar and light miracle whip with good results. (However, the juice doesn't flavor as long with the splenda). Finally, the cook time is the refrigerator marinate time. I hope you enjoy.

3 -4 large cucumbers
1 large yellow onion
1 cup Miracle Whip
1/2 cup sugar
1/4 cup white vinegar
1/4 teaspoon salt (or to taste) (optional)
1/4 teaspoon pepper (or to taste) (optional)

Steps:

Peel and slice cucumber and onions thinly. The best results are even slices. I use a mandolin for this step.
Place sliced cucumber and onions in a medium bowl that has a lid.
In a small bowl mix together the Miracle Whip, sugar, vinegar. Add salt and pepper if using. Pour over top of the cucumbers/onions. Place the lid on the bowl and give it a shake or two.
Marinate 6 hours or overnight in the refrigerator.
Do not add more liquid. Juice will keep for a long time. Just keep adding onions and cucumber as they get low until you no longer get the wonderful flavor on the cucumbers. Then it is time for a new batch.
