Swap your regular toast or sandwiches at lunch or breakfast time for these delicious eggy cheese crumpets. Enjoy with cherry tomatoes and sliced avocado

3 eggs
50ml milk
6 crumpets
250g cherry tomatoes , halved
drizzle of vegetable oil
40g cheddar , grated
2 small ripe avocados , sliced

Steps:

  • Heat the grill. Beat the eggs and milk together in a wide dish. Submerge the crumpets in the egg mixture, turning them once, then set aside for a few minutes.
  • Arrange the tomatoes cut-side up on a baking tray and grill for a few minutes, then cover the tray with foil to keep the tomatoes warm.
  • Heat the oil in a frying pan and cook the crumpets for a few minutes on each side until the egg has set - you may have to do this in batches. Transfer them to a baking tray as you go. Once all the crumpets are cooked, top with the cheese and grill for 1-2 mins until the cheese is bubbling and golden. Serve with the tomatoes and avocado slices.

Nice way to enjoy English crumpets. If you're from a country where they're not widely available do yourself a favour and make some from scratch, there are plenty of recipes on RecipeZaar for them. This recipe really works a lot better using natural cheese rather than processed cheese.

4 crumpets
1/4 cup cheddar cheese, grated
50 g bacon (one large slice or rasher)
1/4 teaspoon ground pepper (optional)
1/4 teaspoon ground paprika (optional)

Steps:

  • Lightly cook bacon in a non-stick frying pan and set aside.
  • Sprinkle cheese evenly over each crumpet followed by pepper and paprika if you are using them.
  • Tear up bacon and place over the top, discarding fat and the rind etc.
  • Grill for around 5-10 minutes until the cheese has melted into the crumpet.

½ teaspoon ground black pepper
1 teaspoon Greek seasoning
½ teaspoon cayenne pepper

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Spray a 2-quart baking dish with cooking spray.
  • Spread potatoes into the prepared baking dish; sprinkle with 1/2 teaspoon black pepper.
  • Mix eggs, Italian cheese blend, onion, pico de gallo, 1/2 teaspoon black pepper, Greek seasoning, and cayenne pepper together in a bowl; pour over potatoes.

Steps:

  • Fry bacon till crispy, move to one side of pan.
  • Add butter to pan.
  • Beat egg and yolk together and add seasoning to taste.
  • Dip crumpet into this mixture.
  • Fry crumpet in butter in pan on both sides till golden.
  • Serve with bacon and sauce.
