Provided by Ina Garten

Categories     side-dish

Time 20m

Yield 4 servings

Number Of Ingredients 11

4 ounces Roquefort blue cheese, crumbled
2/3 cup good mayonnaise, such as Hellmann's or Best Foods
1/3 cup plain Greek yogurt
1 tablespoon sherry vinegar
Kosher salt and freshly ground black pepper
4 tender inside celery stalks, trimmed and sliced crosswise 1/4 inch thick
6 radishes, trimmed and sliced into thin rounds
5 scallions, trimmed, white and green parts sliced 1/4 inch thick
1 large head iceberg lettuce, wilted outer leaves removed
4 to 6 ounces Roquefort blue cheese, crumbled
Fleur de sel

Steps:

  • For the dressing, place 4 ounces of blue cheese in a small bowl and microwave for 15 seconds, until it begins to melt. Place the mayonnaise, yogurt, warm blue cheese, sherry vinegar, 1/2 teaspoon salt, and 1/4 teaspoon pepper in the bowl of a food processor fitted with the steel blade and process until smooth. Set aside or refrigerate until ready to use.
  • For the salad, combine the celery, radishes, and scallions in a bowl. Slice the whole head of lettuce across to make four 3/4-inch-thick round disks and place each on a dinner plate. Spoon the dressing on the lettuce and sprinkle on a quarter of the vegetable mixture. Distribute the remaining crumbled blue cheese on the salads, sprinkle with fleur de sel and pepper, and serve.

GRILLED ICEBERG WEDGES WITH BUTTERMILK-BASIL DRESSING

Grilled Iceberg Wedges with Buttermilk-Basil Dressing image

Provided by Kristin Donnelly

Categories     Salad     Backyard BBQ     Basil     Bacon     Grill     Lettuce     Buttermilk

Yield Makes 4 servings

Number Of Ingredients 9

3 strips of thick-cut bacon, cut into 1-inch pieces
1/2 cup buttermilk
1/2 cup sour cream
1 tablespoon white wine vinegar
2 tablespoons coarsely chopped basil
Salt
Freshly ground pepper
1 small head of iceberg lettuce, outer leaves removed, head quartered through the core
Vegetable oil, for brushing

Steps:

  • Light a grill and preheat for at least 10 minutes or preheat a grill pan. In a medium skillet, cook the bacon over moderate heat, stirring occasionally, until browned and crisp but still slightly chewy, about 5 minutes. (You could do this in a cast-iron skillet right over the grill).
  • In a medium bowl, whisk the buttermilk with the sour cream, vinegar and basil. Season with salt and pepper.
  • Brush the cut sides of the iceberg wedges with oil and season with salt. Grill over moderately high heat until the edges are browned and grill marks form, 1 to 2 minutes. Turn to brown the other cut side, 1 to 2 minutes longer.
  • Transfer the wedges to a platter and drizzle with half of the dressing. Sprinkle with the bacon and serve, passing the remaining dressing at the table.

ICEBERG LETTUCE WITH BLUE CHEESE DRESSING

Iceberg Lettuce With Blue Cheese Dressing image

This recipe reminds me of childhood. It's extremely retro, with an optional update. Definitely not for the nutrition-conscious. Did you know iceberg lettuce has the poorest nutritional content of all lettuces? The lettuce certainly won't boost your vitamin A or C levels, or fatten you up but the dressing sure will! This was in today's NY Times, an article about "loser lettuces" (iceberg and romaine) by Mark Bittman, the Minimalist. I would take exception with calling romaine a loser lettuce; unlike iceberg it has lots of nutrition. Then again, sometimes you just can't beat the crunchy cold of iceberg. I made this last night and it was just as I remembered it :)

Categories     Bon Appétit     Salad     Lettuce     Blue Cheese     Walnut     Bacon     Sour Cream     Celery     Tomato     Lunch     Quick & Easy     Wheat/Gluten-Free     Peanut Free     Soy Free

Yield Serves 4

Number Of Ingredients 13

1 cup walnuts
4 slices bacon
8 ounces blue cheese, crumbled, divided
1/2 cup crème fraîche or sour cream
1/2 cup mayonnaise
5 teaspoons sherry vinegar or red wine vinegar
2 teaspoons fresh lemon juice
1 teaspoon hot sauce
Kosher salt, freshly ground pepper
1 head of iceberg lettuce, cut crosswise into four 1-inch-thick slices
2 celery stalks, thinly sliced
1 pint cherry tomatoes, quartered
1 tablespoon finely chopped tarragon

Steps:

  • Preheat oven to 350°F. Toast walnuts on a rimmed baking sheet, tossing once, until golden brown, 8-10 minutes. Let cool; coarsely chop.

  • Place half of blue cheese in a medium heatproof bowl and microwave on medium until melted, about 1 minute (this will make it easier to whisk). Add crème fraîche, mayonnaise, vinegar, lemon juice, and hot sauce to blue cheese and whisk until smooth; season dressing with salt and pepper. Cover and chill until cold, at least 30 minutes.
  • Place 1 slice of iceberg lettuce on each plate and spoon about 1/4 cup dressing over each. Top with walnuts, bacon, celery, tomatoes, tarragon, and remaining blue cheese.
  • Do Ahead
  • Dressing can be made 3 days ahead. Keep chilled.

  • Simple Butter Lettuce Salad. In just five minutes, you’re going to have this super simple, low-calorie Butter Lettuce Salad to enjoy. Butterhead lettuce is my favorite which is why I put this recipe at the top of the list.
  • Lettuce Salad with Tomato and Cucumber. This next salad, Lettuce with Tomato and Cucumber, is quite similar to my grandmother’s recipe for summertime get-togethers.
  • Classic Waldorf Salad. Apples and walnuts in a salad? Count me in! This Classic Waldorf Salad is one of the few ways my mother will eat mayonnaise. However, if you’re not a big fan of this dressing, I’ve prepared this salad before with plain yogurt and a dash of pesto, as well as sour cream and some sugar.
  • Lettuce Salad with Caper Vinaigrette. While similar to olives, capers do have a more acquired taste. If you’ve not had the chance to eat capers before, this Lettuce Salad with Caper Vinaigrette is a great and easy option to help you warm up to them.
  • Shrimp Caesar Salad. This Shrimp Caesar Salad is a healthy recipe, perfect for those fond of Cajun cuisine. While the salad calls for romaine lettuce, I’ve added my favorite, butterhead, too, and it’s brought a juciness that goes well with the buttery tenderness of the shrimp.
  • French Butter-Lettuce Salad. French Butter-Lettuce Salad; one of my favorite sides to pair with hearty dinners because of how light and refreshing it tastes!
  • The Best Green Salad Recipe. This is quite a simple lettuce salad, but incredibly yummy and perfect for family dinners. Or, if you’re interested in doubling or tripling the recipe, you can serve this at a dinner party or larger gathering.
  • Bacon Avocado Chicken Salad with Lemon Vinaigrette. Controversial statement incoming; I don’t like bacon. And, I’m also not a fan of adding it to salads.
  • BLTA Chicken Salad Lettuce Wraps. I know, I know, another bacon recipe. What am I doing? Well, it wouldn’t make sense to leave these Chicken Salad Lettuce Wraps off of the list.
  • Fattoush Salad. This recipe is a great way to enjoy romaine lettuce. Another fan favorite at my family dinners, Fattoush Salad, packs a zippy punch because it calls for lemon, garlic, and sumac.
