Sunny's Easy Hush Puppies with a Hot Honey Dipping Sauce image

Number Of Ingredients 9

Two 8.5-ounce boxes cornbread mix (I like Jiffy here)
2 tablespoons BBQ seasoning, ancho chile powder or chipotle seasoning
One 14-ounce can creamed corn
2 large eggs, whisked
Peanut oil, for frying
Kosher salt
1/4 cup creamed honey
1/4 cup hot sauce (I like Cholula here)
2 tablespoons confectioners' sugar

Steps:

  • For the batter: In a large bowl, whisk together the cornbread mix and seasoning blend, breaking up any clumps in the mix. Add the creamed corn and eggs and stir to combine gently; the mixture should be scoopable but hold its form. (Think the perfect ice cream ball.) Allow to rest in the refrigerator for 10 minutes.
  • For the frying: In a large pot or fryer, bring at least 2 inches of peanut oil to 375 degrees F. Using 2 spoons or a medium ice cream scoop, scoop out some batter and slowly lower it into the oil. Drop in a few more and cook, flipping if needed, until the hush puppies float and are golden all around, 2 to 4 minutes. Remove to a wire rack over a baking sheet and season with a sprinkle of salt. Repeat with the remaining batter.
  • For the sauce: In a small bowl, whisk together the honey, hot sauce and sugar. Use as a dipping sauce for the hush puppies.

1 cup yellow cornmeal
1/4 cup all-purpose flour
1-1/2 teaspoons baking powder
1/2 teaspoon salt
1 large egg, room temperature, lightly beaten
3/4 cup 2% milk
1 small onion, finely chopped
Oil for deep-fat frying

Steps:

  • In a large bowl, combine the cornmeal, flour, baking powder and salt. Whisk the egg, milk and onion; add to dry ingredients just until combined. , In a cast-iron Dutch oven or an electric skillet, heat oil to 365°. Drop batter by tablespoonfuls into oil. Fry until golden brown, 2 to 2-1/2 minutes. Drain on paper towels. Serve warm.

1 cup yellow cornmeal
3/4 cup self-rising flour
1 teaspoon salt
1/2 teaspoon sugar
1/2 teaspoon cayenne
1/2 small sweet onion, finely chopped
1/2 jalapeno, finely chopped
4 green onions, sliced thin
1 large egg, beaten
1/4 cup grated Cheddar
1 cup buttermilk
Orange Dipping Sauce, recipe follows
1/4 cup Dijon mustard
1/4 cup honey
1/4 cup orange marmalade

Steps:

  • Preheat deep fryer to 375 degrees F.
  • Mix all the ingredients together into a large mixing bowl to form a thick batter.
  • Dip 2 tablespoon spoons into water. Using the spoons scoop up some of the batter and drop into the hot oil. Work in batches. Fry for 3 to 4 minutes or until golden and brown. Remove and drain on a paper towel lined sheet tray. Serve with dipping sauce.
  • Mix the above ingredients together.

2 Tbsp ketchup, homemade, if possible
2 Tbsp lime juice, freshly squeezed
1 Tbsp prepared horseradish sauce, or more to taste
1 Tbsp mayonnaise, i prefer duke's
1 Tbsp chili sauce, hot or mild, your call
1 tsp tabasco sauce
salt, kosher variety, to taste
white pepper, freshly ground, to taste

Steps:

  • 1. PREP/PREPARE
  • 2. Gather your ingredients (mise en place).
  • 3. Add all the ingredients together and give it a few hours for the flavors to blend.
  • 4. Fry up some of your favorite hush puppies.
  • 5. PLATE/PRESENT
  • 6. Use as a dipping sauce for hush puppies, shrimp, or whatever. Enjoy.

1 cup yellow cornmeal
3/4 cup self-rising flour (if you don't have self rising flour, try Self-Rising Flour)
1 teaspoon salt
1/2 teaspoon sugar
1/4-1/2 teaspoon cayenne
1/4-1/3 cup vidalia onion, finely chopped (about 1/2 small onion, may use other sweet onion)
1/2 jalapeno, finely chopped (or 2-3 tbls. canned diced green chilies for less heat)
6 small green onions, sliced thin (or 4 larger ones)
1 large egg, beaten
1/4 cup grated sharp cheddar cheese
1 cup buttermilk
1/2 cup Dijon mustard (or whole grain mustard)
1/2 cup honey
1/2 cup orange marmalade

Steps:

  • Preheat a deep fryer to 375* F. (I just use a saucepan and fill about 2-3" with oil.).
  • Mix all the ingredients together in a large mixing bowl until it becomes thick.
  • Using 2 tablespoons, dip into water. Scoop up about a tablespoonful of the batter and using the other spoon, push off the batter, drop into the hot oil. You can work this in batches. Fry for 3 to 4 minutes or until golden brown. Remove from oil and drain on a paper towels. Serve with dipping sauce.
  • To make the dipping sauce, mix all the dip ingredients together in a bowl. This doubles easily! Enjoy!

1 quart vegetable oil for frying, or as needed
½ cup all-purpose flour
½ cup self-rising cornmeal
½ onion, minced
½ cup milk
1 egg, beaten
1 stalk celery, minced
2 cloves garlic, minced
1 pinch Cajun seasoning, or to taste

Steps:

  • Heat oil in a deep-fryer or large saucepan to 375 degrees F (190 degrees C).
  • Mix flour, cornmeal, onion, milk, egg, celery, garlic, and Cajun seasoning in a bowl.
  • Drop ping pong ball-sized balls of batter, about 5 at a time, into the hot oil. Fry until golden brown, about 5 minutes. Remove hush puppies with a slotted spoon and drain on a paper towel-lined plate. Repeat with remaining batter.

1 large onion, diced
1 cup self-rising flour
1 cup self-rising cornmeal
1 quart oil for frying

Steps:

  • In a medium bowl, mix together eggs, sugar, and onion. Blend in flour and cornmeal.
  • Heat 2 inches of oil to 365 degrees F (185 degrees C). Drop batter by rounded teaspoonfuls in hot oil, and fry until golden brown. Cook in small batches to maintain oil temperature. Drain briefly on paper towels. Serve hot.

1/2 cup pancake mix
2-1/2 teaspoons sugar
1 teaspoon baking powder
1 teaspoon salt
1 egg
1 cup buttermilk
2 tablespoons canola oil
3 jalapeno peppers, seeded and finely chopped
1/2 cup finely chopped onion
1/8 to 1/4 teaspoon hot pepper sauce
Oil for deep-fat frying

Steps:

  • In a large bowl, combine the cornmeal, pancake mix, sugar, baking powder and salt. In another bowl, beat the egg, buttermilk, oil, jalapenos, onion and pepper sauce. Stir into dry ingredients just until combined., In an electric skillet or deep-fat fryer, heat oil to 375°. Drop batter by rounded tablespoonfuls into oil. Fry for 3-4 minutes or until golden brown.   • In large bowl, whisk cornmeal with the flour, sugar, pepper, salt, cayenne and baking powder. Add the egg, milk, butter and bacon fat and whisk until dry and liquid ingredients are combined (do not over-mix or texture will be tough)
  • Preheat the oven to 400 degrees. In pot that is at least 6 inches deep (6-qt. Dutch oven works great) heat 2 inches of oil to 350 - 375 degrees. Don't skimp on the oil, the batter needs to submerge in the oil. Use a thermometer to maintain the 350 - 375 temperature, because if the heat is too low the puppies will absorb too much oil and if it is too high the outside will burn before the inside is done. Remember, the heat goes down when you add a lot of batter to the oil.
  • Set a rack over a baking sheet and place near the stove. Drop tablespoon-size balls of batter into the hot oil, about 6 at a time. You can drop the batter using 2 soup spoons sprayed with vegetable oil or a small ice-cream scoop.
