BAKED CLAM DIP
This hot seafood dip, served with potato chips, is an ode to the salt spray of the New England coast.

Steps:
- Preheat oven to 375 degrees. Stir together cream cheese and sour cream in a medium bowl until smooth. Stir in clams and liquid, Worcestershire, shallot, cayenne, and 1/4 teaspoon salt until combined. Transfer mixture to a 2 1/2-to-3-cup baking dish.
- Bake until bubbly and top is golden brown in spots, about 30 minutes. Serve warm, sprinkled with cayenne, with potato chips.

- Whip together all the ingredients.
- If the dip needs to be a little thinner, add in some of the clam juice from the can.
- Serve with your preferred dipping snacks, and enjoy!

- In a large frying pan, simmer all ingredients except the bread crumbs.
- Add Italian bread crumbs.
- Put in a small baking dish and coat top with mozzarella or swiss cheese.
- Sprinkle with paprika and parmesan cheese.
- Bake 15 minute at 400 degrees COVERED.
MY BEST HOT CLAM DIP
This is like stuffed clams topped with melted cheese, without the mess of the shells. I almost always double the recipe because it goes so fast. I have shared this recipe many times and I hope you enjoy it as well.

Steps:
- 1. Mix clams and their own juice with lemon juice in saucepan and bring to boil then let gently simmer for 10 minutes. In another pan, saute onions, garlic and pepper in 1/4 cup butter. Add parsley(optional), oregano and hot pepper sauce. When tender, remove from heat and add bread crumbs. Add clam mixture and pour into flat baking dish. Sprinkle with paprika and your cheeses(I tend to over cheese things, I think I use about 2 cups((8oz)) cheese. Bake at 350 degrees for 20 minutes or until cheese is very melted. Serve hot with crackers.

Clam dip has been served for decades in my family at every gathering since I can remember. If we are planning on getting together someone always will the favored appetizer along with a big bowl of chips and a platter of fresh cut vegetables for dipping. I believe that through several generations of my family's honest group clam dip critiques this recipe has reached a level of perfection that no other clam dip around can boast.
