2 tbsp olive oil, extra virgin
2 tsp garlic powder
1/2 cup parmesan , shredded or grated
2 tbsp lemon juice
1 tsp sea salt, celtic
1 tsp pepper, fresh cracked

Steps:

  • Preheat oven to 375 degrees.
  • Trim asparagus to remove tough, woody ends - discard ends.
  • On a baking sheet (line with aluminum foil or parchment paper for easy cleanup), lay down asparagus.
  • Drizzle asparagus with olive oil and lemon juice, mix around with hands to coat evenly.
  • Pour cheese and garlic powder over asparagus, mix with hands to evenly mix and coat asparagus.
  • Generously season with salt and pepper.
  • Bake at 375 for 15 minutes - checking at around 10 minutes to see if tips have started to brown slightly and asparagus has softened a bit.
  • Cook until asparagus is soft and has crunchy browned bits, about 15 minutes total (this is very dependent on your oven and the thickness of the asparagus stalks - watch it to be sure it doesn't overcook.)
  • When asparagus is done, serve immediately.

  • Heat oven to 200C/180C fan/gas 6. Heat the oil in an ovenproof casserole dish, add the onion and cook for 5 mins until softened. Add the rice and cook for 1 min more, stirring to coat in the oil. Tip in the soup and stock, season and stir well to combine, then bring to the boil. Cover and place in the oven.
  • Bake for 15 mins, then remove the dish from the oven, give the rice a good mix, stirring in the parsley. Place the asparagus and tomatoes on top of the rice. Return to the oven, uncovered, for a further 15 mins. Scatter with the cheese to serve.

  • Preheat oven to 350°.
  • Wash asparagus spears and cut off the tough ends.
  • Lay the spears on paper towels to soak up excess water.

  • Preheat oven to 450°F and line a baking sheet with parchment paper
  • Set up a breading station with three shallow dishes: In the first dish, place the flour seasoned with salt and pepper; in the second dish, beat the eggs with salt and pepper; combine Panko, breadcrumbs, cheese, lemon zest and parsley in the third

1 onion, roughly chopped
2 garlic cloves, crushed

1 teaspoon caster sugar
250 g risotto rice
600 ml boiling water
1 teaspoon saffron strand
salt & freshly ground black pepper

Steps:

  • Preheat the oven to 200 degrees celcius. Heat 1 Tbsp of the oil in a large frying pan, add the asparagus and fry for 3-4 minutes until browned. Sprinkle over the paprika. Transfer to a shallow ovenproof dish using a slotted spoon.
  • Add the remaining oil to the frying pan and fry the onion and garlic for 4-5 minutes, stirring occasionally. Add the tomatoes, red chili pepper and sugar. Season with salt and pepper and cook for 2 minutes. Spoon over the top of the asparagus and put on the bottom shelf of the oven.
  • Put the risotto rice into a non-stick roasting tin, cover with the boiling water and stir in the saffron. Cover with foil and place in the oven on the shelf above the asparagus. Cook for 20-25 minutes until the rice is just cooked and the asparagus is tender.
  • Fluff up the rice with a fork and spoon onto warmed individual plates. Spoon over the asparagus and tomatoes and garnish with the basil leaves.

2-3 tsp non-pareil capers, drained
1 sprig thyme, leaves picked
40g/1½oz blanched hazelnuts, roughly chopped
2 tbsp fruity olive oil
½ lemon, juice only, to taste
50g/1¾oz Parmesan shavings
1 tbsp roughly chopped flatleaf parsley
salt and freshly ground black pepper

Steps:

  • Preheat the oven to 180C/160C Fan/Gas 4.
  • Arrange the asparagus on a baking tray in a single layer. Scatter the sliced garlic and capers around the asparagus, add the thyme leaves and chopped hazelnuts and season well with salt and freshly ground black pepper. Drizzle over the olive oil and shake the tin to coat the asparagus spears in oil. Roast the asparagus in the hot oven for 8-10 minutes - depending on the thickness of the spears - until tender.
  • Squeeze over the lemon juice, scatter with Parmesan shavings and roughly chopped parsley and serve.

  • Place asparagus in a large plastic bag. Drizzle half the olive oil over the asparagus, seal the bag and shake until asparagus is coated evenly with the olive oil.
