These thin and crisp chocolate chip cookies are every bit as delicious as Tate's famous Bake Shop's.

Number Of Ingredients 9

2½ cups all-purpose flour, spooned into measuring cup and leveled-off (preferably King Arthur brand)
½ teaspoon baking soda
1 teaspoon salt
2½ sticks (1¼ cups) unsalted butter, room temperature
1 cup granulated sugar
¾ cup (packed) light brown sugar
2 large eggs
2 teaspoons pure vanilla extract
2 cups (12 oz) semisweet chocolate chips, best quality such as Ghriardelli, divided

Steps:

  • Preheat oven to 350°F. Set an oven rack in the center position. Line a 13 x 18-inch baking sheet with parchment paper.
  • In a small bowl, whisk together the flour, baking soda, and salt.
  • In the bowl of an electric mixer fitted with the paddle attachment or beaters, beat the butter with both sugars on medium speed until light and fluffy, a few minutes. Add the eggs and vanilla and beat until well combined, about 1 minute. Add flour mixture; mix on low speed until just combined, and then mix in 1¾ cups of the chocolate chips.
  • Drop heaping tablespoon-size balls of dough about 2 inches apart on the prepared baking sheet. (Do not make the cookies too big or they will spread into one another.) Dot each cookie dough with a few of the remaining chocolate chips.
  • Bake until cookies are lightly golden in the middle and slightly darker around the edges, 10 to 12 minutes. Remove from oven, and let cool on baking sheet for a few minutes. Transfer to a wire rack, and let cool completely.
  • Make-Ahead/Freezer-Friendly Instructions: The cookie dough can be frozen for up to 3 months. To freeze, roll the dough into balls, let set on a baking sheet in the freezer for about 1 hour, then place in a sealable bag and press out as much air as possible. Bake as needed directly from the freezer. (Allow 1 to 2 minutes longer in the oven.)The baked cookies will keep in an airtight container at room temperature for up to one week, or frozen for up to 3 months.
  • Note: You will have more consistent results baking the cookies one sheet at a time, but if you'd like to use two racks, set the racks in centermost positions, and bake the cookies for 12 to 14 minutes, rotating the pans top to bottom and front to back midway through.

2/3 cup (1 1/3 sticks) unsalted butter, room temperature
3/4 cup granulated sugar
1/4 cup firmly-packed dark brown sugar
1 large egg, room temperature
1 teaspoon vanilla extract
1 3/4 cups sifted all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon kosher salt
One 6-ounce package semisweet chocolate chips

Steps:

  • Preheat the oven to 350 degrees F, positioning one of the oven racks in the middle of the oven.
  • Using an electric mixer, beat together the butter, granulated sugar, brown sugar, egg and vanilla on medium speed until smooth. In a separate bowl, sift together the flour, baking soda and salt. Turn the electric mixer to low and slowly add the dry mixture to the wet mixture. Stir in the chocolate chips.
  • With a 1-ounce ice cream scoop, drop the batter about 2 inches apart on ungreased cookie sheets. Bake until lightly browned, 8 to 10 minutes. Carefully remove the cookies to a wire rack to cool. Store in an airtight container.

This recipe is for those who want to please their husbands, or who those who want to turn boyfriends into husbands. When we make this recipe we make double so that we have one batch to cook and one to freeze. It is an adaptation of Bobby Flay's chocolate chip cookies. *Important* You want the butter to really be soft before you start this recipe and get it quite fluffy when you are mixing it or your cookes will be flat and can burn when cooking.

2 large eggs
2 cups and 3 tablespoons flour
6 ounces milk chocolate chips
6 ounces semi-sweet chocolate chips
3/4 teaspoon kosher salt
3/4 teaspoon baking soda
1 cup granulated sugar
2/3 cup dark brown sugar
1 1/2 teaspoons vanilla extract
1 cup unsalted butter, room temp (2 sticks)

Steps:

  • Preheat the oven to 375 degrees F. Line baking sheet with parchment paper or silicon pads.
  • Whisk together the flour, salt and baking soda in a large bowl.
  • Place the butter in the bowl on an electric stand mixer fitted with paddle attachment and beat until smooth, about 1 minute.
  • Add the sugars and continue mixing, scraping down the sides and bottom of the bowl until light and fluffy, about 2 minutes longer.
  • Add the eggs, 1 at a time, and the vanilla extract, beating until incorporated.
  • Add half of the flour and mix until just incorporated. Add the remaining flour, again mixing until just combined. Remove the bowl from the stand and fold in the chocolate chunks.
  • Using a small ice cream scoop, spoon the dough onto a baking sheet, leaving at least 2 inches between each cookie
  • Bake on the middle rack until the cookies are lightly golden brown and still soft in the middle, about 11 minutes.
  • Let cookies rest for 2 minutes on the baking sheet before removing them to a baking rack with a wide metal spatula. Let the cookies cool on the baking rack for a few minutes before eating. Repeat with remaining dough.

1 teaspoon baking soda
1 teaspoon salt
1 cup unsalted butter, at room temperature
1/2 cup white sugar
3/4 cup light brown sugar, packed
1 teaspoon pure vanilla extract
2 large eggs
1 (8 ounce) package dark chocolate, coarsely chopped

Steps:

  • Preheat the oven to 350 degrees F.
  • Line 2 cookie sheets with parchment paper. Sift together the flour, baking soda, and salt into a medium bowl and set aside.
  • Place the butter, sugar, and brown sugar in the bowl of an electric mixer; cream together on medium speed until light and fluffy. Scrape down the sides of the bowl with a rubber spatula. Beat in the vanilla and eggs. Gradually add the dry ingredients to the creamed mixture and continue to mix until a smooth batter forms. Turn off the mixer and fold in the chocolate chunks using the spatula.
  • To form the cookies, scoop about 1/4 cup of cookie dough into your hands and roll it around into a ball; place them about 3-inches apart onto the prepared cookie sheets; you should get about 4 cookies on each pan. Press down the tops of the dough slightly and bake until the cookies are light brown, 12 minutes for chewy cookies, or about 15 minutes for crispy cookies.
