1 1/2 pounds ground chicken
1 cup panko breadcrumbs
3 scallions, sliced (about 1/2 cup)
1 large egg, lightly beaten
Kosher salt
Sesame seeds, for serving
1/2 cup low-sodium soy sauce
1/2 cup mirin
1 tablespoon rice vinegar
1 tablespoon light brown sugar
1 tablespoon cornstarch
2 cloves garlic, grated
3 tablespoons vegetable oil
4 scallions, sliced
6 cloves garlic, sliced
1/2 teaspoon minced peeled fresh ginger
Pinch red pepper flakes
3 cups cooked white rice
1 tablespoon vegetable oil
1 medium red onion, large dice
1 medium red bell pepper, large dice
1 stalk broccoli, cut into florets (about 2 1/2 cups)
Freshly ground black pepper

Steps:

  • Preheat the oven to 450 degrees F. Line a baking sheet with parchment paper.
  • For the meatballs: Combine the chicken, panko, scallions, egg and 1/2 teaspoon salt in a large bowl. Use a 1-ounce scoop to portion the chicken mixture into mounds (about 30 meatballs total), roll each into a ball and place on the prepared baking sheet.
  • Bake until just cooked through, about 10 minutes. Set aside.
  • For the teriyaki sauce: Whisk together the soy sauce, mirin, rice vinegar, brown sugar, cornstarch, garlic and 1 cup water in a medium saucepan. Bring to a boil over high heat and cook until slightly thickened and reduced by half, about 8 minutes. Transfer to a bowl and set aside (you should have about 1 cup).
  • For the garlic fried rice: Heat the vegetable oil in a large nonstick skillet over high heat. Add the scallions and stir-fry 1 minute. Add the garlic, ginger and red pepper flakes and stir-fry until fragrant, 1 minute. Add the rice and 1 tablespoon of the teriyaki sauce and stir-fry until combined and heated through, about 3 minutes. Season with salt. Transfer to a serving platter and keep warm.
  • For the stir-fried vegetables: Heat the oil in the skillet over high heat. Add the onion and bell pepper and stir-fry 1 minute. Add the broccoli and 2 tablespoons water. Season with salt and pepper.
  • Stir-fry until the broccoli is bright green and still crisp, 2 to 3 minutes. Add 1/3 cup of the teriyaki sauce and cook until heated through. (Add more water if necessary, to thin the sauce.) Transfer to the serving platter and keep warm.
  • Finish the meatballs: Add the remaining teriyaki sauce to the skillet and bring to a boil over high heat. Add the meatballs and toss until glazed and heated through, 2 to 3 minutes. Spoon the meatballs over the rice and sprinkle with sesame seeds.

6 boneless skinless chicken breasts (about 1 1/2 pounds)
1 (20 ounce) can pineapple rings, drained
1 (12 ounce) bottle Lawry's teriyaki marinade, with pineapple juice, divided

Steps:

  • In a large Ziploc plastic bag, combine 3/4 cup Teriyaki Marinade with chicken; seal bag. Marinate in refrigerator for 30 minutes.
  • In a medium bowl, combine 1/3 cup Marinade with pineapple slices, gently turning slices to coat; set aside.
  • Remove chicken from bag, discarding used marinade.
  • Grill or broil chicken, brushing often with remaining marinade, until thoroughly cooked, about 10 to 15 minutes.
  • Grill pineapple slices, brushing with remaining marinade in bowl.
  • Serve with a pineapple slice under and on top of each grilled breast.

1/2 cup freshly grated Parmesan
1/4 cup chopped fresh Italian parsley
2 tablespoons whole milk
3/4 teaspoon kosher salt
1/2 teaspoon dried oregano
1/4 teaspoon red pepper flakes
1/4 cup panko breadcrumbs, plus 1 cup for breading
3 large eggs, lightly beaten
1 pound ground chicken, 50/50 white and dark meat
4 ounces mozzarella, diced into 1/2-inch cubes
1/2 cup all-purpose flour
Vegetable oil, for frying
Marinara, warmed, for serving, optional

Steps:

  • In a large bowl, stir together the Parmesan, parsley, milk, salt, oregano, pepper flakes, 1/4 cup breadcrumbs and 1 egg. Add the chicken and gently stir to combine, being careful not to overwork the meat. Shape the meat mixture into bite-size balls and press a cube of mozzarella in the middle of each, sealing it with the meat around it.
  • Set up a standard breading station: put the flour in one shallow bowl, the remaining 1 cup of breadcrumbs in a separate bowl and the remaining 2 eggs in another separate bowl. Roll each meatball in the flour, then the egg wash, then the breadcrumbs.
  • Fill a medium Dutch oven a third of the way with vegetable oil and place over medium heat. Bring the oil to 350 degrees F using a deep-fry thermometer,
  • Drop in the meatballs a few at a time so as to not lower the temperature, and fry until deep golden brown and cooked through, about 5 minutes. Remove to a paper towel-lined plate to drain and season with a pinch of salt. Continue with the remaining meatballs. Serve warm with marinara for dipping if desired.

1/4 cup plain bread crumbs
1/4 cup chopped fresh flat-leaf parsley
2 large eggs, lightly beaten
1 tablespoon whole milk
1 tablespoon ketchup
3/4 cup grated Romano
3/4 teaspoon salt
3/4 teaspoon freshly ground black pepper
1 pound ground chicken
1/4 cup olive oil
1 1/2 cups low-sodium chicken stock, hot
4 cups cherry tomatoes, halved
1/2 cup freshly grated Parmesan
8 ounces bocconcini mozzarella, halved
1/2 cup chopped fresh basil leaves

Steps:

  • Bring a large pot of salted water to a boil over high heat. Add the pasta and cook until tender but still firm to the bite, stirring occasionally, about 8 to 10 minutes.
  • In a medium bowl, stir together the bread crumbs, parsley, eggs, milk, ketchup, Romano cheese, and the salt and pepper. Add the chicken and gently stir to combine.
  • Using a melon baller (or a teaspoon measure), form the chicken mixture into 3/4-inch pieces. With damp hands, roll the chicken pieces into mini meatballs.
  • In a large (14-inch) skillet, heat the oil over medium-high heat. Working in batches, add the meatballs and cook without moving until brown on the bottom, about 2 minutes. Turn the meatballs over and brown the other side, about 2 minutes longer. Add the chicken stock and tomatoes. Bring to a boil. Using a wooden spoon, scrape up the brown bits that cling to the bottom of the pan. Reduce heat to low and simmer until tomatoes are soft and meatballs are cooked through, about 5 minutes. Drain the pasta, reserving about 1 cup of the pasta water. Transfer pasta to a large serving bowl and add the Parmesan. Toss to lightly coat orecchiette, adding reserved pasta water, if needed, to loosen the pasta. Add the meatball mixture, mozzarella cheese, and 1/2 cup of the basil. Gently toss to combine. Garnish with the chopped basil.

2 large boneless, skinless chicken breasts (about 3/4 pound), rinsed and patted dry, sliced into 1-inch cubes
1 bacon strip
3 slices sandwich bread, roughly torn into small pieces
2 teaspoons chili powder
1/2 teaspoon cayenne pepper
1/2 teaspoon kosher salt
1/4 cup whole milk
1 large egg, lightly beaten
1/2 small onion, finely chopped
2 garlic cloves, finely minced or pressed through a garlic press
1/3 cup grated Parmesan cheese, plus extra for sprinkling over the meatballs
1/4 cup vegetable oil
Fresh flat-leaf parsley, finely chopped (optional)

Steps:

  • Place the chicken and the bacon on a plate and freeze to chill for 20 to 30 minutes.
  • Meanwhile, place the bread, chili powder, cayenne, and salt in the bowl of a food processor and pulse until you have fine bread crumbs. Divide the bread crumbs between two medium bowls. Set one bowl aside and stir the milk into the bread crumbs in the other bowl.
  • Add half the chilled chicken and all of the bacon to the food processor and pulse to combine into a rough mixture. Add the milk-and-bread-crumb mixture to the food processor along with the egg, onion, garlic, and Parmesan and process until very well combined (the mixture will be almost creamy). Add the remaining chilled chicken cubes to the food processor and pulse just to combine. The mixture will be semi-smooth with small chunks of chicken. Using a 1-inch small scoop, divide the mixture into about 30 small meatballs. Place the meatballs on a parchment paper-lined rimmed baking sheet and freeze for 15 minutes. Remove the pan from the freezer and roll the meatballs through the reserved bread crumbs to lightly and evenly coat the surface. Return the meatballs to the parchment-lined baking sheet.
  • Adjust an oven rack to the upper-middle position and preheat the broiler to high. Drizzle the meatballs with the oil and broil until they're cooked through, 5 to 6 minutes. Remove from the oven, sprinkle with Parmesan and the parsley (if using), rest for 5 minutes, and serve.
