ULTIMATE QUICHE LORRAINE

Ultimate quiche Lorraine image

The key to making the perfect quiche is simplicity, as you can see with this delicious recipe

Provided by Angela Nilsen

Categories     Buffet, Lunch, Main course, Supper

Time 1h15m

Yield Cuts into 8 slices

Number Of Ingredients 9

175g plain flour
100g cold butter, cut into pieces
1 egg yolk
200g pack lardons, unsmoked or smoked
50g gruyère
200ml carton crème fraîche
200ml double cream
3 eggs, well beaten
pinch ground nutmeg

Steps:

  • For the pastry, put 175g plain flour, 100g cold butter, cut into pieces, 1 egg yolk and 4 tsp cold water into a food processor. Using the pulse button, process until the mix binds.
  • Tip the pastry onto a lightly floured surface, gather into a smooth ball, then roll out as thinly as you can.
  • Line a 23 x 2.5cm loose-bottomed, fluted flan tin, easing the pastry into the base.
  • Trim the pastry edges with scissors (save any trimmings) so it sits slightly above the tin (if it shrinks, it shouldn't now go below the level of the tin). Press the pastry into the flutes, lightly prick the base with a fork, then chill for 10 mins.
  • Put a baking sheet in the oven and heat oven to 200C/fan 180C/gas 6. Line pastry case with foil, shiny side down, fill with dry beans and bake on the hot sheet for 15 mins.
  • Remove foil and beans and bake for 4-5 mins more until the pastry is pale golden. If you notice any small holes or cracks, patch up with pastry trimmings. You can make up to this point a day ahead.
  • While the pastry cooks, prepare the filling. Heat a small frying pan, tip in 200g lardons and fry for a couple of mins. Drain off any liquid that comes out, then continue cooking until the lardons just start to colour, but aren't crisp. Remove and drain on paper towels.
  • Cut three quarters of the 50g gruyère into small dice and finely grate the rest. Scatter the diced gruyère and fried lardons over the bottom of the pastry case.
  • Using a spoon, beat 200ml crème fraîche to slacken it then slowly beat in 200ml double cream. Mix in 3 well beaten eggs. Season (you shouldn't need much salt) and add a pinch of ground nutmeg. Pour three quarters of the filling into the pastry case.
  • Half-pull the oven shelf out and put the flan tin on the baking sheet. Quickly pour the rest of the filling into the pastry case - you get it right to the top this way. Scatter the grated cheese over the top, then carefully push the shelf back into the oven.
  • Lower the oven to 190C/fan 170C/gas 5. Bake for about 25 mins, or until golden and softly set (the centre should not feel too firm).
  • Let the quiche settle for 4-5 mins, then remove from the tin. Serve freshly baked, although it's also good cold.

QUICHE RECIPE

Quiche Recipe image

This is a perfect base quiche recipe and it's all baked in a super flaky homemade pie crust. Use a combination of milk and heavy cream for the richest, creamiest filling and add your favorites such as bacon, feta cheese, ham, white cheddar cheese, crab meat or spinach.

Provided by Sally

Categories     Breakfast

Time 4h

Number Of Ingredients 8

1 unbaked Flaky Pie Crust (what I used) or All Butter Pie Crust*
4 large eggs
1/2 cup whole milk*
1/2 cup heavy cream or heavy whipping cream*
1/4 teaspoon each salt and pepper*
1 cup shredded or crumbled cheese such as feta, cheddar, goat cheese, or gruyere
up to 2 cups add-ins (see recipe note)
optional toppings for serving: extra cheese, chopped herbs, hollandaise sauce, & freshly ground pepper to taste

Steps:

  • I like to make sure my pie dough is prepared before I begin the quiche. Make pie dough the night before because it needs to chill in the refrigerator for at least 2 hours before rolling out and blind baking (next step).
  • On a floured work surface, roll out one of the disks of chilled dough (use the 2nd pie crust for another recipe). Turn the dough about a quarter turn after every few rolls until you have a circle 12 inches in diameter. Carefully place the dough into a 9-inch pie dish. Tuck it in with your fingers, making sure it is completely smooth. To make a lovely edge, I do not trim excess dough around the edges. Instead, fold the excess dough back over the edge and use your hands to mold the edge into a rim around the pie. Crimp the edges with a fork or use your fingers to flute the edges. Chill the pie crust in the refrigerator for at least 30 minutes and up to 5 days. Cover the pie crust with plastic wrap if chilling for longer than 30 minutes.
  • While the crust is chilling, preheat oven to 375°F (190°C).
  • Line the chilled pie crust with parchment paper. Fill with pie weights or dried beans. Make sure the weights are evenly distributed around the pie dish. Bake until the edges of the crust are starting to brown, about 15-16 minutes. Remove pie from the oven and carefully lift the parchment paper (with the weights) out of the pie. Prick holes all around the bottom crust with a fork. Return the pie crust to the oven. Bake until the bottom crust is just beginning to brown, about 7-8 minutes. Remove from the oven and set aside. (Crust can still be warm when you pour in the filling. You can partially pre-bake the crust up to 3 days ahead of time. Cover cooled crust tightly and refrigerate until ready to fill.)
  • Reduce oven temperature to 350°F (177°C).
  • In a large bowl with a handheld or stand mixer fitted with a whisk attachment, beat the eggs, whole milk, heavy cream, salt, and pepper together on high speed until completely combined, about 1 minute. Whisk in add-ins and then pour into crust.
  • Bake the quiche until the center is just about set, about 45-55 minutes. Don't over-bake. Use a pie crust shield to prevent the pie crust edges from over-browning. Allow to cool for 15 minutes. Top with optional toppings before slicing and serving, if desired. Or you can cool the quiche completely before serving- it's fantastic at room temperature!
  • This quiche makes great leftovers! Cover tightly and store in the refrigerator for up to 4 days.

THE BEST QUICHE LORRAINE

The Best Quiche Lorraine image

Perfect for breakfast, lunch or dinner, this traditional French quiche is filled with crispy bacon, soft, sweet onions and nutty Gruyere, all nestled in a tender pastry crust. In the shop windows of Paris you will often see quiche several inches high and brimming with filling. While it is absolutely magnifique, it is also incredibly time-consuming and technically challenging for the home cook. In our version, we use a shorter tart pan so there's less fussing with large volumes of dough, and a reduced amount of custard cuts the baking time in half. And although you do need to refrigerate the dough twice, it's worth it. The pastry is extra buttery and keeping it chilled makes it easier to work with and results in a light flaky crust.

Provided by Food Network Kitchen

Time 4h15m

Yield 8 servings

Number Of Ingredients 12

1 cup all-purpose flour, plus more for dusting (see Cook's Note)
Kosher salt
1 stick (8 tablespoons) cold unsalted butter, cut into small pieces
3 to 5 tablespoons ice water
1 tablespoon unsalted butter
1 small yellow onion, very thinly sliced
Kosher salt and freshly ground black pepper
4 ounces slab bacon, cut into 1/2-inch pieces
2 teaspoons fresh thyme leaves
1/2 cup shredded Gruyere (about 2 ounces)
1 cup heavy cream
2 large eggs

Steps:

  • For the pastry crust: Pulse the flour and 1/2 teaspoon salt in a food processor until combined. Add the butter and pulse until the flour looks like cornmeal. Sprinkle in 3 tablespoons ice water and pulse until the dough begins to come together. Pinch the dough with your fingers; if it doesn't hold together, add up to 2 more tablespoons ice water, 1 tablespoon at a time, and pulse again.
  • Transfer the dough to a sheet of plastic wrap and pat into a disc. Wrap tightly and refrigerate until firm, at least 1 hour and preferably overnight.
  • Lightly flour a work surface, then roll the dough into an 11-inch round, about 1/8 inch thick. Center the dough in a 9-inch fluted tart pan with removable bottom, with an even overhang of dough all around. Press the dough into the edges of the pan and the fluted sides. Roll the rolling pin over the top to cut off the extra dough (discard the extra). Poke the bottom and sides all over with a fork. Chill until completely cold, about 30 minutes.
  • Meanwhile, position an oven rack in the lower third of the oven and preheat to 375 degrees F.
  • Press a piece of parchment over the chilled crust, then fill with pie weights, raw beans or rice. Put the pan on a baking sheet. Bake until the crust is set and golden around the edges, about 40 minutes. Carefully remove the parchment and weights. Return to the oven and bake until the crust is dry and slightly golden, about 15 minutes more. Let cool completely, about 30 minutes.
  • For the filling: Combine the butter, onion, 1/2 teaspoon salt and 1/2 cup water in a medium skillet over medium-low heat. Cook, stirring occasionally, until the onions are completely softened and all the water has evaporated, about 30 minutes.
  • Meanwhile, cook the bacon in a separate medium skillet over medium-low heat, stirring, until the fat has rendered and the bacon is crisp, 10 to 15 minutes.
  • When the onions have cooked for 30 minutes, add the bacon using a slotted spoon, then stir in 1 teaspoon of the thyme and 1/2 teaspoon pepper. Spread the onion mixture in the bottom of the crust and sprinkle with the Gruyere. Whisk together the cream, eggs and 1/2 teaspoon salt in a medium bowl until combined. Pour the cream mixture over the filling in the crust and top with the remaining 1 teaspoon thyme.
  • Bake the quiche on the baking sheet until set and golden, about 30 minutes. Let cool at least 30 minutes before serving.

THE BEST CLASSIC QUICHE

The Best Classic Quiche image

From the flaky pie crust to the creamy egg filling, this recipe a basic quiche is not only easy to make but downright delicious! Choose your desired filling to suit your family's preferences.

Provided by Kristen Chidsey

Categories     Breakfast

Time 45m

Number Of Ingredients 7

1 9-inch pie crust (refrigerated, homemade, or frozen)
4 eggs
1 cup cream (or half and half or whole milk)
3/4 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon onion powder
2 cups flavor additions (see notes for suggestions)

Steps:

  • If using a refrigerated pie sheet or homemade pie crust, roll out pastry dough into a 1/4 inch thick circle and place it into a 9-inch pie pan or 9-inch deep-dish tart pan. Trim off excess pie dough and crimp edges using your fingers. Place pie dough into the freezer for 15 minutes or in the refrigerator for 1 hour.
  • Preheat oven to 375 degrees F.
  • If using a refrigerated pie sheet or homemade pie crust, line the crust with parchment paper and fill it with dried beans or pie weights. Bake until lightly golden and set, 15 minutes. Remove pie weights and continue baking until the bottom crust is golden, 5 to 10 minutes more. Let cool slightly.
  • If using a frozen-ready to bake pie crust, bake from frozen for 10 minutes at 375 degrees F, before filling with the egg mixture. Let cool slightly.
  • Once the pie crust has been baked, whisk or blend together eggs, cream, salt, pepper, and onion powder until light and fluffy. Gently tap out excess air bubbles.
  • Sprinkle the desired 2 cups of fillings evenly over the cooled crust. Pour the egg mixture over the pie crust. Top with additional cheese if desired.
  • Bake quiche at 375 degrees until eggs are set, about 35-40 minutes, checking on pie crust after 25 minutes, and covering the crust with pie shields or foil to prevent overbrowning. The quiche is done when the edges are set, but the center wiggles slightly.
  • Let quiche cool for at least 20 minutes before slicing and enjoying.

  • Cook the bacon in a large frying pan until crispy and fat is rendered. Remove the bacon and pour off all but two tablespoons (roughly) of the bacon fat. Add the butter to the bacon fat and make sure the heat is medium. Add the onions to the pan and begin cooking over mediium heat. Add a little (not too much) salt to the onions, cover and turn the heat to low and cook for about 30 minutes, stirring every now and then. The onions should be deeply caramel in color and look almost like a confit or jam (good and soft. Put caramelized onions on a plate to cool completely.
  • Roll out your pie dough to fit an 8-inch spring form pan. Here's the thing, you def will need one and a half for this and sometimes even two sotre bought crusts. You don't want to roll the dough too thin and have the quiche bleed through all over your oven, and this is a deep dish egg pie so you want to make sure the crust comes all the way up the sides. What I do is roll two together to make it extra huge and then press into the springform, the overhang up the sides you simply fold over to make the sides double thick, which will support the quiche out of the pan.
  • Now you should preheat the oven to 425 and make sure the bototm rack is accessible. When onions and bacon are completely cooled, begin making your egg custard filling. this is the easy part. Place all the custard ingredients in a blender, top on and blend that shit up. Start on low speed and increase and blend for about a minute. You want it to be frothy and light AF.
  • First, put the springform pan on a peice of foil and run the foil up the sides (in case there is spillage). Spread HALF the onion mixture on the bottom of the pie crust, and sprinkle with HALF of the bacon. Sprinkle 3/4 cup of the cheese over the bacon and onions. CAREFULLY and SLOWLY pour HALF the egg mixture in. Repeat with the other half of the oinions, bacon and egg mixture...not the cheese.

Roll it and transfer to a rectangular quiche or tart pan (mine is 25 x 20 cm or 10 x 8 inch). You can also use other sizes like 14 x 6 inches, 12 x 12 inches or even round-shaped ones. Bake for 15 minutes.
  • Place soaked cashews, garlic, water, lemon juice, nutmeg and a pinch of cayenne in the bowl of your food processor or blender. Pulse until smooth and silky. • If you choose to use asparagus in your quiche, blanche it first. Trim the ends and put asparagus in salted boiling water vertically (stems down) for 5 minutes. This way you will pre-cook the thickest parts of your stems while the tops will be nice and crunchy.

Add the butter, shallots and thyme and cook, stirring often, until the mushrooms are tender, about 12 minutes longer. Season with salt and pepper and let cool.
  • Scatter 1/4 cup of the cheese and half of the mushrooms evenly over the bottom of the Buttery Pastry Shell. Make a second batch of custard with the remaining milk, cream and eggs, plus the same amount of salt, pepper and nutmeg as before and pour into the shell. Scatter the remaining 1/4 cup of cheese on top.
  • Bake the quiche for about 1 1/2 hours, or until richly browned on top and the custard is barely set in the center. Let cool in the pan until very warm.
