What could be more comforting than chicken breasts wrapped in bacon with BBQ sauce and cheese? Serve this easy chicken dish with mash or roast potatoes

Ingredients

1 tbsp vegetable oil, plus extra for the tray
2 skinless chicken breasts
4 rashers smoked back bacon
1 red onion, sliced
½ pack runner beans, ends trimmed
2 carrots, peeled and sliced
50ml sticky BBQ sauce
25g grated parmesan
4 potatoes, peeled and chopped
100ml milk
2 tbsp cream cheese

Steps:

Heat oven to 200C/180C fan/gas 6. Oil a tray, put the chicken breasts on it and cover each one with 2 bacon rashers. Put the chicken in the oven for 20-25 mins until cooked through.
While the chicken is cooking, fry the onion in 1 tbsp oil until golden brown and soft, then set aside. Put the potatoes in a large pan of boiling water and cook for 10-15 mins until soft. Put another smaller pan of water on the hob and bring to the boil while the potatoes are cooking. Once boiling, tip in the runner beans and carrots and cook for 8-10 mins until soft but with a little bite. Drain the potatoes and put them back in the pan with the milk and cream cheese, mash until smooth and stir though the fried onions.
Once the chicken is cooked, pour over the BBQ sauce and scatter over the parmesan and return to the oven for 2 mins until the cheese has melted. Serve with the mash, carrots and runner beans.

1 loaf French bread
1/2 stick (4 tablespoons) unsalted butter, melted
2 teaspoons paprika
6 cloves garlic, minced
1 cup mayonnaise
1 cup shredded sharp Cheddar
1 cup shredded pepper jack cheese
1/4 cup grated Parmesan, plus more for garnish
Pinch cayenne pepper
Kosher salt
2 tablespoons chopped fresh flat leaf parsley

Steps:

Preheat the oven to 400 degrees F.
Split the bread lengthwise down the middle and lay cut-side up on a baking tray.
In a small pot, add the butter, paprika and garlic. Set over low heat and mix well until just melted, about 1 minute. In a mixing bowl, combine the mayonnaise with the cheeses, then pour in the melted butter and stir well. Season with the cayenne and salt.
Smear evenly over the bread, then bake until bubbly and golden brown, 10 to 12 minutes.
Sprinkle with Parmesan and parsley, then cut and serve.

With the winter being all wonky this year I wanted something to boost my immunity. I also love garlic for more than its anti-viral, antibiotic properties. I roasted half of the garlic but it should turn out well to use all roasted or un-roasted. Use home-made chicken stock for more nourishing benefits. Ingredients

1 medium onion (about 1/2 to 3/4 cup)
1 head garlic, cloves chopped and crushed
1 roasted head of garlic (or 1 teaspoon)
2 stalks celery
2 tablespoons butter
3 cups chicken or 3 cups vegetable stock
2 medium small potatoes
1/2 teaspoon thyme
1/2 teaspoon savory
1/2 teaspoon salt
creme fraiche, sour cream (use yogurt for added pro-biotic benefits) or yogurt (use yogurt for added pro-biotic benefits)

Steps:

Chop the celery and onions, and saute them in the butter with the un-roasted head of garlic.
When vegetables are soft, add the stock and potatoes, and bring to a boil.
Add the roasted garlic.
Simmer the soup, covered, until the potatoes are soft.
Add savory, thyme, and salt.
Puree soup with a hand held blender, or throw in your blender or food processor. You can always add water if it is too thick.
Serve with a dollop of creme fraiche, sour cream, or yogurt (plain is good too!).

In a small bowl, mix together the vegan butter, garlic, parsley, and salt. Spread the butter evenly over the surface of each loaf half. For classic garlic bread without the cheese, skip to the baking step. For cheesy vegan garlic bread, divide the Melty Stretchy Goeey Vegan Mozzarella evenly among the two loaf halves and spread the cheese. It's ok if it isn't perfect, it will be easier to spread once baked a little.
Bake uncovered for 10 minutes. If needed you can use a knife or spoon to spread the cheese a little more after baking. You can optionally brown the cheese by turning your oven to broil, and placing it under the broiler for 1 - 2 minutes. Keep a close eye on it so it doesn't burn. There is no need to broil the classic cheeseless version. Slice into strips and serve alongside your favourite pasta, or soup, or chili.
