Steps:
- In a medium pot set over medium heat, add the apple cider, orange juice, lemon juice, ginger, nutmeg, cloves and cinnamon sticks. Bring to a simmer and cook for 20 minutes.
- Ladle the wassail into mugs spiked with brandy or cognac, and garnish with spices and apple slices or orange wheels.
GRANDMA'S WASSAIL
An easy recipe for the traditional holiday drink. If you don't have a tea ball, place spice mixture on a small piece of cheesecloth and tie with a string, forming a small pouch.

Steps:
- Mix apple cider, orange juice, lemon juice, pineapple juice, and sugar together in a large pot over medium-low heat.
- Place cloves and cinnamon in a tea ball; add ball to the apple cider mixture. Simmer mixture until warmed through, about 15 minutes. Serve from pot with large ladle.

WASSAIL
My wassail recipe has been a holiday tradition in our family for many years. Not only does it make the house smell wonderful, it is a tasty and warming beverage for those chilly days. The recipe was given to me by a co-worker many years ago.

Steps:
- Combine all above ingredients (except whiskey) in a large pot or large coffee pot and bring to a boil.
- Allow to simmer at least 1 hour.
- Strain and add whiskey if you desire.
- Garnish with sliced oranges and serve hot.
- Enjoy!
- Note: I always use cheesecloth to tie the Allspice and Cinnamon Sticks into which allows me less straining.
- I recycled the glass jugs that the cider came in and use them to refrigerate any leftovers.
- My family enjoys having wassail the entire holiday season, so we normally double or triple the recipe.

It's a fragrant, warming concoction mixed in bulk (this recipe makes 12 servings) and set out for sharing, all but demanding that you call in a crowd. There's really no such thing as wassail for one. - Heat oven to 350 degrees. Place apples in a 9-by-9-inch glass baking dish. Spoon light and dark brown sugar into center of each apple, dividing sugar evenly among them. Pour 1 cup water into bottom of dish and bake until tender, about 1 hour.
- Meanwhile, pour Madeira, ale and English and apple ciders into a large slow cooker or heavy pot. Place cloves, allspice, cinnamon and orange peel into cheesecloth, tie shut with kitchen twine and add to slow cooker or pot along with ginger and nutmeg. Set slow cooker to medium, or place pot over low heat. Gently simmer for about 1 hour, while apples bake, or longer if desired.
- Add liquid from the baking dish and stir to combine. Using tongs, transfer apples into slow cooker or pot to garnish. Reduce heat. Ladle hot wassail into heatproof cups to serve.

- Core the apples and fill each with a teaspoon of brown sugar. Place in a baking pan and cover the bottom with 1/8-inch of water. Bake in a 350-degree oven for 30 minutes or until tender. Combine the sherry or Madeira, nutmeg, ginger, cloves, allspice berries, cinnamon, sugar and water in a large, heavy saucepan and heat without letting the mixture come to a boil. Leave on very low heat. Beat the egg yolks until light and lemon-colored. Beat the whites until stiff and fold them into the yolks. Strain the wine mixture and add gradually to the eggs, stirring constantly. Add the brandy. Pour into a metal punch bowl, float the apples on top and serve in 8-ounce mugs.
WASSAIL
England's spin on the Christmas cocktail was the ancient beverage known as wassail, essentially Middle English for "cheers." The base alcohol was beer, mead, or wine, heated with sliced apples and spices and served in the customary wassail bowl. This version, scented with cloves and allspice, cleverly combines apples with cider and Calvados.

- Sprinkle apple slices with maple sugar, and roast at 400 degrees for 15 minutes for garnish if desired.
- Combine allspice berries and cloves in a cheesecloth sachet. Heat cider and spice sachet over medium-high heat for about 3 minutes.Remove from heat; cover, and let steep for 30 minutes. Stirin 2 tablespoons maple sugar, and heat over medium heatuntil it dissolves. Reduce heat to low and add ale. Heat for 8 minutes.Add Calvados and heat for 3 minutes more. Removesachet; discard.
- Divide among 4 to 6 heatproof glasses. Garnish with roasted apple slices if using.

- Preheat oven to 375°. Place apples in an 8-in. square baking dish, cut side down. Pour water around apples. Bake, uncovered, 20-25 minutes or until tender. Cool slightly., When cool enough to handle, scoop out pulp from apples and place in a blender; discard apple peel. Add 1/2 cup cider to blender; cover and process until smooth., In a stockpot, combine remaining ingredients, apple puree and remaining cider. Bring to a boil. Reduce heat; simmer, uncovered, 15 minutes. If desired, discard citrus slices and cinnamon stick before serving., Freeze option: If making in advance, you can cover and freeze the uncooked pie for up to 3 months.
