DRIED APPLES (IN THE OVEN!)
Here's how to make dried apples in the oven! This healthy snack is crispy and cinnamon-spiced...and makes your kitchen smell like heaven.

- Preheat the oven to 225 Fahrenheit.
- Wash the apples, then slice them very thin, about 1/8". We recommend using a mandoline to slice. Leave the cores in the apples, but remove any seeds as you cut.
- Line 2 baking sheets with parchment paper. Lay the apple slices on the tray in a single layer, as close as possible without touching. Sprinkle with cinnamon if desired.
- Bake for 1 1/2 to 2 hours, until curled and lightly browned. The chips will crisp after cooling for several minutes. (To test whether it is done, pull out an apple chip and set it on the counter for a few minutes until cool, then taste whether it is crisp.) Store the apple chips in a sealed container or mason jar at room temperature for about 1 week.

HOW TO MAKE OVEN-DRIED APPLE CHIPS (SEASONED 5 DIFFERENT WAYS)

Steps:
- Preheat oven to 200 degrees F.
- Prepare a large glass bowl with 2 cups of water and 2 tablespoons of lemon juice.
- Wash the apples and slice them to around ⅛" thick. (I don't remove the peels for chips.) I use my food processor with the slicing blade and it quickly and evenly slices the apples.
- Immediately place the slices in the lemon water and soak for a few minutes. Remove and pat dry with a clean towel.
- Arrange slices in a single layer on baking sheets lined with parchment paper and sprinkle with your favorite spices.
- Place the baking sheets in the oven and prop the door open a couple of inches to help release moisture.
- Bake the slices for 1 hour on one side, then flip and sprinkle with spices. Bake for another hour or until the slices turn into crispy chips.
- Follow the same instructions as above but peel the apples and dice them into small pieces.
- I don't bake them quite as long as chips because I like them to be a little bit chewy.
APPLE CHIPS
These yummy cinnamon apple chips will disappear almost as quickly as you make them! They're perfect for healthy snacks and easy to take on the road. The secret is baking at a very low temperature for a long time, which dehydrates the apples.

- Preheat oven to 225 degrees F (110 degrees C).
- Arrange apples slices on a metal baking sheet.
- Mix sugar and cinnamon together in a bowl; sprinkle over apple slices.
- Bake in the preheated until apples are dried and edges curl up, 45 minutes to 1 hour. Transfer apple chips, using a metal spatula, to a wire rack until cooled and crispy.

SPICED APPLE SLICES / APPLE CHIPS
Spicy, Tart, and Sweet Oven Dried Apples. I like Granny Smiths but use what firm apples you prefer. I made this with candies ginger just pulse in the grinder along with the cardamom. I like the uneven amounts of spices on each slice. This way those that like it can pick the more spiced ones.

Steps:
- Put cardamon in a coffee grinder (Used for spices not coffee. Grind till fine add rest of the sugar and spices give a couple of whirls to mix into a fine powder).
- Lay parchment paper on 2 cookie sheet pans.
- In a storage bag add spices and apples toss gently to coat, shaking excess spices off place on parchment in a single layer. You can sprinkle a little extra sugar on the slices this is optional.
- Dry in a 250 degree oven 1 to 3 hours depending on how juicy the apples are. Turning after 1 hour.
- They come out crisp,sweet and tart.
- Store in an air tight container if for some reason there is any left over.
OVEN-DRIED CINNAMON-SUGAR APPLE PEEL CHIPS
While making a large pot of applesauce, I chose not to discard the nutrient-rich peels but instead bake them into apple chips. It turned out to be an deliciously successful experiment. These apple chips are lightly sprinkled with cinnamon-sugar and oven-dried on parchment paper. To ensure even drying, it's important to make sure the peels are of equal/uniform thickness. Thicker peels will take longer to dry, and you need them to be completely dry for food safety reasons. For best results, use a counter-mounted spiral apple peeler; or just keep an even hand while peeling your apples. My family enjoyed these crispy treats, and I hope yours does too!

- In a small bowl, combine cinnamon and sugar. Sprinkle apple peels with cinnamon-sugar mixture and toss to coat evenly.
- Bake for 2 to 2 1/2 hours or until peels are thoroughly dried and snap-crisp when bent.
- Allow to cool for 10-15 minutes or until cool enough to touch. Gently break dried peels into 1 to 2-inch long pieces.
