Guacamole - Real Authentic Mexican

I am surprised how difficult it is to find a genuine guacamole recipe. No need for mayo or sour cream or all the other additives. This is the original, handed down generations, yet the most simple basic way to make Guacamole. I even make it better than my Mother in Law, which is a hard act to follow. :) Make this recipe and you will never go back. Hope you enjoy this like all my friends and family do.

Number Of Ingredients 7

5 large Hass avocadoes (black in color,slightly soft to the press)
2 large limes, juice of
1 medium white onion (diced)
3/4 cup loosely packed fresh cilantro (chopped finely)
1 large tomatoes (Diced-make sure it isn't overly ripe)
salt
finely chopped fresh jalapeno (optional)

Steps:

  • Slice avocados in half. Discard the seed. Scoop out of shell with a spoon. Place in bowl.
  • Add juice of one fresh lime immediately to prevent browning. Use a fork and mash to desired consistency.
  • Add chopped onions, tomato, and cilantro. Stir gently to mix ingredients.
  • Add juice of second lime and then salt to taste. Stir just slightly, until incorporated.
  • Add jalapeño to taste.
  • Serve with your favorite tortilla chips for a dip, or use with your favorite Mexican dish.
  • a side note: this is to make a chunky, yet creamy guacamole. Some people prefer to use a food processor with all the ingredients to make for a VERY creamy dip.

  • Peel and mash avocados in a medium serving bowl. Stir in onion, garlic, tomato, lime juice, salt and pepper. Season with remaining lime juice and salt and pepper to taste. Chill for half an hour to blend flavors.

1 avocado - peeled, pitted, and diced
1 roma (plum) tomato, diced
½ red onion, diced
1 serrano chile pepper, seeded and minced
½ teaspoon kosher salt
½ teaspoon ground black pepper
½ teaspoon garlic powder
1 teaspoon Worcestershire sauce
3 drops hot sauce
6 cilantro leaves, minced
1 tablespoon fresh lime juice

Steps:

  • Combine the avocado, tomato, onion, serrano chile, salt, pepper, garlic powder, Worcestershire sauce, hot sauce, and cilantro leaves in a bowl and mix. Pour lime juice over the top of the guacamole. Serve immediately. To store for later use, place avocado pit in the bowl with the guacamole and then cover with plastic wrap, pressing the wrap down to the surface of the guacamole and store in refrigerator.

This is the best version of this classic guacamole dip. The ingredients are kept to a minimum, so it's as fresh-tasting as possible.

1 large ripe tomato
3 avocados, very ripe but not bruised
juice 1 large lime
handful coriander, leaves and stalks chopped, plus a few leaves, roughly chopped, to serve
1 small red onion, finely chopped
1 chilli, red or green, deseeded and finely chopped
tortilla chips, to serve

Steps:

  • Use a large knife to pulverise 1 large ripe tomato to a pulp on a board, then tip into a bowl.
  • Halve and stone the 3 avocados (saving a stone) and use a spoon to scoop out the flesh into the bowl with the tomato.
  • Tip the juice of 1 large lime, a handful of roughly chopped coriander, 1 finely chopped small red onion and 1 deseeded and finely chopped red or green chilli into the bowl, then season with salt and pepper.
  • Use a whisk to roughly mash everything together. If not serving straight away, sit a stone in the guacamole (this helps to stop it going brown), cover with cling film and chill until needed.

1 lime
1/4 cup diced red onion
1 cup diced tomato
1 teaspoon minced garlic
1 tablespoon freshly chopped cilantro

1/2 teaspoon kosher salt
1/2 teaspoon fresh ground black pepper

Steps:

  • Gather all the ingredients together on a small table or T.V. tray in front of your guests.
  • Begin by slicing each avocado in half lengthwise with a medium-sized kitchen knife. Hold one avocado half in the palm of your hand with the pit facing up. Strike the avocado pit with the blade of the knife , twist the knife and pry out the pit; discard the pit. Score the flesh of the avocado with the knife into large dice cubes. Repeat with the other avocado halves with the pits, then score the remaining avocado halves in the same way.
  • Using a large spoon, remove the flesh of the avocados from the skins to a large bowl. Discard the skins. Once all the avocado halves have been "peeled", gently mash using a fork and spoon. (Do NOT over-mash -- guacamole should have delicious lumps of avocado in each bite.).
  • Slice the lime in half or quarter it and squeeze the juice over the mashed avocado. (Along with adding flavor, the lime juice helps preserve the color of the avocado.).
  • Add the remaining, prepared ingredients and mix. (If you aren't making the guacamole tableside, but ahead, wait until just prior to serving to add the tomatoes.).
  • Serve with tortilla chips or your favorite vegetables. Dip and Enjoy!
