8 strips Bacon
1/3 c. Chopped Shallots
10 Eggs
4 c. Whole Milk
1 tsp. Dry Mustard
1 tsp. Kosher Salt
1/2 tsp. Freshly Ground Black Pepper
1 c. Grated Gruyere Cheese
1 c. Grated Cheddar Cheese
1/4 c. Fresh Italian Parsley
6 c. (Lightly Packed) Torn French Bread

Steps:

  • Grease a 9x13 pan. Chop bacon into 1 1/2 inch pieces. Cook until crispy. Set aside on paper towels and pat to remove excess grease. Pour all but a couple of tablespoons of the bacon grease out of the pan. Cook shallots in remaining fat until softened. Set aside. Whisk eggs for 1-2 minutes. Whisk in milk, mustard, salt, and pepper. Stir in reserved bacon, shallots, cheese, and parsley. Fold in the torn bread. Pour into the prepared pan and cover with foil. Refrigerate for at least 6 hours, up to 24. Preheat oven to 350ºF. Bake strata for 1 hour and 10 minutes, or until golden, puffed, and set in the center. Remove from oven and let rest for 5 minutes before serving. (The strata will deflate as is rests.) Scoop portions with a large spoon rather than trying to cut into squares.

Grandma knew how to make a hearty meal out of leftover bits of bread and cheese. This recipe is meant for riffing, so use any type of cheese, leafy greens, meat or bread you happen to have on hand.

Butter or nonstick cooking spray, for greasing pan
6 large eggs
1 1/2 cups milk
1/2 cup half-and-half
Pinch of ground nutmeg
Pinch of cayenne pepper
Kosher salt
1/2 teaspoon freshly ground black pepper
3 handfuls dark, leafy greens such as spinach, arugula or baby kale, chopped (about 1 cup packed)
1 cup diced salty deli meat, such as Canadian bacon, ham, or cooked bacon
8 ounces (about 2 1/2 packed cups) leftover bread torn into 1-inch pieces, such as English muffins, bagels or sourdough bread
3/4 cup shredded mild melting cheese such as Gruyere, provolone or Gouda

Steps:

  • Position a rack in the center of the oven and preheat to 350 degrees F. Grease a 1 1/2 quart baking dish with butter or cooking spray.
  • Whisk the eggs, milk, half-and-half, nutmeg, cayenne, 1 teaspoon salt and 1/2 teaspoon pepper together in a large bowl. Fold the greens, meat, bread and 1/2 cup of the shredded cheese into the mixture. Pour into the prepared baking dish and top with the remaining cheese.
  • Cover with foil and bake for 35 minutes. Uncover and bake until the strata is puffed, golden brown at the edges and set in the center, about 15 minutes more. Let cool 10 minutes before serving.

Unsalted butter, at room temperature, for the baking dish
2 tablespoons olive oil
12 ounces cremini mushrooms, thinly sliced
Kosher salt and freshly ground black pepper
1 1/2 cups bite-size broccoli florets
3 cups half-and-half
1/4 cup grated Parmesan
10 large eggs
One 12-ounce loaf rustic Italian bread, preferably stale, crusts removed, cut into 1-inch cubes (about 6 cups)
2 cups shredded Monterey Jack cheese
1/4 cup thinly sliced scallions
2 plum tomatoes, seeded and chopped

Steps:

  • Butter a 9-by-13-inch baking dish.
  • Heat the oil in a large nonstick skillet over medium-high heat until hot. Add the mushrooms and cook, stirring occasionally, until golden brown, 6 to 8 minutes. Season with salt and pepper. Set aside.
  • Meanwhile, bring a medium pot of salted water to a boil. Cook the broccoli until crisp-tender, 3 to 4 minutes; drain and set aside.
  • Whisk together the half-and-half, Parmesan, eggs, 1 1/2 teaspoons salt and a few grinds of pepper in a large bowl.
  • Layer half of the bread cubes in the prepared baking dish. Sprinkle with 1 1/2 cups of the Monterey Jack, followed by the mushrooms, broccoli, scallions and tomatoes. Cover with the remaining bread cubes and pour the egg mixture evenly over the top. Cover with plastic wrap and refrigerate overnight. (This can also be assembled the day of; just let soak at room temperature 30 minutes to 1 hour before baking.)
  • On the day of baking, preheat the oven to 325 degrees F. Let the strata sit at room temperature while the oven preheats. Remove the plastic and sprinkle with the remaining 1/2 cup Monterey Jack. Bake until slightly puffed and just no longer jiggly in the center, 40 to 50 minutes. Let stand 5 minutes before serving.

EASY SAUSAGE STRATA

This strata is really easy to make. Put it together the day before, then just remove from the refrigerator and bake. Ham or bacon can be substituted for the sausage. Sometimes I add cooked chopped broccoli for a change of pace.

1 pound sliced fresh mushrooms
1 tablespoon vegetable oil
1 quart half-and-half
12 eggs
1 teaspoon salt and several grinds of pepper
12 slices fluffy white bread
1 pound cubed fully cooked ham
12 ounces extra-sharp cheddar cheese, grated
½ cup thinly sliced scallions

Steps:

  • Saute mushrooms in 1 tablespoon of oil. Season with salt and set aside.
  • Whisk half-and-half, eggs, salt and pepper until smooth. Spray a 9-by-13-inch Pyrex or ceramic baking dish with vegetable cooking spray.
  • Line bottom with 6 slices of bread. Scatter half of the ham, and half of the mushrooms over the bread, then sprinkle with half of the scallions and cheese. Pour 1 cup of egg mixture over the top. Repeat layers with remaining bread, ham, mushrooms, cheese and scallions. Slowly pour remaining egg mixture evenly over top. Cover with plastic wrap, then weight down casserole with 3 16-ounce cans for at least 15 minutes to submerge ingredients. (Can be refrigerated overnight, but return to room temperature before baking.)
  • Adjust oven rack to middle position. Bake in preheated 325-degree oven until custard is just set, about 50 minutes. Turn on broiler and broil until strata is spotty brown and puffy (watch carefully), about 5 minutes longer. Let stand for 8 to 10 minutes, then serve immediately.

  • Lightly grease casserole.
  • Cut 3 slices of bread into 3 strips each. Fit into casserole. Sprinkle with salt, pepper and 1/3 of the onion.

1 small yellow onion, diced
1 clove garlic, minced
2 red bell peppers, diced

1 cup shredded Cheddar
1 loaf Italian bread, ciabatta or baguette, cut into 1-inch cubes (about 8 cups)

Steps:

  • Preheat the oven to 375 degrees F. Butter a 9-by-13-inch baking dish.
  • Heat the oil in a large skillet over medium heat. Add the onions and cook, stirring occasionally, for 3 minutes. Add the garlic, bell peppers, broccoli, cauliflower and 1 teaspoon of the salt. Cook, stirring occasionally, until the onions are soft, about 5 minutes. Remove from the heat and let cool.

This is an easy breakfast dish-great to make ahead for rushed mornings as it can be refrigerated overnight. Almost any chopped vegetable or meat can be added; just add before the cheese layer. If you're feeding a crowd, just double and use a 9x13 pan. This is adapted from a Mennonite cookbook, More-with-Less.

2 cups cubed potatoes (I used Ore-Ida western style or can use O'Brien)
3 cups shredded cheese
10 large eggs
3 cups milk
1 tablespoon Worcestershire sauce
1 teaspoon dry mustard
salt and pepper

Steps:

  • The NIGHT BEFORE:.
  • In large skillet, cook bacon until crisp.
  • Drain off excess bacon fat, but keep a little in skillet in order to cook onion.
  • Add onion, ham and chopped bacon to skillet and cook until onion is tender and transparent.
  • Butter a large baking dish - I used a glass lasagna dish.
  • Layer the bread to cover bottom of dish - will use probably 5-6 slices or half the amount of bread cubed.
  • Add half of potatoes and cheese.
  • Top with bacon, onion and ham mixture.
  • Add remaining pieces of bread, potatoes and cheese.
  • In large bowl, beat eggs, milk, Worcestershire sauce, mustard, salt and pepper.
  • Pour this mixture evenly over the ingredients in baking dish.
  • Cover and chill OVERNIGHT in the refrigerator.
  • The NEXT MORNING:.
  • Remove strata from the refrigerator and bring to room temp (about 30 minutes prior to baking).
  • Preheat oven to 325°F.
  • Bake uncovered for 1 hour or when knife is inserted near center and comes out clean.

I make Strata often as a way to use up day old or stale bread (its hard for 2 people to finish a loaf of bread!)I've come up with a lot of variations but this one is my favorite. this can definitely be made ahead to serve for brunch or keep in the fridge ready to pop in the oven after Church.

1 lb sliced bacon (cut into 1/2-inch cubes)
2 cups cooked ham (chopped)
1 small onion (chopped)
10 slices white bread, cubed
1 cup cooked potato (cubed)
3 cups cheddar cheese (shredded)
8 eggs
3 cups milk
1 tablespoon Worcestershire sauce
1 teaspoon dry mustard
1 pinch salt and pepper

Steps:

  • In a skillet, cook bacon until crisp; add ham and onion. Cook and stir until onion is tender; drain. In a greased 13x9x2" baking dish, layer half the bread cubes, potatoes and cheese. Top with all of the bacon mixture. Repeat layers of bread, potatoes and cheese. In a bowl, beat the eggs; add milk, Worcestershire sauce, mustard, salt and pepper. Pour over all. Cover and chill overnight. Remove from refrigerator 30 minutes before baking. Bake, uncovered at 325 degrees for 60 minutes or until a knife inserted near the middle comes out clean.

  • Start With a Buttered Baking Dish, and Fill it With Bread. Choose an oven-proof baking dish that's about the right size to feed however many people you're planning on serving.
  • Use half the volume of milk and eggs as bread. A mixture of equal parts eggs and milk is what forms the quiche-like filling of the strata. Whatever volume the bread yielded, use half of that measurement for your milk as well as your eggs.
  • Flavor your liquid base. Season your egg and milk mixture with some salt and pepper and whatever else you want it to taste like: a spoonful of mustard, a splash of hot sauce, a pinch of paprika, or a whisper of nutmeg.
  • Use About the Same Volume of Shredded Cheese as Milk. You need some cheese in there to get everything cheesy and delicious, right? Your strata can hold up to equal parts cheese as milk and eggs.
  • Add Some Extras. If you want your strata to have more going on in it than eggs and cheese (you might not), you can add up to equal parts add-ins as cheese.
  • Assemble your Strata, and Let it Sit. Pour the milk and egg mixture over the top over the mix of bread, cheese, and add-ins. Press the bread down with your hands to make sure it's covered in liquid.
  • Bake your Strata. Before you bake it, cover your strata tightly with foil, and bake it for about 20 minutes at 350°F. Open up the oven, uncover the strata, and continue baking until the cheese is melted on top and the egg custard is set, 15 to 30 minutes more depending on the depth of your strata.
