Easy Swiss Chard image

Swiss chard makes a quick side with minimal prep. Try this simple sautéed Swiss chard recipe with garlic, olive oil, and crushed red pepper.

1 large bunch fresh Swiss chard (7 or 8 large leaves)
2 tablespoons extra virgin olive oil
1 clove garlic, sliced
Pinch dried crushed red pepper
1/4 teaspoon whole coriander seeds (optional)

Steps:

  • Prep the chard stalks and leaves: Rinse out the Swiss chard leaves thoroughly. Either tear or cut away the thick stalks from the leaves. Cut the stalk pieces into 1-inch pieces. Chop the leaves into inch-wide strips. Keep the stalks and leaves separate.
  • Sauté the garlic and crushed red pepper: Heat the olive oil in a sauté pan on medium high heat. Add garlic slices, crushed red pepper, and coriander seeds (if using), and cook for about 30 seconds, or until the garlic is fragrant.

Incredibly yummy- slightly spicy with a bit of lemon zip. This is the MOST delicious swiss chard recipe EVER! -I promise. (Adapted from a recipe from Bon Appetit)

1 1/2 tablespoons butter
1 1/2 tablespoons olive oil
2 garlic cloves, minced
1 pinch dry crushed red pepper
2 bunches swiss chard, stems trimmed, leaves cut into 1/2-inch-wide pieces
1/2 lemon, juice of
salt

Steps:

  • Melt butter and oil in heavy large pan over medium-low heat. Add garlic and crushed red pepper.
  • Sauté until fragrant, about 1 minute.
  • Add swiss chard; stir to coat.
  • Cover and cook until tender (stirring occasionally) about 8 minutes.
  • Squeeze juice from 1/2 lemon onto chard.
  • Season to taste with salt.
  • Enjoy!

BAKED SWISS CHARD

oil or butter, for greasing
1kg Swiss chard , stems cut into 1cm pieces and leaves into quarters
200ml double cream
1 garlic clove , crushed to a paste with sea salt
2 egg yolks
200g parmesan , grated (or vegetarian alternative)
75g dried breadcrumbs
1 tsp fresh thyme leaves

Steps:

  • Put a pan of salted water on to boil and cook the chard stalks for 2 mins until tender. Remove the stalks with a slotted spoon. Add the leaves and cook for 30 secs-1 min. Drain and reserve 200ml of the cooking water. In a saucepan, bring the cream to a simmer, then add the garlic and cook for 2 mins. Whisk in the water, egg yolks and 140g Parmesan, and let them all melt together and bubble for 3 mins.
  • Heat oven to 180C/160C fan/gas 4. Add the chard to the saucepan, season, mix well and tip into a greased baking dish. Top with the breadcrumbs, thyme and remaining Parmesan. Cover with foil and bake for 15 mins. Remove the foil and cook for 15 mins more until golden and bubbling.
