This is a wonderful apple pie filling that you make in the fall when apples are in abundance. During the winter months, just pull a package of pie filling from the freezer, defrost, and pour into your favorite pie crust. This makes enough filling for 4 pies.

Number Of Ingredients 8

16 cups apples, peeled and thinly sliced
4 tablespoons lemon juice
4 cups white sugar
1 cup cornstarch
4 teaspoons ground cinnamon
1 teaspoon ground nutmeg
1 teaspoon salt
8 cups water

Steps:

  • In a large bowl, toss apples with lemon juice and set aside.
  • Pour water into a Dutch oven over medium heat. Combine sugar, cornstarch, cinnamon, salt and nutmeg. Add to water, stir well, and bring to a boil. Boil for 2 minutes, stirring constantly.
  • Add apples and return to a boil. Reduce heat, cover and simmer until apples are tender, about 6 to 8 minutes. Cool for 30 minutes.
  • Ladle into 4 freezer containers or gallon freezer bags, leaving 1/2 inch headspace. Cool at room temperature no longer than 1 1/2 hours.
  • Seal and freeze. Can be stored for up to 12 months.
  • You can also make pies right away.

4 1/2 cups white sugar
1 cup cornstarch
1 tbsp ground cinnamon
1/4 tsp ground nutmeg
2 tsp salt
10 cups water
3 tbsp lemon juice
6 pounds apples

Steps:

  • 1. Peel, core, and slice apples; add lemon juice, toss to coat. In a large pan, mix sugar, cornstarch, cinnamon, nutmeg and salt; add water and mix well. Over medium heat bring to a boil and cook until thick and bubbly. Stir frequently to prevent scorching. Remove from heat. Pack the sliced apples into hot canning jars, leaving a 3/4 inch headspace. Fill jars with hot syrup and gently remove air bubbles. Wipe rim and seal with hot sterile lid and ring; process in a Hot water bath canner for 20 minutes. Remove jars; let cool overnight; label and keep in a dark cool place until ready to use. Enjoy!!! Makes 6 quarts

This recipe makes 7 quart jars of filling for apple pies. 2 quarts make a 9 inch pie. Need to have 7 one quart canning jars, with rings and lids.

4 ½ cups white sugar
1 cup cornstarch
2 teaspoons ground cinnamon
¼ teaspoon ground nutmeg
2 teaspoons salt
10 cups water
3 tablespoons lemon juice
2 drops yellow food coloring
6 pounds apples

Steps:

  • in a large pan, mix sugar, cornstarch, cinnamon and nutmeg. Add salt and water and mix well. Bring to a boil and cook until thick and bubbly. Remove from heat and add lemon juice and food coloring.
  • Sterilize canning jars, lids and rings by boiling them in a large pot of water.
  • Peel, core, and slice apples. Pack the sliced apples into hot canning jars, leaving a 1/2 inch headspace.
  • Fill jars with hot syrup, and gently remove air bubbles with a knife.
  • Put lids on and process in a water bath canner for 20 minutes.

I got this recipe for the USDA on canning. It does not say to give a water bath so I don't think this recipe needs it, but if you want to, do it about 25 minutes in hot water bath.

6 quarts blanched sliced fresh apples
5 1/2 cups sugar
1 1/2 cups clear gelatin
1 tablespoon cinnamon
2 1/2 cups cold water
5 cups apple juice
3/4 cup bottled lemon juice
1 teaspoon nutmeg
7 drops yellow food coloring

Steps:

  • Use firm crisp apples, such as golden delicious, Rome or other apples of similar quality.
  • Wash, peel and core the apples. Slice them about 1/2 inch wide and place in water containing ascorbic acid to prevent browning. Blanch 2 quarts at a time for 1 minute in boiling water. While blanching other apples, keep ones already blanched in covered pot to keep warm.
  • Combine the sugar, clear gelatin and cinnamon in large pot with the water and apple juice, food coloring and nutmeg. Stir and cook on medium high heat until the mixture thickens and begins to bubble.
  • Drain the apple slices from the water, reserving water.
  • Add lemon juice to water mixture and boil 1 minute more. Fold in the apple slices immediately and fill jars with mixture. Clean the rims and seal the jars.

Just got my hands on the Williams Sonoma Art of Preserving cookbook and thought this recipe was a great idea for future quick & easy apple pies! Makes (7) one-quart jars. Each jar is enough to make one 9" pie.

19 lbs apples
1 1/2 cups bottled lemon juice
5 cups sugar
1 1/2 cups clearjel starch
3 teaspoons ground cinnamon
5 cups apple juice

Steps:

  • Set a large pot of water to boil.
  • Pour 1/2 cup lemon juice into a large bowl.
  • Peel, core, and slice apples - dropping the slices into the bowl of lemon juice to keep them from browning.
  • When done preparing the apples, add the slices to the boiling water and blanch for 1 minute.
  • Turn off the heat, drain the pot, and return the slices to the pot to keep them warm.
  • In a large saucepan, combine sugar, starch, cinnamon, and apple juice.
  • Add 2 1/2 cups water and bring to a boil over medium heat.
  • Lower heat and simmer for 1-2 minutes.
  • Stir in the remaining cup of lemon juice and fold in the apple slices. Stir until warm.
  • Ladle the mixture into clean jars leaving 1" headspace.
  • Remove any air bubbles and wipe rims clean.
  • Process the jars in a canning bath for 25 minutes.
