- Defrost the roast for up to 2 days in the refrigerator. This process can take a while due to the size of the roast, so get started ahead of time. Leave the roast in its original packaging while it thaws. You will have an easier time rubbing in the spices and cooking the meat after it is unfrozen. If you're in a hurry, you can try defrosting it in the microwave. Heat it at a low temperature until it is no longer frozen. Another way to speed up defrosting is to submerge the meat under cold water. Do this only if your roast is in a watertight container. Change the water out as it warms.
- Remove the roast from the refrigerator an hour ahead of time. The wait time brings the roast up to room temperature, causing it to cook more evenly. It won't be out long enough to make bacteria an issue. You can vary the resting time between 30 minutes and 2 hours, depending on how much time you have available. If you need to get the roast in the oven right away, that is fine. It will still cook well and taste good.
- Mix all ingredients besides the roast in a separate bowl. Choose a mixing bowl and pour 1 US tbsp (15 mL) of olive oil into it. Add 1 US tbsp (15 mL) of Dijon mustard along with 0.5 oz (14 g) of butter, 0.3 oz (8.5 g) of chopped parsley, and a minced shallot. Sprinkle in about 0.6 oz (17 g) of both salt and pepper before stirring the ingredients into a paste. You can mix the ingredients 24 hours in advance and put them in a bag with the roast. The meat will absorb more of the flavors while the salt draws out flavor from the meat. Experiment with your seasoning ingredients. For example, you can leave out the shallot and mustard. You can add other herbs and spices or make a balsamic glaze.
- Rub the entire surface of the top round roast with the paste. If you have a basting brush, use it to easily coat the outer surface of your roast. A brush is helpful if your mixture is too liquid. You can also pour the paste onto the roast and try to spread it using a knife or other tool. Dry rubs and pastes can usually be worked into the meat by hand. If you're not shy about getting your hands dirty, you don't need to reach for a brush.

- Preheat your oven to 450 degrees. Fit a rack in a roasting pan and set aside.
- Rub the top round roast with the olive oil. Then spread the salt, black pepper and garlic over it. Do your best to cover not only the top and bottom but the sides.
- Place the seasoned roast on the rack in roasting pan. Roast (uncovered) in the oven for 15 minutes. Then reduce the heat to 325. Roast for another 45 to 60 minutes or until the a thermometer reads between 135 and 140. Please note that roasts that are less than 3 inches thick will take less time to roast. I highly recommend investing in an instant read thermometer so you know the exact moment to pull it out of the oven.
- Remove from the oven, loosely tent with foil, and allow the roast to rest for 10 minutes. Slice thin, and enjoy. See post for details about reheating and left over ideas.

ROAST TOP ROUND BEEF ROAST WITH YORKSHIRE PUDDING

- Preheat the oven to 400 degrees F.
- To make the Yorkshire Pudding batter, in a bowl, combine the flour and salt. In another bowl, beat the eggs. Add the milk and gradually add to the flour, mixing to make a thin, smooth batter, being careful not to over mix. Let rest for at least 1 hour at room temperature, or for several hours in the refrigerator (bringing to room temperature before cooking).
- Put the roast in a small roasting pan, bone side down. With a small sharp knife, make sixteen 1/2-inch-deep slits in the meaty side of the roast. Insert 1 garlic clove into each slit, pressing into the meat. Pinch with your thumb and index finger to close the openings. Combine the chopped thyme, salt, Essence, and pepper in a small bowl. Slowly stir in the oil to make a paste. Rub the paste on both sides of the roast, and place the thyme sprigs under the roast. Roast for 1 hour. Remove the pan from the oven and turn the roast for even browning. Reduce the oven temperature to 350 degrees F and continue roasting until an instant-read thermometer inserted in the thickest part of the roast reads 125 to 130 degrees F for medium-rare, about 45 minutes, or 140 degrees F for medium, about 1 hour. Remove from the oven and let the roast stand for 15 minutes before carving.
- While the roast is resting, make the Yorkshire Pudding in the same roasting pan.
- Increase the oven temperature to 450 degrees F. Pour off all but 3 tablespoons of the hot pan drippings, adding hot melted butter as necessary to make the correct measure. Place the pan in the oven to stay hot while the oven comes to temperature.
- Pour the prepared batter into the dish and bake, without opening the oven door, until risen and golden brown, 15 to 20 minutes. Remove from the oven and serve immediately with the carved rib roast.

- Combine the oil, salt, pepper, thyme and garlic into a paste, then rub all over the roast. Set aside at room temperature for 1 hour. Forty minutes into the hour, pre-heat the oven to 500 degrees F.
- On a baking sheet, place two sheets of Reynolds Wrap® Aluminum Foil large enough to cover the roast. Place the roast on the foil sheets and transfer everything to the oven. Roast for 6 minutes per pound.
- Remove from the oven. Fold up the foil so it wraps the roast then return it to the oven. Reduce the oven temperature to 170 degrees F and roast for one hour. After an hour, check the internal temperature with an instant-read thermometer: 120-125 degrees F will yield a rare center, 130-140 degrees F will yield a medium-rare center, and 140-150 degrees F will yield a medium center.
- When the roast is finished, remove it and set it on a cutting board to rest. Transfer any drippings from the roast into a saucepan, then combine with the red wine and beef broth. Bring to a simmer over med-high heat and reduce by 1/4; reduce heat to medium-low and whisk in the cubes of butter one at a time until incorporated into the sauce. Add salt and pepper to taste and set aside.
- Slice the roast into 1/2 inch thick slices and serve with the pan sauce poured on top.

A PERFECT EYE OF ROUND ROAST BEEF
Without fail, my mother-in-law made an eye of round roast beef for Sunday dinner every week. While I tried to do so myself, I always had varying results. Sometimes, I overcooked it, and other times, it was too rare. I finally discovered this method that produced a perfect roast beef every time, that was medium, and even rarer in the center, and pleased all of our tastes. The key is to use an eye of round roast (or any well-rounded and even-shaped roast). The seasonings are up to you. I listed very basic seasonings, but I use different meat rubs at times, or whatever I'm in the mood for. While there are not enough pan drippings to make gravy, the juices make a lovely au jus to accompany the beef. This works for any size roast and couldn't be easier.

- Preheat oven to 500 degrees. If desired, trim off excess fat from roast beef. Season with salt and pepper (and paprika, if desired). Rub meat with vegetable oil.
- Place meat in roasting pan in preheated oven.
- Roast beef for 5 minutes per pound. Then turn off oven. DO NOT OPEN OVEN FOR 2 HOURS! (For example, a 4-lb. roast would take 20 minutes to cook and then sit in the turned-off oven for 2 hours.).

- Pound the heck out of (or stab, as I did) the roast. Place unseasoned roast in deep baking dish.
- Quarter potatoes and place all around roast (do not peel).
- Sprinkle golden onion soup mix all over roast and potatoes.
- Add cola and cover loosely with foil.
- Bake at 300 degrees for 3-4 hours. Let sit 15 mins before slicing (against the grain). Spoon juices from pan over slices of beef.
