3 ripe bananas
1 teaspoon sugar
1/2 cup cornmeal (ufa)
1 pinch salt
oil (for frying)

Steps:

  • Mash the bananas and mix well with the salt, sugar, and ufa.
  • Heat oil in deep pan until it spatters when a drop of water is dropped it.
  • Fry spoonfuls of this mixture in the very hot oil.
  • Turn to cook on all sides until light golden colored.
  • Remove with slotted spoon to paper towels to absorb oil.
  • Serve warm with butter and or roll in sugar.

This can be served with Vanilla ice cream. Dough should have a consistency heavier the pancake mix, so it can be dropped by spoonfulls. If necessary use more flour to thicken dough or more milk to thin the dough.

1 1/2 cups flour
2 teaspoons baking powder
1 tablespoon powdered sugar
1 tablespoon brown sugar
1 teaspoon ginger
1 teaspoon cinnamon
1/4 teaspoon salt
1/2 cup evaporated milk
1 egg, separated (Egg white beaten stiff)
oil
3 bananas, mashed and sprinkled with
lemon juice
1/2 cup roughly chopped pine nuts
cinnamon
sugar

Steps:

  • Measure, sift and mix all dry ingredients.
  • Combine milk and egg yolk, add to dry ingredients.
  • Fold in the mashed bananas, egg white and pine nuts.
  • Batter should have consistency to be dropped by teaspoonful in hot oil.
  • Pour enough oil into skillet to a depth of 1 inch.
  • Test heat of oil[approximately 375°].
  • Drop by spoonfuls as many as pan will hold.
  • Turning as it browns,cook about 5 minutes.
  • Drain on paper towels.
  • Sprinkle with cinnamon and sugar, keep warm and just before serving top with ice cream.

Very Quick, very simple dessert for those last minute need a dessert times. Choose firm bananas. These can be dressed and plated up to look very impressive. Serve with fruit of choice and ice cream.

6 bananas, cut in 1/2 lengthways
1 cup plain flour
1/2 cup cornflour
1 tablespoon baking powder
1 cup milk, approx
extra flour, to coat banana
oil (for frying)

Steps:

  • Coat bananas lightly with flour.
  • Sift the flour, cornflour and baking powder into a bowl.
  • Make a well in centre and gradually add milk. Mix to a smooth consistency similar to thickened cream.
  • Dip bananas into batter and fry in hot oil until golden brown.
  • Coat thinly with sugar. (Optional).

I was craving apple fritters but wasn't able to get to the donut shop. So I looked around to find on hand ingredients to satisfy my craving. I didn't have apples, but I had some very nice ripe bananas. That's when I came up with these. You won't be disappointed!

2 ripe bananas
2 tablespoons milk
2 eggs
1 tablespoon margarine, melted
1 cup all-purpose flour
3 tablespoons white sugar
1 teaspoon baking powder
½ teaspoon salt
¼ teaspoon ground cinnamon
1 pinch ground nutmeg
1 quart oil for frying
1 cup confectioners' sugar for dusting

Steps:

  • In a large bowl, mash the bananas. Mix in milk, eggs and margarine until smooth. In a separate bowl, combine flour, sugar, baking powder, salt, cinnamon and nutmeg. Stir dry ingredients into banana mixture.
  • Heat oil in a deep fryer or heavy bottomed pan to 375 degrees F (190 degrees C). Drop batter by spoonfuls into hot oil, and cook, turning once, until browned, 2 to 8 minutes. Drain on paper towels and dust with confectioners' sugar.

2 eggs, beaten
3/4 cup all-purpose flour
3 tablespoons vegetable oil

Steps:

  • In a large bowl, mash the bananas and blend in the eggs. Stir in the flour. Heat the oil in a large skillet over medium-high heat until hot. Drop spoonfuls (2 to 3 inches in diameter) of the batter into the hot oil. Reduce the heat to medium. When bubbles begin to appear, turn and cook the other side until golden brown. Repeat the process until all the batter is used up, keeping the cooked fritters in a warm oven. Serve them with maple syrup or honey.
