Another one from grandma's recipe box.... This is from an old newspaper and at the top says "Friendly Gatherings, No matter what is traditional in your family holidays perhaps you might look to a change by trying one of our traditions." Grandma started making this for part of our Thanksgiving and Christmas dinner when I was about 8... Once I was old enough to be in the kitchen cooking, about 9, this was always my dish to prepare....

1 (8 ounce) package cream cheese, softened
1 (10 3/4 ounce) can cream of mushroom soup
1 (10 ounce) package spinach, chopped and frozen
1 (2 7/8 ounce) can French-fried onions
1 (8 ounce) can water chestnuts

Steps:

  • Heat cream cheese and soup, stirring until blended.
  • Thaw and drain spinach.
  • Combine soup mixture, spinach, water chestnuts and two thirds of onions in large bowl.
  • Pour into a 1 quart casserole dish and crumble remaining onions on top.
  • Bake 20 minute at 350.

My family were never big on eating spinach until I made this recipe. Now they always ask for more. This can also be served on crackers or french bread as an appetizer. Try it . . you'll like it.

2 (10 ounce) packages frozen chopped spinach
1 can cream of mushroom soup
1 (8 ounce) package cream cheese
1 medium onion, chopped
2 tablespoons margarine
1 can durkee's French fried onion rings

Steps:

  • Cook the spinach according to directions and drain well.
  • Saute onion in margarine.
  • Add the soup and cream cheese.
  • Heat under low heat until the cheese is melted.
  • Mix together with the spinach.
  • Add 1/2 can of onion rings and mix well.
  • Turn into greased casserole.
  • Top with remainder of onion rings and bake at 350 for 30-35 minutes.

I don't know where this originally came from. My mom always made it for holiday meals; it turned three spinach-hating kids into three begging-for-spinach kids. It's still, almost 50 years later, a staple at family dinner events.

Number Of Ingredients 9

1/2 cup butter
1/2 cup flour (matzo cake meal for Passover)
1/2 teaspoon salt
1/4 teaspoon pepper
2 cups milk
3 (10 ounce) packages frozen chopped spinach
1/2 teaspoon grated onion (or to taste, grated onion goes very far)
1/2 teaspoon Worcestershire sauce (or to taste)
1/2 cup fine dry breadcrumb (matzo meal, not matzo cake meal, for Passover. This amount is an approximation)

Steps:

  • Melt butter, blend in flour, salt & pepper, stir and bubble one minute.
  • Remove from heat and stir in milk. Bring to boil, stirring constantly. Boil one minute, stirring.
  • Drop in still frozen spinach and cook until thawed.
  • Season with grated onion and Worcestershire Sauce to taste (approx 1/4 to 1/2 tsp each. Start small and taste as you add. A little goes a long way.).
  • Place in casserole, top with buttered bread crumbs. (Buttered bread crumbs: 2-3 Tbsp butter, melted, pour in fine, dry bread crumbs.).
  • Bake at 325F (or 350F) for at least one hour.
  • Passover 1965 - 8 pkgs spinach, double sauce recipe, made 3 1/2 quarts.
  • Passover 1970 - 6 pkgs spinach, double sauce recipe, made 3 quarts.

2 (10 ounce) boxes frozen chopped spinach, thawed and drained
2 cups cottage cheese
1/2 cup cold butter, cut into pieces
6 ounces sharp cheddar cheese, cubed
3 eggs
1/4 cup flour
1 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon nutmeg

Steps:

  • Spray your crock pot with Pam, or grease the insides.
  • Mix all the ingredients together well in a bowl and pour into the crock pot.
  • Cover and cook on high setting for one hour.
  • Turn the setting to low and cook for another four to five hours.

Finally, a way to get even your pickiest eaters to eat their spinach! This is a filling and quick casserole that can easily be made low fat if you use ground turkey and low-fat cheese. Serve with a green salad and some french bread and dinner is served!

1 lb ground beef
shredded monterey jack cheese
1 (16 ounce) box penne pasta, cooked
salt & pepper
seasoned garlic salt
2 -3 bunches fresh spinach
olive oil
3 -4 garlic cloves
1/2 onion, chopped
1 (10 3/4 ounce) can condensed condensed cream of mushroom & garlic soup

Steps:

  • In a large wok or frying pan heat oil and cook onion and garlic in a small amount of oil until transparent.
  • Add spinach and cook until wilted. Set aside.
  • Brown ground beef and season with garlic salt, salt and pepper to taste. Set aside.
  • Combine cooked pasta, spinach, ground beef, cheese (amount to your preference, my family likes it cheesy!) and soup.
  • Add salt and pepper to taste.
  • Place in a large baking dish, cover in a layer of shredded cheese.
  • Cover with tin foil and place in a 350°F oven for 30 minutes.
  • Uncover and place back in oven for another 10 minutes.

This recipe is inspired by a workmate who makes this all the time to use up her leftover spinach. We tried it and it's really good - it even got my picky other half to eat spinach because the flavour was hidden by the cauli and cheese. Ingredient amounts are estimates - really you can use as much or as little spinach as you like. I use a handful but the idea is to get rid of whatever needs eating up! You can either do this with a proper cheese sauce, or you can just grate some cheese on top if you're in a rush. I'm posting the quick way...

6 cauliflower florets
Baby Spinach (a handful of or whatever needs using up)
3/4 cup grated cheese (your choice, we've used cheddar and mexicana and both taste great)

Steps:

  • Pre-heat oven to 200c.
  • Steam or boil the cauliflower for approximately 5 mins until part-cooked.
  • Cut the spinach into strips (this makes it easier to separate) and blanche.
  • If you have more time and would prefer to make a proper cheese sauce then make a roux to your desired consistency (using flour, butter and milk) and add the cheese.
  • Fling all three ingredients into an oven-safe bowl and mix well.
  • Bake for 10 minutes until the cauliflower has cooked and the cheese is nice and melted.
  • Serve immediately.

If spinach scares you, this is one recipe that contains spinach that you do not have to be afraid of! It is so delicious that even my picky kids like it. My mother-in-law makes this for get-togethers and she passed the recipe on to me. You can also use Broccoli instead of the Spinach, which she does often, but I have never tried...it is great the way it is! She also eats this hot or cold, but I only like it hot :) Enjoy!
