This easy yeast roll recipe was given to me by my Great, Great Grandmother. I used it a couple of years ago in our state fair and received first place.

2 tablespoons shortening
3 tablespoons white sugar
1 cup hot water
1 (.25 ounce) package active dry yeast
1 egg, beaten
1 teaspoon salt
2 ¼ cups all-purpose flour

Steps:

  • In a large bowl, mix the shortening, sugar, and hot water. Allow to cool until lukewarm, and mix in the yeast until dissolved. Mix in the egg, salt, and flour. Allow the dough to rise until doubled in size.
  • Grease 8 muffin cups. Divide the dough into the prepared muffin cups, and allow to rise again until doubled in size.
  • Preheat oven to 425 degrees F (220 degrees C).
  • Bake for 10 minutes in the preheated oven, or until a knife inserted in the center of a muffin comes out clean.

1 envelope Fleischmann's® RapidRise Yeast
2 tablespoons sugar
½ teaspoon salt
½ cup milk
¼ cup water
2 tablespoons butter OR margarine

Steps:

  • Combine 3/4 cup flour, undissolved yeast, sugar and salt in a large bowl. Heat milk, water and butter until very warm (120 degrees to 130 degrees F). Add to flour mixture. Beat 2 minutes at medium speed of electric mixer, scraping bowl occasionally. Add 1/4 cup flour; beat 2 minutes at high speed. Stir in enough remaining flour to make soft dough. Knead on lightly floured surface until smooth and elastic, about 8 to 10 minutes. Cover; let rest 10 minutes.
  • Divide dough into 12 equal pieces; shape into balls. Place in greased 8-inch round pan. Cover; let rise in warm, draft-free place until doubled in size, about 30 minutes.
  • Bake in preheated 375 degrees F oven for 20 minutes or until done. Remove from pan; brush with additional melted butter, if desired. Serve warm.

2 cups warm water
6 ½ cups all-purpose flour
½ cup white sugar
1 teaspoon salt
½ cup melted shortening
2 large eggs
4 tablespoons unsalted butter, or as needed

Steps:

  • Dissolve yeast in warm water in a mixing bowl. Let stand until yeast is frothy, about 5 minutes.
  • Add 2 cups flour, sugar, and salt to the yeast mixture. Beat with an electric mixer for 2 minutes. Add shortening and eggs; beat for 2 minutes more. Slowly add remaining flour and mix well. Let dough rise in a warm place, undisturbed, until doubled in size, about 1 hour.
  • Punch down dough and divide into 42 pieces. Shape each piece into a ball and arrange on a rimmed baking sheet. Let rolls rise in a warm spot, undisturbed, until doubled in size, about 1 hour.
  • Preheat the oven to 350 degrees F (175 degrees C).
  • Bake in the preheated oven until golden brown, 25 to 30 minutes. Remove from the oven and gently brush tops with butter.

We have a small close-knit community, so when someone dies, the women get together and prepare dinner for the family. I had taken food to one of these dinners, and helped served. I was lucky enough to get in line before the hot rolls were all gone. They were DELICIOUS! I asked who made them, and found out it was a woman by the name of Alice Ash. I asked her for the recipe, but she didn't have the recipe with her. A few days later, I received the recipe from my mom, who'd gotten it from her neighbor. Alice had given it to the neighbor, to give to my mom, to give to me! That's small town networking!

2 (1/4 ounce) packages dry yeast
2 cups water
4 tablespoons sugar
4 1/2 cups well sifted flour (sift an additional 2 cups or so to knead with when ready to place in pan)
2 teaspoons salt
2 eggs
4 tablespoons soft shortening

Steps:

  • Dissolve yeast in warm water.
  • Stir sugar, salt, and half of the flour into the yeast mixture.
  • Beat in the eggs and shortening.
  • Add the remaining flour and beat until smooth.
  • Scrape down the sides of bowl, and cover with a cloth, and let rise in a warm place, until doubled in bulk (approx. 30 minutes).
  • Stir down the dough.
  • Add more sifted flour until it can be worked with hands (just add gradually until it feels right).
  • Knead a few times, not a lot; just get it worked in and ready to pinch off into rolls.
  • Pinch the rolls off (medium sized), and place in a greased pan.
  • It may take two pans; one small, and one larger, for all the dough.
  • You can also make loaves of bread out of it.
  • Allow it to rise again, until doubled in bulk.
  • Bake at 375-400 for 15-20 minutes .
  • When done, brush with butter (while hot).
  • Note: You can also use this recipe to make bread loaves (it should make 2 loaves in traditional bread pans), or cinnamon rolls.
  • For the cinnamon rolls, roll the dough out, sprinkle with cinnamon and sugar, and roll up like a jelly roll.
  • Slice off, place in a baking pan, and bake at the same temperature as the rolls, until done.
  • Coat with frosting made with powdered sugar, milk, and a dash of vanilla.

  • In a small bowl, dissolve yeast in warm water. In a large bowl, combine sugar, egg, oil, salt, yeast mixture and 4 cups flour; beat on medium speed until smooth. This old family recipe is the best of the best. Plus you can make the dough up ahead of time, keeping refrigerated until needed. That lets you have delicious old-fashioned yeast rolls or cinnamon rolls on the table in half the time. (I have modified the directions to be more clear about how much flour to use.)

2 1/4 cups milk
1/3 cup shortening, butter flavored
1 1/2 teaspoons salt
1/2 teaspoon baking soda
1/3 cup sugar
4 cups flour
2 1/4 teaspoons yeast (1 packet)
1 pinch sugar
1/2 cup warm water (not hot)
2 cups flour
1 1/2 teaspoons baking powder
3/4 cup butter, melted

Steps:

  • Heat milk and shortening in large bowl in microwave until shortening melts.
  • Meanwhile, dissolve yeast and pinch of sugar into warm water.
  • In a smaller bowl, whisk the salt, soda, sugar and first portion of flour.
  • Stir in half the flour mixture into the milk mixture. Stir in the yeast mixture, then stir in the remaining flour.
  • Let rise 1 1/2 hour in a warm place covered with a damp dish towel.
  • Whisk together baking powder and last portion flour. Stir into the batter.
  • Cover bowl with a plate and let rise in refrigerator 12-24 hours.
  • Shape rolls (see two options below) and let rise in a warm place for 1 1/2 - 2 hours. Bake at 400 degrees for about 15 minutes or until done.
  • PARKERHOUSE METHOD.
  • Roll dough out on floured board to about 3/8" thick. Place on cookie sheet and brush with melted butter. Fold each one almost in half.
  • CLOVERLEAF METHOD.
  • By hand, shape dough into 1" balls, dip in melted butter and place 3 per hole in a greased muffin tin.
  • Put remaining dough back into fridge and use within the next few days. Makes great cinnamon rolls too.

  • 1. Mix water and yeast : 1 tablespoon sugar let stand 5 minutes. Cream shortening, sugar, salt and beaten eggs , add milk mix in 6 cups of flour . Now knead your dough with the last cup of flour if the dough is to sticky add a bit more flour , knead that dough , t makes it lighter and better. Now in large well greased bowl put the dough in oil a bit on the top of the bread as will , not allot but about 1 1/2 tablespoons . Now cover the dough with plastic wrap and let rise until double . Make out into roll or Cinnamon rolls place in a greased baking pan or on a sheet cake pan let raise until double again . Bake at 350 degrees for 20 minutes . This recipe makes 35-40 rolls , so I make both rolls for our family , it works well. 2 9X13s then.

3 tablespoons potato flakes
1 ½ cups milk
½ cup vegetable oil
½ cup white sugar
1 teaspoon white sugar
2 eggs
1 teaspoon salt
1 tablespoon active dry yeast
6 ½ cups all-purpose flour
½ cup boiling water
½ cup warm water (110 degrees F/45 degrees C)

Steps:

  • Pour the boiling water over the instant mashed potatoes and set aside. Scald the milk with the oil and 1/2 cup of the sugar. Add The 1/2 cup very warm water and the teaspoon sugar to the yeast and set aside.
  • Add the potatoes to the milk mixture. Start adding the flour, then eggs, one at a time, beating with a mixer or dough hooks. Add yeast mixture and all but 1 cup of the remaining flour and salt.
  • Use the reserved 1 cup of flour for kneading. Knead the dough for about 5 minutes on a floured board. Place the dough in a large greased bowl, being sure to grease top of dough also. Cover dough with plastic wrap then with a double piece of foil. Refrigerate or let rise once and make into rolls. If made at night knead down dough before going to bed.
  • Once dough has risen once, punch down and shape into about 3 1/2 dozen rolls. Place rolls in a lightly greased baking dish and bake in a preheated 375 degrees F (190 degrees C) oven for about 15 to 20 minutes.

1 1/2 sticks (12 tablespoons) unsalted butter
1/4 cup sugar
3/4 cup whole milk, at room temperature
Three 1/4-ounce packets active dry yeast
5 cups all-purpose flour, plus extra for dusting
2 teaspoons kosher salt
3 large eggs
Olive oil, for greasing
Flaky sea salt, for sprinkling

Steps:

  • Preheat the oven to 400 degrees F.
  • Melt 1 stick of the butter in a small saucepan, then bring to a boil and cook until there are light brown specks in the butter, 3 to 4 minutes. Pour the browned butter into a small bowl and whisk in the sugar until dissolved. Whisk in the milk; the mixture should be lukewarm, around 110 degrees F. Next, whisk in the active dry yeast. Set aside until foamy, 5 minutes.
  • In a large bowl, mix together the flour and salt. Make a well in the center, add the eggs and whisk the eggs together with a fork. Pour the browned butter mixture into the well. Using a fork, gradually incorporate the flour into the liquids. Continue stirring just until a shaggy dough comes together. Transfer to a lightly floured work surface and knead with floured hands until the dough becomes very smooth, about 5 minutes.
  • Lightly grease a large bowl with olive oil. Add the dough, turning it once to coat. Cover with a clean kitchen towel and let rise until doubled in size, about 1 hour.
  • Punch down the dough. Melt the remaining 1/2 stick of butter and use half of that to grease the bottom and sides of a 9-by-13-inch baking dish. Divide the dough into thirds and divide each third into 10 balls. To create smooth tops: roll each ball between your palms, and then stretch the dough across the top of the ball, pinching the excess at the bottom.
  • Place the dough balls, seam-side down, in the prepared baking dish -- 5 to the short side, 6 to long side. Cover and let rise until slightly puffy, 30 minutes. Brush the tops with the remaining butter and sprinkle generously with flaky sea salt.
  • Bake until the tops are golden brown and the rolls sound hollow when lightly tapped, 15 to 17 minutes. Serve warm.

These Yeast Rolls are the perfect fluffy pull-apart dinner rolls for weeknights and holidays. So tender, buttery, and delicious, just like grandma used to make!

2 cups warm water (105 to 115 degrees F)
1/2 cup granulated sugar
1 large egg (lightly beaten)
1/4 cup unsalted butter (melted + extra for brushing at the end)

6 - 6 1/2 cups all-purpose flour

Steps:

  • Dissolve the yeast in the warm water in a very large bowl, then stir in the sugar and let stand for 5 minutes.
  • Stir in the egg, melted butter, and salt. Stir in as much of the flour as you can with a wooden spoon.
  • Transfer the dough to a stand mixer fitted with a dough hook and mix on low speed for 6 to 8 minutes. Alternatively: You can turn the dough out onto a lightly floured surface and knead by hand until the dough is smooth and elastic.
  • Shape the dough into a ball and place back in the lightly greased large bowl, turning one to cover the surface of the dough with grease. Cover with a clean hand towel and let rise in a warm place until the dough doubles in size, about 45 to 60 minutes.
  • Punch the dough down and turn out onto a lightly floured surface, divide the dough in half and cover the dough back up with the cloth and let rest for 10 more minutes. Meanwhile, lightly grease two 9x13-inch pans. For Larger Rolls: Use a 15x10-inch pan and do not divide the dough.
  • Divide each half of the dough into 12 pieces and shape the rolls by gently pulling each dough piece into a ball, tucking the edges under and arranging on the baking sheets. If you are making larger rolls, make 15 equally sized balls of dough.
  • Cover the pans of rolls with hand towels and let rise in a warm place until the rolls have doubled in size, about 30 minutes.
  • Preheat the oven to 350 degrees F and brush the tops of the rolls with melted butter. Bake for 15 to 18 minutes or until the tops are golden brown. Brush the rolls with more butter after removing from the oven. Best served within 24 hours.

4 -5 cups Gold Medal all-purpose flour
1 cup of ice-cold water
1 cup boiling water
1/4 cup of luke-warm water
1 tablespoon salt
2 1/4 teaspoons , Active-Dry Yeast (recommended Fleischmann's, 1 packet)
1/2 cup Crisco shortening (1/2 stick)
1/2 cup of sugar tsp sugar
1/2 teaspoon sugar
melted butter

Steps:

  • In a medium-sized saucepan, put 1/2 C sugar & Crisco All-Vegetable Shortening in the 1 cup of BOILING water. Turn the heat off when all ingredients are dropped in the saucepan. Dissolve 1/2 C sugar & Crisco All-Vegetable Shortening. Once all dissolved, add in salt. Dissolve salt. Once everything is all dissolved add in the one cup of the ICE-COLD WATER. Stir to become a luke-warm mixture. Let mixture sit aside. In a separate cup, put the 1/4 cup of luke-warm water and dissolve the 1/2 TSP of sugar in it. Once all dissolved, but still luke-warm, add in the Active-Dry Yeast and stir. Make sure all yeast is dissolved. Then let the mixture of sugar, water, & yeast sit for 5 minutes. **If the mixture does not rise up and become bubbly, that means you have killed the yeast cells with too hot temperature of water, or you just bought a faulty pack or jar of yeast** If indeed that happens, start over with the sugar, water & yeast mixture. After your mixture has risen up and become bubbly, place out a large bowl and pour the sugar, salt, & Crisco All-Vegetable Shortening mixture into it first to make sure that the mixture is luke-warm and not too hot. Then pour the yeast mixture into the large bowl also. Stir with a wire whisk to combine well. Then add in 2 cups of the Gold Medal All-Purpose flour to the combined mixture. Stir well to combine, the mixture should look like cake batter or a little thicker depending on the day's humidity. Place a warm, wet towel over the large bowl & let the mixture sit for 15 minutes or until it forms bubbles. After the approximated 15 minutes, add in 1 3/4 cup of the Gold Medal All-Purpose Flour to the mixture. Stir and combine very well. Then after the flour is worked in see if the dough is sticky and wet. If it is sticky and wet, add in 1/2 cup of the Gold Medal All-Purpose Flour and combine very well. If it is not sticky and wet, the mixture should form a dough ball (or a roughly-shaped one). Then dump the dough onto a heavily floured board or countertop and knead by hand well for 5 minutes approximately. The dough should be springy & elastic. Once you have reached that point by hand-kneading the dough, place the dough into a well-oiled large bowl (tossing the dough to coat). Cover the bowl and dough with a wet and warm towel, and let sit in a warm place for at least 2 hours (or until doubled in size) Once doubled in size, place the dough on a lightly floured surface and punch down with hand (to remove any extra air pockets in the dough). **If dough does not rise, that means you killed the yeast in the process of combining the yeast mixture with the sugar, salt, and Crisco mixture because it was too hot, or you just bought a faulty pack or jar of yeast** Grab a pie dish that has been well-greased, and place beside the dough. Pinch off dough balls about 2" in diameter. Roll the dough in hand to form a smooth ball. Place in the greased pie dish. Continue the process until you have about 8-11 rolls in the pie dish. **Recommended: Let the yeast rolls sit over night in the chill-chest for extra-fluffy texture, but let them rise a little longer if you leave them overnight the next day** After you have your rolls ready in the pie dish, place them in a warm spot, not covered, to let each roll expand and rise. Once the rolls have risen to your desired size (let the rolls at least sit for 45 minutes or they will become hard and will look like rocks), place them in a 350 degree Fahrenheit oven and let cook for about 15-20 minutes, or until desired color on top of rolls. Glaze with melted butter and serve hot. Enjoy your hot, fluffy, and delicious yeast rolls!

Steps:

  • First add the baking soda and sugar to the hot milk & then add the shortening to the milk mixture & cool.
  • Put the yeast into the warm water to dissolve.
  • Sift the flour, salt and baking powder. When the milk is cool, add the yeast mixture to the milk, then mix with the flour. Cover with a towel; let the dough rise in a warm spot until doubled.
  • Stir the batter well then beat vigorously for about 30 seconds. Form into to rolls about 2 hours before baking.
  • Bake at 375 degrees for 15 to 20 minutes.
  • You can also fill greased muffin-pan cups about two-thirds full.
  • Prep time includes proofing time.

1/2 cup sugar, plus a pinch
1/2 cup warm water (105 to 115 degrees F)
2 packages active dry yeast
2 teaspoons salt
1/3 cup solid vegetable shortening
1 cup cold water
1 egg, well beaten
4 1/2 cups all-purpose flour
2 tablespoons butter, melted

Steps:

  • In a large bowl, add a pinch of sugar to the warm water. Sprinkle the yeast over the top and let stand until foamy, about 5 minutes. Stir to dissolve yeast. Beat in the remaining sugar, salt, shortening, cold water, and egg until well blended. On low speed, beat in 2 cups of flour and beat for 2 minutes. Beat in enough of the remaining flour, 1/2 cup at a time, to make soft dough. Place the dough in a well-greased bowl and turn to coat the dough. Cover with a towel and let rise until doubled in bulk, about 1 1/2 hours.
  • Punch the dough down and refrigerate for 2 hours. The dough will almost double in bulk. Grease 2 (9-inch) cake pans. Turn the dough out onto a floured surface. Pull off pieces of the dough, about a 1/4 cup each and shape into 24 rolls. Place 12 rolls, sides touching in each of the 2 prepared pans. Brush with butter. Let rise in a warm place for 1 hour or until doubled.
  • Preheat oven to 425 degrees F. Bake the rolls until well browned on the top, about 15 minutes. Transfer the pan to wire racks to cool for 5 minutes.

Prep time does not include the time for letting rolls rise.[Update: After finally being successful in making bread over the past year, and because of the reviews, I have reworked this recipe and hoepfully the instructions are more clear. 2 cups hot water (about 110 degrees)
1/2 cup sugar (spenda also works well)
1/4 cup shortening (melted, I've used butter flavor and it is good)
2 (1/4 ounce) packages active dry yeast
1 1/2 teaspoons salt
1 egg, lightly beated
6 cups all-purpose flour

Steps:

  • Mix yeast in water and let stand about 10 minutes.
  • Add sugar, melted shortening and salt and mix well.
  • Add egg to mixture.
  • Stir in 4-5 cups of flour.
  • Place on a flour surface and knead in the remaining cup of flour.
  • Knead about 10 minutes.
  • Put in large greased bowel and let rise until double in size, about 1 hour.
  • Punch dough down and form into dinner rolls and place sides touching in a 9x13 greased pan.
  • Let rise again until double, about 1 hours.
  • Bake at 350 degrees 15-20 minutes or until golden brown.
