SAUTEED GARLIC BROCCOLI - SPICY

Sauteed Garlic Broccoli - Spicy image

Make and share this Sauteed Garlic Broccoli - Spicy recipe from Food.com.

Provided by Rise3834

Categories     Vegetable

Time 20m

Yield 6-8 serving(s)

Number Of Ingredients 5

2 tablespoons olive oil (light is best)
1 teaspoon dried red pepper flakes
4 garlic cloves, minced
1/2 cup chicken broth
2 lbs broccoli

Steps:

  • Cut broccoli into bite sized pieces.
  • Boil in salted water for about 5 to 7 minutes (broccoli should just start to soften).
  • Rinse under COLD water (to stop the cooking).
  • Dry to remove any excess water.
  • In a large skillet, heat the oil until hot.
  • Add the garlic and pepper flakes.
  • Sauté for 1 minute.
  • Add the broccoli and "some" of the broth. (I say "some" as you don't want it soaking in it, you just want it to help steam and add flavor)
  • Cook for 2 to 4 minutes (depending on the way you like your broccoli, tender or crisp) stirring the entire time. Season lightly with table salt.
  • As everyone has their own tastes, increase or decrease the garlic and or pepper flakes as desired.

ITALIAN STYLE BROCCOLI AND GARLIC SIDE DISH

Italian Style Broccoli and Garlic Side Dish image

Easy and healthy Italian side dish recipe that tastes delicious alone or as part of a larger meal. Simple and quick to make!

Provided by Simple Italian Cooking Blog

Categories     Dinner     Main Dish     Side Dish

Time 20m

Number Of Ingredients 5

1-2 cups Fresh Chopped Broccoli
2 tbsp extra virgin olive oil (replace with water if wanted)
2 cloves chopped garlic (If you are concerned about too much of a garlic flavor, slice the garlic thinly instead of finely chopped. )
Romano cheese (For sprinkling on top when serving (optional))
2 tbsp water (if needed for steam even if using olive oil)

Steps:

  • Clean and cut fresh broccoli into medium size heads (shave off the sides to the stalks and chop them small if you want to use everything)
  • Heat 2-3 Tablespoons extra virgin olive oil in a medium frying pan over low heat
  • Crush the garlic and chop fine or in thin slices and add to the olive oil
  • Simmer the garlic for a few minutes until fragrant (about 2-3 minutes)
  • Add in the broccoli pieces and cover with lid to trap any steam.
  • Add a little bit of water to promote steam and let cook about 5 to 10 minutes or until the broccoli is bright green and is still firm. You don't want overcooked broccoli!
  • When done remove from heat and set aside until ready to serve.
  • Top with grated Italian Romano cheese for additional flavor if preferred.

SAUTéED BROCCOLI WITH GARLIC AND CHILE

Sautéed Broccoli With Garlic and Chile image

This speedy, two-step recipe yields broccoli - or practically any vegetable - that is perfectly browned and cooked all the way through. After florets and thinly sliced stems are seared, add a little water and cover so the broccoli steams in its own juices until fork-tender. Not only does this bring out the vegetable's inherent sweetness, but it softens whatever flavorings you add without burning them. This recipe embraces the prickly heat of chile and garlic, but you could also use ground spices, thyme or rosemary, ginger or scallions, capers or olives. Swap the broccoli for sliced carrots or sweet potatoes, cauliflower florets, broccoli rabe, or green beans, adjusting cook time and water as necessary.

Provided by Ali Slagle

Categories     vegetables, side dish

Time 10m

Yield 4 servings

Number Of Ingredients 5

3 tablespoons extra-virgin olive oil
1 pound broccoli, cut into 1 1/2- to 2-inch-long florets, stems sliced 1/4-inch thick
Kosher salt and black pepper
3 garlic cloves, sliced
Red-pepper flakes, to taste

Steps:

  • Heat the olive oil in a large (12-inch) skillet over medium-high. Add the broccoli stems, season with salt and pepper, and cook, undisturbed, until starting to brown, 2 to 3 minutes. Stir in the florets, season generously with salt and pepper, and shake into an even layer. Cook, undisturbed, until browned, 2 to 3 minutes.
  • Add the garlic and red-pepper flakes and stir until the garlic is fragrant, less than 1 minute. Reduce heat to medium, add 3 tablespoons water, cover, and cook until the broccoli is bright green and fork-tender, 2 to 3 minutes, reducing heat if needed to prevent burning. Season to taste with salt, pepper and red-pepper flakes.

GARLIC SAUTéED BROCCOLI WITH CRANBERRIES

Garlic Sautéed Broccoli with Cranberries image

Healthy garlic-sauteed broccoli with cranberries and pinenuts turns a regular side dish into something special. It takes just 10 minutes to make and is perfect on its own or with any main course such as fish, chicken, beef, lamb, or pork.

Provided by Veena Azmanov

Categories     Side Dish

Time 12m

Number Of Ingredients 8

1 lb Broccoli (cut into small florets)
1 tbsp Olive oil
2 large Garlic cloves (sliced)
½ tsp Kosher salt
½ tsp Pepper
1 tbsp Lemon juice
¼ cup Dried cranberries
¼ cup Pinenuts

Steps:

  • In a large skillet, over medium heat, add olive oil and garlic. Cook these for a minute, then add the broccoli florets. Pro tip - Make sure the florets are in a single layer so they cook evenly.
  • Season with salt and black pepper. Add 2 tablespoons of water, cover the skillet and cook on low for 3 to 4 minutes. Pro tip - Covering the pan will keep the stem inside which helps soften the stalk making them tender.
  • Check to ensure the stalks (stems) are tender. If not, cook uncovered for another 2 minutes. Add the cranberries and pine nuts (or other nuts).Pro tip - We do not cook broccoli covered for more than 4 minutes because it may lose its beautiful green color.
  • Drizzle with lemon juice. Taste and adjust seasoning adding a pinch of salt and black pepper if necessary.
