9 Rockit™ apples, sliced thin
1/4 cup peanut butter, slightly melted
1/4 cup chocolate sauce, slightly melted
1/4 cup caramel sauce, slightly melted
2 tablespoons mini chocolate chips
2 tablespoons chopped peanuts
2 tablespoons slightly melted white chocolate chips
2 tablespoons mini M&M's chocolate candies
2 tablespoons chopped pecans
2 tablespoons chocolate toffee bits

Steps:

  • On a platter or sheet pan, arrange the apple slices in a long pile.
  • Drizzle the melted peanut butter on a third of the pile, the melted chocolate sauce on another third of the pile and the melted caramel on the last third of the pile.
  • Sprinkle the peanut butter drizzled apple slices with the chopped peanuts and mini chocolate chips. Drizzle the melted white chocolate chips over the chocolate sauce covered apple slices and then sprinkle with the mini M&M's candies. Sprinkle the caramel drizzled apples with the chopped pecans and toffee bits.

3 tablespoons Halloween sprinkles

Steps:

  • In a microwave, melt caramels with water; stir until smooth., Meanwhile, in a large saucepan, melt marshmallows and butter. Arrange apple slices on a large platter. Drizzle with caramel; top with marshmallow mixture. Sprinkle with peanuts, chocolate chips and sprinkles. Serve immediately.

4 apples (any variety)
1 Tbsp lemon juice
1/4 cup peanut butter
1/4 cup mini chocolate chips

Steps:

  • Core the apples and slice into 1/8th inch thick pieces. Toss in a bowl with lemon juice as cut to prevent browning.
  • Once all apples are sliced, arrange to your liking on a plate.
  • In the microwave, heat the peanut butter in a small bowl. This should take about 30 seconds to a minute. Stir well and drizzle individually over the sliced apples.
  • Sprinkle with mini chocolate chips and other toppings of your choice.

1/2 cup heavy cream
2 teaspoons sugar
1/4 cup chocolate chunks or chopped chocolate
1/4 cup chocolate syrup
Two 2 1/2-ounce bags apple chips
1/4 cup Peanut Butter Sauce, recipe follows
1/3 cup granola
1/3 cup diced strawberries
1/2 teaspoon cinnamon
1 tablespoon chopped fresh mint
1 cup creamy peanut butter
1/4 cup coconut oil, melted slightly until liquid
2 tablespoons confectioners' sugar
1/2 teaspoon sea salt

Steps:

  • In a medium bowl, beat together the heavy cream with the sugar until soft peaks form. In another small bowl, mix together the chocolate chunks with the chocolate syrup.
  • To assemble the nachos, layer 1 bag of apple chips on a serving platter. Top with half of the toppings: the Peanut Butter Sauce, granola, strawberries, whipped cream and chocolate chunk sauce. Sprinkle with half of the cinnamon. Add a second layer of apple chips and top with the remaining toppings. Sprinkle with the chopped mint and serve immediately.
  • Put the peanut butter, coconut oil, confectioners' sugar and sea salt in a blender or food processor and process until smooth.

I took one look at the RSC ingredients and saw a homemade classic...but I didn't want the same old, same old. This dessert is fairly easy to put together and after little more than 30 minutes, you've got delicious warm apples with crispy cinnamon crunch, all topped with cool whipped cream and a bit of crunch to boot! Enjoy!

2 tortillas
1 tablespoon cinnamon
1/2 cup sugar
2 cups vegetable oil
2 baking apples, diced into 1/2 inch pieces (I used braeburn)
4 teaspoons fresh lemon juice
2 tablespoons brown sugar (light or dark)
1 ounce Amaretto
1 cup heavy whipping cream
1/4 cup sugar
1 teaspoon vanilla
1/4 cup pecans, chopped

Steps:

  • Heat oil until it "speaks" when you sprinkle water into it. Cut each tortilla in half, then cut each half into 4 wedges.
  • Mix cinnamon and sugar in a shallow dish with another paper towel lined dish right next to it.
  • Put 2-4 tortilla wedges into the hot oil and cook until light brown on each side, flipping only once (this should take about 1 minute). Remove immediately from oil one by one and completely cover in cinnamon sugar mixture on both sides before placing on towel lined dish to cool and drain.
  • When finished with crispas, toss together diced apples and lemon juice.
  • Put apples, lemon juice and amaretto into a medium-sized skillet and cook over medium heat until apples just start to get tender and barely break down.
  • Add brown sugar and stir well until evenly distributed. Remove pan from heat.
  • Beat heavy whipping cream (works best in a chilled bowl) just until stiff.
  • Gradually add sugar and vanilla and beat until stiff peaks form.
  • On a plate or platter, set out each crispa individually. Top with a teaspoon or more of apple mixture, then a dollop of whipped cream. Sprinkle with chopped pecans.
