CLASSIC HOT WINGS

Canola oil, for frying
24 chicken wing parts (12 wings separated into 2 pieces)
One 12-ounce bottle cayenne hot pepper sauce, such as Frank's
1 stick butter
Several dashes Worcestershire sauce
Several dashes hot sauce, such as Tabasco
Blue cheese dip, for serving
Celery sticks, for serving

Steps:

  • Preheat the oven to 325 degrees F. Heat 3 inches of canola oil in a heavy pot to 375 degrees F.
  • Add half the chicken wing parts to the oil and fry them until they're golden brown and fully cooked, 5 to 7 minutes. Remove and drain on paper towels. Repeat with the other half of the wing parts. In a saucepan, heat the cayenne sauce and butter over medium-low heat. Add the Worcestershire and hot sauce. Let it bubble up, and then turn off the heat. Place the wings in an ovenproof dish and pour the hot sauce over the top. Toss to coat, and then bake in the oven for 15 minutes.
  • Serve with blue cheese dip, celery sticks... and your favorite cold, fizzy beverage.

2 (15 ounce) cans garbanzo beans, rinsed and drained
6 tablespoons Buffalo wing sauce (such as Frank's® RedHot)
5 tablespoons fat-free ranch salad dressing
1 clove garlic, minced
1 teaspoon toasted sesame oil
¼ cup water, or as needed for consistency
6 tablespoons crumbled blue cheese
1 (7.2 ounce) package Original Snack Factory® Pretzel Crisps®
Assorted, fresh vegetable sticks cut up for dipping

Steps:

  • Combine beans, hot sauce, ranch dressing, garlic, and oil in a food processor. Pulse, adding water as necessary to improve consistency until desired consistency is reached, 8 to 10 pulses.
  • Top with crumbled blue cheese and a drizzle of more hot sauce. Serve with Snack Factory® Pretzel Crisps® and assorted vegetables for dipping.

Who doesn't love hot wings? They're the perfect help-yourself starter. These are roasted to give them that distinctive crunch and glazed with soy and Sriracha

12 jumbo chicken wings
280ml buttermilk
75g cornflour
1 tbsp smoked paprika
1 tsp dried basil
1 tsp dried oregano
1 tsp dried sage
2 tsp chilli powder
2 tsp garlic powder
2 tsp onion salt
½ tsp ground white pepper
100g honey
1 tbsp soy sauce
3 tbsp ketchup
100ml sriracha
blue cheese dip , to serve (optional), see goes well with

Steps:

  • Put the chicken wings, buttermilk and 1/2 tsp salt in a bowl and toss together to coat. Cover and leave in the fridge overnight.
  • Heat oven to 200C/180C fan/ gas 6. Put all the ingredients for the spice mix in another large mixing bowl with a pinch of salt and mix well. Remove the wings from the fridge and, one at a time, roll them in the spice mix. Once fully coated, tip onto a baking tray lined with baking parchment, and roast for 35 mins. Meanwhile, mix the ingredients for the glaze together.
  • Once the wings have browned, remove them from the oven and generously brush with the glaze. Reduce oven to 180C/160C fan/ gas 4, put the wings back in and cook for a further 15 mins or until the glaze has gone sticky and is starting to caramelise. Remove the wings from the oven and rest for a minute or so. Serve with a blue cheese dip, if you like.

  • If you do not have roasted garlic: Put garlic cloves with the skin still on in a nonstick skillet and heat over medium low heat. Roasting the garlic will take approximately 40 minutes. Rotate the cloves every 10-15 minutes so that they are roasted on all sides. Set aside to cool. (You can also use raw garlic, reduce to 2 cloves).
  • When garlic is cool enough to handle, peel the skins off the cloves. Add the garbanzo beans, garlic, lemon juice, salt, tahini, olive oil, and hot wing sauce to food processor. Put the lid on and process until you reach your desired consistency, approximately 10-15 seconds. If the mixture is too thick, add water 1 Tbsp at a time and process briefly to combine. Taste and adjust seasoning, including hot wing sauce, to your liking.
  • When complete, use a spatula to put the hummus in a bowl. Add the blue cheese crumbles and stir to incorporate. Garnish with additional blue cheese crumbles if desired. Refrigerate for one hour and serve chilled with pita bread, carrots, and celery.
