- Preheat the oven to 375 degrees F.
- Cut each pita bread in quarters and each quarter in half to make 8 triangles. Place them in a single layer on a sheet pan and sprinkle lightly with olive oil, salt and pepper. Bake for about 10 minutes, until crisp, turning once.

- Cut each pita in half and then each half in triangles and place them in a single layer on a sheet pan. Drizzle with olive oil and sprinkle generously with salt.
- Bake for 10 minutes.
HOMEMADE SPICED PITA CHIPS TRIANGLES
Steps:
- Preheat oven to 400°F (204°C). Line a large baking sheet with parchment paper.
- Cut each pita into Doritos size triangles and set on the baking sheet. Spray oil or drizzle the olive oil on top of the triangles.
- Sprinkle three seasonings of choice from the sugggestions and line them in equal fake lines as shown in the picture for each flavor. Make sure that all pitas are covered.
- Bake the pita triangles for 10 minutes or until crispy golden. Transfer into a deep dish or a tray and serve with dips sauces.
SPICED PITA TRIANGLES
Pair wedges with Mediterranean salads or dips such as hummus.

- Preheat oven to 350 degrees, with rack in center. In a small saucepan, heat cumin and sesame oil over medium-low heat until fragrant, 5 to 6 minutes. Season with salt and pepper; add thyme, if desired.
- Brush both sides of each pita round with spice mixture. Cut rounds in half, and cut each half into 6 triangles, each about 1 inch wide.
- Place triangles in a single layer on a baking sheet, and bake until crisp and golden brown, 20 to 30 minutes. Transfer to a wire rack; let cool completely.

- Combine ingredients except bread. Using a sharp knife, split pita into rounds. Spread each with a tablespoon or so of mixture and place on a cookie sheet. Freeze uncovered, then transfer into plastic bag. When ready to use, preheat oven to 375°. Cut frozen circles into 6ths (small size) or 8ths (large loaves) using a sharp carving knife. Spread on cookie sheet, in one layer. Bake for 15-20 minutes until they start to brown a little.

- Preheat a grill pan or skillet over a medium-high flame. Brush both sides of each pita with olive oil. Heat 1 pita at a time in the grill pan or skillet, for about 2 minutes on each side, until it is nicely marked. Cut each pita into 6 wedges. Sprinkle with salt, to taste, and serve.

PITA TRIANGLES WITH SUN-DRIED TOMATO/BASIL DIP
I have not made this but it is another of Stacey's recipes (remember the Bread Sticks) that came to me via my friend Ted - When He says its good-believe me - it's good. Both the dip and the triangles freeze well. If you wish you may add 1/4 cup chopped fresh basil to the dip.

- Mix together the Cream cheese,mayo,tomato, lemon juice& garlic, mix well.
- Cut each pita into 12 bite size triangles, the trangles are double thickness, and place them on a cookie sheet.
- Mix together the butter, lemon pepper, fresh basil and pepper.
- Brush one side of each triangle with the butter mixture.
- Bake in 350F oven for apprx 10 minutes or untilcrisp& browned.
- Cool the pita chips& serve with the dip.

- Heat oven to 325 degrees. Place pita triangles on oven rack set in the middle position. Bake until golden brown, 10 minutes. (Store in an airtight tin for up to a week.)
- Mix cumin, ginger, cinnamon and cloves in a small bowl. Leave 1/4 teaspoon of the spice mix in the bowl and sprinkle the remaining spices over beef; mix to combine.
- Heat a large (12-inch) skillet over medium-high heat. Add meat and all but 1/3 cup of the onion; saute seasoning with salt and pepper and stirring frequently to break meat into a finely ground texture. Stir until meat is fully cooked and all liquid has evaporated from the pan, about 9 minutes. Stir in 1/2 cup of chutney; cook to blend flavors, about 1 minute longer. (Can be refrigerated in a covered container up to 5 days.)
- When ready to serve, rewarm beef and make the salsa: Stir together the mango, cilantro, and remaining chutney, onion and spice mix. Spoon a portion of meat on each pita triangle, top with salsa and serve. Or set out meat, pita chips and salsa and let guests make their own.

- Preheat oven to 400°F.
- In a dry small heavy skillet toast seeds over moderate heat, shaking skillet, until fragrant, about 1 minute, and cool. In an electric coffee/spice grinder finely grind seeds and salt with paprika and in a bowl stir together with oil.
- Split each pita into 2 rounds and brush rough sides with cumin oil. Cut each round into 8 wedges and arrange, rough sides up, on 2 large baking sheets. Bake wedges in upper and lower thirds of oven, switching position of sheets halfway through baking, until golden brown and crisp, about 8 minutes total. Cool pita toasts on racks. Pita toasts keep 5 days in an airtight container at room temperature.
MEDITERRANEAN PITA TRIANGLES
These snacks make a beautiful and tasty warm appetizer, or could be kept whole and served as a light lunch. Pita bread toppped with a tahini yogurt sauce, bell peppers, olives, tomatoes and feta. - Preheat oven to 425 degrees F.
- Place whole pitas on baking sheet.
- Mix yogurt, tahini, lemon juice, water and garlic until smooth.
- Spread half of yogurt mixture on each pita bread.
- Cut yellow pepper lengthwise into strips about 1/8 inch wide, then cut strips in half and place decoratively on pitas.
- Then top each pita with half of the tomatoes, olives and feta.
- Bake for 8 minutes, until pita begins to crisp and feta is beginning to melt.
- Remove from oven, cut pitas into 6-8 triangles and serve warm, or leave whole and serve as individual pizzas.
