CHEESY HOT TUNA SANDWICHES

Steps:
- Preheat oven to 350 degrees.
- Mix all ingredients together in a large bowl.
- Prepare aluminum foil by tearing off 12" to 15" pieces, enough to wrap the sandwiches.
- Fill the buns with the tuna fish mixture and wrap in foil. (I used a #8 ice cream scoop).
- Place the sandwiches on a baking sheet and place in oven for 25 minutes or until the cheese melts.
- Serve the sandwiches wrapped in foil.

- Preheat oven to 350°. In a bowl, combine the first six ingredients; set aside. Spread butter over cut sides of buns. Spread tuna mixture on bun bottoms; replace tops. Wrap in foil. , Bake until the cheese is melted, 15 minutes.

TUNA MELTS MADE RUNZA-STYLE
A twist on tuna melts, this tasty tuna salad is baked in a pocket of yeast dough, runza-style!

- Yeast Dough is easiest to make using a heavy-duty stand mixer.
- Put warm water, yeast, sugar, salt, and butter in a bowl and add a cup of flour.
- Using whip beater attachment, mix thoroughly. Stop occasionally and scrape down the sides of the bowl. (Hint: grab a clean dish towel and wrap it around the bowl to corral fly-away flour.)
- Add 2 cups of flour, one at a time, and beat well.
- Switch to the dough hook and keep adding flour gradually until the dough starts pulling away from the sides of the bowl.
- Stop the mixer and feel the dough. If it's still sticky, add a tablespoon or so of flour at a time and resume kneading with the dough hook.
- Stop adding flour when the dough is soft but you can handle it without it sticking to your fingers.
- Great bread dough should feel satiny and elastic.
- Remove the dough hook and gather the dough into a ball.
- Spray the bowl generously with non-stick cooking spray and return the dough to the bowl. It's not necessary to wash the bowl before you do this.
- Smooth a little cooking oil or olive oil over the surface of the dough to keep it from drying out. Cover the bowl with a clean dish towel and put it in a warm place to rise until it is double in size. This can take about an hour.
- When the dough has doubled in size, divide it into 12 pieces and roll each piece into a thin oval about 6" by 8".
- Put a scoop of tuna filling on each piece of dough.
- Bring sides together and pinch shut. Pinch the ends shut. This will form a roughly rectangular pocket.
- Put them seam-side down on a greased baking pan and let them rise a second time until double. This will take about 30 minutes.
- Bake in a 350-degree oven for about 20 minutes or until crust is golden brown.
- Brush with melted butter and serve hot.
- Tuna Salad Instructions
- Drain the tuns well, pressing out as much water as you can.
- Mash the hard-cooked eggs in a bowl.
- Add tuna, onion, pickle relish, olives, and grated cheese to the eggs.
- Stir in 1/3 cup of mayonnaise and blend all ingredients thoroughly.
- Set aside to put in dough pockets.
HOT TUNA AND CHEDDAR SANDWICHES

- Wearing gloves, carefully remove seeds and chop the jalapeno pepper.
- In a medium bowl, mix the cheese, tuna, jalapeno, lemon juice, mustard, salt, and cream cheese.

THE BEST TUNA SANDWICH
Years ago, there was a deli in the town I worked and everyday faithfully, I would stop there for the Tuna sandwich (which was the best ever!) I became friends with the older lady that always worked the deli and she gave me the recipe. I will never forget what she told me.."The more colors in your Tuna, the better the flavor" sadly, the deli went out of business, but I never forgot her recipe. This tuna has lots of veggies in it, but if you dice them very small, it's so good! Remember, Tuna is a finicky meal.. too much mayo makes it watery and too little makes it dry and fishy.. be sure to use your best judgement and liking. (This recipe makes a lot) you can lessen it

- Drain tuna very well and add to large bowl
- dice all of the above very small as indicated and add to tuna.
- I add about 3 -4 heaping kitchen sized tablespoons of Mayo into the tuna you may have to add a little more or a little less based on your preference
- add a few shakes of black pepper and salt (opt).
- Chill in airtight container in fridge. The longer you let it chill, the better the flavor. This can be served on pretty much any kind of bread. My personal favorite, onion rolls or seedless rye!

- Flake the tuna with a fork, then combine the tuna, mayonnaise, onion, celery, relish, lemon juice and salt and pepper.
- Slather two pieces of bread with mayonnaise like you would use butter, then place into a large skillet, mayonnaise side down.
- Place a cheese slice onto the bread.
- Spread the tuna mixture over the cheese slices. Place a cheese slice on top.
- Use the mayo to "butter " the remaining two slices, then place on top, mayonnaise side up and out.
- Heat the pan to medium heat and cook until the bread is lightly browned on the bottom.
- Flip the sandwiches carefully to the other side, then cook until the other side has browned.
- Remove, slice in half and serve.

- 1. Mix up your tuna filling earlier in the day. This gives it time to season.
