Healthy Spinach Soup With Tofu image

Combining fresh spinach with tofu makes a warming soup that is loaded with healthy ingredients. You can make it vegetarian by using vegetable broth.

2 Chinese dried mushrooms
3 large fresh button mushrooms
1 tablespoon oil
1 teaspoon garlic (finely chopped)
1/4 teaspoon chili paste (or to taste)
1 teaspoon Chinese rice wine or dry sherry
5 cups vegetable or chicken broth
1 teaspoon light soy sauce
1/2 teaspoon granulated sugar
Black pepper to taste
1 block (4 to 5 ounces) firm tofu (drained and cut into small cubes)
2 ounces fresh spinach leaves
1/2 teaspoon Asian sesame oil

Steps:

  • Gather the ingredients.
  • In a bowl, soak Chinese dried mushrooms in hot water to cover for 20 to 30 minutes, until softened.
  • Squeeze out excess water. Cut off the stems and discard. Cut the caps into thin slices.
  • Wipe the fresh mushrooms with a damp cloth, trim off any woody stems, and thinly slice.
  • Heat the oil in a preheated​ wok over medium-high heat. Add the garlic and chili paste. Stir for a few seconds, until aromatic.
  • Add all of the mushrooms and stir-fry for about 2 minutes; stir in the rice wine or dry sherry.
  • Add chicken broth, soy sauce, sugar, and pepper. Bring to a boil uncovered.
  • Add tofu and spinach leaves. Return to a boil and cook until spinach leaves turn bright green, 2 to 3 minutes.
  • Remove from the heat and stir in the sesame oil. Serve hot.

1 (14 ounce) package extra firm tofu, cut into 1-inch cubes
8 teaspoons soy sauce
2 tablespoons vegetable oil
8 ounces shiitake mushrooms, sliced thin
2 teaspoons Asian chili sauce
3 garlic cloves, minced
1 tablespoon grated fresh ginger
3 1/2 cups low sodium chicken broth or 3 1/2 cups vegetable broth
4 (3 ounce) packages ramen noodles, seasoning packets discarded
3 tablespoons cider vinegar
2 teaspoons sugar
1 (6 ounce) bag Baby Spinach

Steps:

  • While the tofu browns, slice the shiitakes. While the shiitakes brown, prep the garlic and ginger.
  • SAUTÉ TOFU: Pat tofu dry with paper towels and toss with 2 teaspoons of soy sauce. Heat 1 tablespoon of oil in 12-inch nonstick skillet over medium-high heat until just smoking. Lightly brown tofu on several sides, about 5 minutes total. Transfer tofu to clean bowl.
  • SAUTÉ MUSHROOMS AND AROMATICS: Add remaining tablespoon oil to skillet and return to medium-high heat until shimmering. Add mushrooms and cook until browned, about 4 minutes. Stir in chili sauce, garlic, and ginger and cook until fragrant, about 30 seconds.
  • SIMMER RAMEN: Stir in broth. Break bricks of ramen into small hunks and add to skillet. Bring to simmer and cook, tossing ramen constantly with tongs to separate, until ramen is just tender but there is still liquid in pan, about 2 minutes.
  • . THICKEN SAUCE AND FINISH: Stir in remaining 2 tablespoons soy sauce, vinegar, and sugar. Stir in spinach, one handful at a time, until spinach is wilted and sauce is thickened. Stir in tofu and serve.

8 ounces tofu, drained and cut into 1/2-inch-dice
4 ounces shiitake mushrooms, thinly sliced
1 teaspoon ground ginger

Steps:

  • Pour the stock into a large sauce pan and bring to a boil.
  • Add the spinach, tofu, mushrooms, and ginger, return to a boil and cook for 2-3 minutes.
  • Remove the pan from the heat and stir in the sesame oil.

1 tablespoon olive oil
1 white onion, finely chopped
3 cloves garlic, pressed
4 small red potatoes, diced
1 cup peeled, diced carrots
1 pound dry green split peas
4 cups vegetable broth
1 (16 ounce) package soft tofu
1 (6 ounce) bag fresh spinach, finely chopped
1 tablespoon dried basil
salt and pepper to taste

Steps:

  • Heat the olive oil in a skillet over medium heat, and saute the onion and garlic until tender.
  • In a large pot, mix the onion mixture, potatoes, carrots, and split peas. Pour in the vegetable broth. Bring to a boil, reduce heat to low, and simmer 1 hour.
  • In a blender or food processor, blend the tofu and spinach until creamy, and mix into the pot. Season with basil, salt, and pepper. Continue cooking 1 hour. If the soup becomes too thick, add water. Serve hot and enjoy.

1 bunch fresh spinach, washed,drained and chopped fine (leaves only minus stems and ribs)
50 g tofu, cubed into small pcs
1 teaspoon sesame oil, heated to smoking point and cooled
2 tablespoons oil
salt
3 -4 vegetable bouillon cubes or 3 -4 chicken stock cubes
2 tablespoons soya sauce
black pepper (optional)

Steps:

  • Heat oil in a wok.
  • Add the chopped spinach and saute till soft.
  • Add salt and 2-3 cups of water and the stock cubes.
  • Bring to a boil and then simmer.
  • Add the tofu and the soya sauce Cook for 5 minutes more and remove from heat.
  • Add the sesame oil and season and then serve hot.

MISO SOUP WITH TOFU AND BABY SPINACH

I normally use fresh shiitake for this, as this is a more delicate soup, but if you really wanted a meaty texture you could use rehydrated dried shiitake, as they are far chewier, just be sure to remove the stems.

1 1/2 cups baby spinach leaves, cut into thin strips
1/2 cup thinly sliced fresh shiitake mushroom
3 tablespoons minced scallions
1 tablespoon tamari
1/3 cup mellow white miso
4 ounces extra firm silken tofu, drained and cut into 1/4-inch dice

Steps:

  • Place the water in a large pot and bring to a boil over high heat. Add the spinach, mushrooms, scallions and tamari.
  • Reduce heat to medium and simmer until the vegetables soften , 3 to 6 minutes. Reduce heat to low.
  • Place about 1/4 cup of the hot soup mixture in a small bowl and add the miso, blending well.
  • Stir the mixture back into the soup, add the tofu and simmer for 2 minutes, being careful not to boil.
  • Taste, adjust the seasonings if needed, and serve hot.

2 tablespoons vegetable oil (more or less)
1/2 cup chopped red onion
8 garlic cloves, minced
2 jalapeno peppers, seeded and chopped
6 cups low sodium vegetable broth
1/4 cup soy sauce
2 tablespoons lime juice
1 tablespoon hot mung bean paste or 1 tablespoon hot sauce
1/2 tablespoon szechwan chili sauce or 1/2 tablespoon any hot sauce
1 tablespoon lemon-pepper seasoning
1 teaspoon powdered ginger
5 white mushrooms, sliced
3 ripe plum tomatoes, peeled and chopped coarsely
wakame seaweed (dried seaweed) (optional)
ramen noodles (optional)

Steps:

  • Press the water out of the tofu.
  • Wrap the tofu in plastic wrap, and put the tofu in the freezer overnight.
  • Remove the tofu from the refrigerator and let thaw in hot water.
  • Cut tofu into small 1/2-inch square cubes.
  • In a large soup pot, heat up the oil; add tofu and stir around until tofu is brown on the edges (10 minutes). Add onion, garlic and 1/2 cup of stock. Stir until vegetables are soft - about 10 minutes).
  • Add remaining ingredients and simmer on low for 30 minutes.
  • Add cooked noodles prior to serving.

7 cups water
1 tablespoon instant dashi stock
1/2 cup soy sauce
1 tablespoon sugar
1/2 lb dried soba noodles (buckwheat noodles)
2 carrots, sliced thin
1/2 lb spinach, coarse stems discarded and the leaves washed well, dryed, and cut crosswise into 1 1/2 inch-wide str
8 -10 ounces firm tofu, cut into 1/2 inch cubes (preferably silken)
3 -4 tablespoons miso, to taste (fermented bean paste)
2 scallions, minced

Steps:

  • Make the broth: In a saucepan bring the water to a boil.
  • Stir in the dashi and simmer the mixture, stirring occasionally, for 3 minutes.
  • Stir in the soy sauce and the sugar and simmer the broth for 5 minutes.
  • Strain the broth through a fine sieve into a heatproof bowl and pour it back into the pan.
  • In a kettle of salted boiling water cook the noodles for 3 to 5 minutes, or until they are al dente, being careful not to overcook them, drain them in a colander, and rinse them under cold water.
  • Add the carrots to the broth and simmer them, covered, for 5 minutes.
  • Stir in the spinach and the tofu and simmer the soup for 1 minute.
  • In a small bowl stir together well 1/2 cup of the soup broth and the miso and pour the mixture back into the pan.
  • Divide the noodles among 6 large bowls, ladle the soup over them, and sprinkle each serving with some of the scallions.
  • I sometimes sprinkle toasted nori over the soup.
  • Enjoy!
