6 cups water, divided
2 tea bags
1 cup sugar
1 cup orange juice
1/2 cup lemon juice
1/2 cup white grape juice

Steps:

  • Bring 1 cup water to a boil. Add tea bags; steep for 5 minutes. Discard tea bags. Stir in sugar until dissolved., In a Dutch oven, combine the remaining water, juices and tea; heat through. Serve warm.

This sweet punch is chock full of fall spicy taste. An excellent option to hot spiced cider and a natural addition to Thanksgiving celebrations. Or do as I do and have cranberry sauce on hand after Thanksgiving to make a hot punch to sip while decorating the tree or watching a game with friends. An excellent hot drink for a Thermos® for tailgating as well. If hot isn't your thing, serve over ice cubes with a splash of lemon-lime soda. Given to me by a good friend, I've looked all over and haven't found one quite like it.

2 (16 ounce) cans jellied cranberry sauce
1 cup dark rum, or to taste
¾ cup brown sugar
¾ teaspoon ground cloves
¼ teaspoon salt

½ teaspoon ground allspice
10 cinnamon sticks
5 teaspoons butter, or to taste

Steps:

  • Combine pineapple juice, water, cranberry sauce, rum, brown sugar, cloves, salt, nutmeg, and allspice in a slow cooker, breaking the cranberry sauce apart using a fork.
  • Cook on Low for 3 to 4 hours.
  • Ladle punch into mugs and add 1 cinnamon stick and about 1/2 teaspoon butter to each.

This splendidly summery concoction is proof that punch, often associated with fall and winter holidays, can be made seasonal with the delicate spring sweetness of strawberries, and summery with the tropical tang of limes. Sure, you could settle for a vodka base, but bourbon adds a marvelous backbone of vanilla richness. Or make it without alcohol and serve at a children's party.

9 or so strawberries, plus 3 for garnish
1 cup sugar
5 elderberry tea bags, or 5 heaping teaspoons of loose elderberry tea (if you can't find elderberry, use any herbal berry tea)
9 or so limes
12 ounces bourbon
1 tablespoon Angostura bitters
Large chunk of ice, or ice mold

Steps:

  • Several hours ahead, prepare strawberry syrup and the elderberry tea. For the syrup, cut the green tops off the strawberries and discard. Dice the berries until you have 1 cup. Reserve extras for garnish. In a saucepan, add the berries along with 1 cup water and the sugar. Bring to a simmer, stirring, and continue simmering until the sugar dissolves. Allow syrup to cool.
  • Prepare the tea. Pour 12 ounces of hot water over the tea bags or the loose tea. Allow to steep until cool. Discard bags or strain loose tea.
  • Juice enough limes to produce 9 ounces of juice.
  • In a punch bowl stir together the lime juice, bourbon, bitters, 6 ounces cold water, the strawberry syrup and the tea. (If you have extra tea, juice and syrup, combine without bourbon for a pleasant soft drink for children.) Gently slide the ice, or an ice mold, into the bowl. Garnish with sliced strawberries. Serve in ceramic punch cups or glasses.

HOT RUM PUNCH

Nothing warms a cold body up like a quaff of hot rum punch. This version, spiked with cognac and infused with citrus and nutmeg, is exactly what you want to serve at a party once the temperature drops outside. If you're feeling flamboyant, you can flambé it, to the great amusement of your guests. Just make sure to use a fireproof bowl; silver or another metal is ideal, wood or even tempered glass is not. But even if you don't set it on fire, it's a rich, soothing and powerful libation. Serve it in small cups for the most civilized gathering.

4 to 5 lemons
1 tangerine, tangelo or other thick-skinned, small citrus fruit
3/4 cup Demerara sugar
1 1/4 cups amber or aged rum
1 1/4 cups Jamaican rum (preferably 100-proof)
1 cup cognac
Freshly grated nutmeg, as needed

Steps:

  • Using a vegetable peeler, remove the zest of 2 lemons and the tangerine in strips. Drop into a large heatproof bowl (or use a fireproof bowl if you plan to set the punch on fire) and combine with sugar. Muddle together with a muddler, pestle or the back of a wooden spoon. Let mixture sit for at least 3 hours to infuse (or infuse overnight).
  • Halve the tangerine and squeeze juice into a measuring cup. Halve lemons and squeeze lemon juice into the measuring cup to make 3/4 cup juice in total. (Save any unsqueezed lemon halves for another purpose.)
  • When ready to serve, bring 1 quart water to a boil. Pour rum and cognac into the bowl with the sugar and peels. If you want to flame the punch, do so now; see note below.
  • Add reserved citrus juice and boiling water and stir well. Grate nutmeg over top of punch and ladle into glasses.

Tequila

  • In a large pot, place the guava, pineapple, crabapples, raisins, prunes, sugarcane, apples, cinnamon, sugar and 8 cups water. Bring the mixture to a boil, and then lower the heat and simmer for 1 hour. Serve hot in a mug that has a shot of tequila in it.

4 cups apple cider
1 (12 ounce) can apricot nectar
2 cinnamon sticks
1/2 teaspoon ground nutmeg
1 teaspoon whole allspice
4 cloves, whole
1/4 inch piece peeled fresh ginger, thinly sliced
3 slices orange peel
3 slices lemon peel
2 -6 tablespoons brown sugar
1 cup rum
4 tablespoons butter

Steps:

  • In large pan combine cranberry juice, cider, nectar, spices, orange and lemon peel.
  • Bring to boil, reduce heat and simmer, uncovered 20-30 minutes.
  • Remove from heat, strain through a fine-mesh strainer lined with cheesecloth.
  • Taste punch and sweeten accordingly. Apple Cider and Cranberry Juice vary greatly in sweetness - you may need no sugar, or you may need a little more than listed.
  • Add rum and butter, stirring until butter melts. Or, if having a non-alcoholic alternative is desirable, hold off on adding the rum to the entire punch and add 1 to 2 tbsp of rum to each mug, then fill to the rim with hot punch.
