EASY MEXICAN BLACK BEAN SALAD
Black Bean Salad is one of the best Mexican Appetizers. You can make it ahead of the time, perfect for a summer cookout!

Steps:
- Rinse and drain canned black beans.
- In a large bowl, mix together all ingredients except for chopped avocado.
- Mix well. Cover with plastic wrap and chill for 2 hours or overnight.
- Add avocados before serving. Mix gently.

There are a ton of mexi-appies here on zaar, but none that I saw like this one. I make this so much I don't use a recipe anymore. I serve this with tortilla chips, diced onion and diced tomatoes on the side.

Steps:
- Brown hamburger and add taco seasoning mix.
- Add refried beans and taco sauce.
- Put in casserole and bake at 400 for 20 minutes.
- Sprinkle with cheese and black olives.
- Bake until melted.
- Serve.
