1 cup pitted dates
1 1/4 cups water
1 tsp baking soda
60 g butter, chopped
1 packed cup brown sugar
2 eggs
1 1/2 cups self-raising flour
1 tsp vanilla extract
1 tsp ground ginger
2 pears, cored and cut into thin slices

Steps:

  • Preheat oven to 180˚C. Grease the sides of a 25cm cake tin and line the base with baking paper. Place dates, water and baking soda in a pot large enough to hold the entire mixture and boil for 5 minutes. Remove from the heat and mash with a potato masher to break up the dates. Stir in chopped butter and mix until butter is melted. Mix in sugar and eggs then fold in flour, vanilla and ginger. Arrange pear slices in a concentric circle around the base of the tin, placing a few slices in the centre. Pour batter over the top and smooth evenly to fully cover the pears. Bake for 35-40 minutes until golden and a skewer inserted in the centre comes out clean. Stand for at least 10 minutes before turning upside down onto a serving platter and removing the baking paper. Serve with warm Wicked Toffee Sauce. This dessert keeps well for a day or two and can be frozen. Thaw and serve warm - heat it in the oven for 10 minutes or microwave it for 2-3 minutes. Wicked Toffee Sauce Place ½ cup water in a saucepan. Add 2 cups caster sugar and place over a medium heat until the sugar dissolves and comes to the boil, swirling the pot now and then. Boil without stirring until mixture turns a golden caramel colour - approximately 8-10 minutes. (Do not be tempted to stir the mixture as this could cause it to crystallise. To prevent it from crystallising, you can run a wet brush around the sides of the pot, allowing the excess water to run into the sugar mixture.) Remove from heat, add 2 cups cream and 2 tsp vanilla extract and stir until smooth. Leftover sauce can be stored in the fridge and reheated. Makes 3 cups.

5 tbsp demerara sugar, for coating the moulds
200g/7oz pitted dates
½ tsp vanilla extract
50g/2oz butter, softened, plus extra for greasing the moulds
175g/6oz dark muscovado sugar
1½ tsp golden syrup
1½ tsp black treacle
200g/7oz self-raising flour
2 free-range eggs
1½ tsp bicarbonate of soda
500ml/18fl oz double cream
175g/6oz demerara sugar
175g/6oz butter
1 tbsp golden syrup
1 tbsp black treacle
vanilla ice cream

Steps:

  • Preheat the oven to 190C/375F/Gas 5.
  • Butter eight small pudding basins (dariole moulds) and sprinkle demerara sugar inside, coating evenly. Shake any excess sugar out of the moulds, and place them on a baking tray.
  • Place the dates with 250ml/9fl oz water into a saucepan and bring up to the boil. Reduce the heat and simmer for 2-3 minutes. Remove the pan from the heat.
  • Stir the vanilla extract into the date mixture.
  • Blend with a stick blender until the date mixture is thick and soupy.
  • In a large bowl, beat the butter and muscovado sugar together until smooth.
  • Stir in the syrup and treacle, then the flour, mixing well.
  • Break the eggs one at a time into the bowl, stirring well after each one.
  • Add the bicarbonate of soda to the date mixture, then pour into the flour mixture and beat well to blend.
  • Pour the mixture into the prepared pudding basins, filling them two-thirds full.
  • Put the puddings into the oven immediately, and bake for 20 minutes until well-risen and springy to the touch.
  • For the sauce, gently heat the cream in a saucepan. Add the sugar and butter and whisk until melted. Whisk in the syrup and treacle.
  • To serve, turn the pudding out onto a plate, spoon the sauce over the top and around, then finish with a dollop of ice cream.

1/2 teaspoon baking powder

3/4 stick (6 tablespoons) unsalted butter, softened
1 cup granulated sugar
3 large eggs
For sauce
1 3/4 sticks (3/4 cup plus 2 tablespoons) unsalted butter
1 1/2 cups packed light brown sugar
1 cup heavy cream
1/2 teaspoon vanilla
Accompaniment: vanilla ice cream

Steps:

  • Make pudding:
  • Preheat oven to 375°F. and butter and flour an 8-inch square baking pan (2 inches deep), knocking out excess flour.
  • Coarsely chop dates and in a 1 1/2- to 2-quart saucepan simmer dates in water, uncovered, 5 minutes. Remove pan from heat and stir in baking soda. (Mixture will foam.) Let mixture stand 20 minutes.
  • While mixture is standing, into a bowl sift together flour, baking powder, ginger, and salt. In a large bowl with an electric mixer beat together butter and sugar until light and fluffy. Beat in eggs 1 at a time, beating well after each addition. Add flour mixture in 3 batches, beating after each addition until just combined. Add date mixture and with a wooden spoon stir batter until just combined well.
  • Pour batter into baking pan and set pan in a larger baking pan. Add enough hot water to larger pan to reach halfway up sides of smaller pan and bake in middle of oven until a tester comes out clean, 35 to 40 minutes. Remove smaller pan from water bath and cool pudding to warm on a rack.
  • Make sauce while pudding is cooling:
  • In a 1 1/2- to 2-quart heavy saucepan melt butter over moderate heat and add brown sugar. Bring mixture to a boil, stirring occasionally, and stir in cream and vanilla. Simmer sauce, stirring occasionally, until thickened slightly, about 5 minutes. Cool sauce to warm.
  • Cut warm pudding into squares. Serve pudding with ice cream and warm sauce.

1 cup whole Medjool dates
3/4 cups boiling water
1 teaspoon vanilla bean paste
3/4 cups self-raising flour, plus extra for greasing, divided

10 tablespoons demerara sugar
2 tablespoons black treacle
1/2 cup milk
3/4 cups muscovado sugar

1 cup double cream
1 tablespoon black treacle

Steps:

  • Remove pits from dates and finely chop them into small pieces. Transfer to a bowl and pour boiling water over. Allow them to stand for about 30 minutes until cool, then mash roughly with a fork and stir in the vanilla bean paste. Butter and flour eight 8x7-centimeter mini pudding moulds and set them aside. Preheat oven to 356°F. Mix flour and bicarbonate of soda in a dry bowl. In a large mixing bowl, beat butter and sugar together for a few minutes until slightly creamy (mixture will be grainy from the sugar). Beat eggs in a separate bowl and add them into the butter-sugar mixture a little at a time, beating well between additions. Next, beat in the black treacle, then gently fold in one-third of the flour and half of the milk with a spatula. Repeat until all the flour and milk is used. Be careful not to over-mix. Gently stir in the dates. You will achieve a soft and thick batter. Divide batter between the moulds, leaving a gap from the rim to allow space for the puddings to rise. Bake for 20 to 25 minutes until risen and a skewer inserted into the centre comes out clean. While the puddings are baking, make toffee sauce. Combine sugar, butter and half the cream in a saucepan over medium heat. Bring to a boil, stirring regularly until the sugar has dissolved. Stir in the black treacle, turn up the heat slightly and allow the mixture to bubble away for 2-3 minutes until it is a rich toffee color, stirring occasionally to make sure it doesn't burn. Remove from heat and stir in the rest of the cream. When the puddings are ready, remove them from the oven and leave aside until cool enough to touch. Trim off excess and run a palette knife along the insides of the tins to loosen them. To serve, drizzle the toffee sauce over the puddings or soak them in the sauce overnight for stickier puddings. Spoil yourself further with an indulgent scoop of ice cream and a tuile wheel! Dig in!

150ml/5fl oz milk
½ vanilla pod, seeds only
80g/3oz sugar
3 egg yolks
50g/1¾oz butter, plus extra for greasing
150g/5½oz soft dark brown sugar
1 tbsp golden syrup
2 tbsp black treacle
½ tsp vanilla extract
2 free-range eggs
175g/6oz self-raising flour, plus extra for dusting
175g/6oz pitted dried dates
1 tbsp bicarbonate of soda
100g/3½oz butter
100g/3½oz soft brown sugar
100g/3½oz golden syrup
½ lemon, juice only
150ml/5fl oz double cream

Steps:

  • For the vanilla ice cream, in a heatproof bowl, mix together the cream, milk and vanilla seeds. Place the bowl over a pan of simmering water (do not allow the base of the bowl to touch the water). Heat the mixture gently but do not boil.
  • Meanwhile, beat the egg yolks and sugar until fluffy. Add the cream mixture to the eggs and stir well.
  • Return to the heated bowl and cook gently over the simmering water, stirring regularly, until the mixture is thick enough to coat the back of a spoon. Set aside to cool.
  • Churn in an ice cream maker for approximately 40 minutes, or following the manufacturer's instructions until set.
  • For the sticky toffee pudding, preheat the oven to 190C/170C Fan/Gas 5. Grease a 20cm/8in square cake tin with butter and dust with flour.
  • Blend the butter and sugar together in a freestanding mixer with a whisk attachment or using a hand-held whisk.
  • Gradually add the golden syrup, treacle, vanilla and eggs and mix thoroughly. Turn the mixer down to a slow speed and add the flour. Once all the ingredients are combined, turn off the mixer.
  • Place the dates and 300ml/10fl oz water in a saucepan and bring to the boil.
  • Allow to cool slightly, then use a blender to purée the date mixture. Add the bicarbonate of soda. Quickly stir this into the batter while it is still hot.
  • Pour into the prepared cake tin and bake for 40-45 minutes, or until the top is firm to the touch. Leave the pudding to cool in the tin.
  • For the butterscotch sauce, in a small saucepan heat the butter, brown sugar and golden syrup until combined and the sugar is dissolved. Bring to a gentle simmer, then remove from the heat and add the lemon juice to taste. Stir in the double cream.
  • Serve slices of pudding with ice cream and sauce poured over.

20 g unsalted butter

Steps:

  • Preheat oven to 180*C/375*F.
  • Combine dates and baking soda in a heatproof bowl.
  • Pour over 250ml of boiling water.
  • Set dates aside till room temperature.
  • Cream together butter and sugar in a large bowl till pale.
  • Add eggs one at a time, beating until smooth.
  • Fold in flour then stir in date mixture, including the water.
  • Pour mixture into greased and floured 8 inch deep cake pan and bake for 30-45 minutes until cooked through; set aside for a couple of minutes before turning out.
  • To make sauce, combine all ingredients over low heat, stirring until butter has melted.
  • Simmer for 5 minutes.
  • Serve hot!

225g whole medjool dates
175ml boiling water
1 tsp vanilla extract
175g self-raising flour, plus extra for greasing
1 tsp bicarbonate of soda
2 eggs
85g butter, softened, plus extra for greasing
140g demerara sugar
2 tbsp black treacle
100ml milk
cream or custard to serve (optional)
175g light muscovado sugar
50g butter, cut into pieces
225ml double cream
1 tbsp black treacle

Steps:

  • Stone and chop 225g medjool dates quite small, put them in a bowl, then pour over 175ml boiling water.
  • Leave for about 30 mins until cool and well-soaked, then mash a bit with a fork. Stir in 1 tsp vanilla extract.
  • Butter and flour seven mini pudding tins (each about 200ml/7fl oz) and sit them on a baking sheet. Heat oven to 180C/fan 160C/gas 4.
  • While the dates are soaking, make the puddings. Mix 175g self-raising flour and 1 tsp bicarbonate of soda together and beat the 2 eggs in a separate bowl.
  • Beat 85g softened butter and 140g demerara sugar together in a large bowl for a few mins until slightly creamy (the mixture will be grainy from the sugar). Add the eggs a little at a time, beating well between additions.
  • Beat in 2 tbsp black treacle then, using a large metal spoon, gently fold in one-third of the flour and bicarbonate of soda mix, then half of the 100ml milk, being careful not to overbeat. Repeat until all the flour mix and all the milk is used.
  • Stir the soaked dates into the pudding batter. The mix may look a little curdled at this point and will be like a soft, thick batter.
  • Spoon it evenly between the tins and bake for 20-25 mins, until risen and firm.
  • Meanwhile, put the 175g light muscovado sugar and 50g butter pieces for the sauce in a medium saucepan with half the 225ml double cream.
  • Bring to the boil over a medium heat, stirring all the time, until the sugar has completely dissolved.
  • Stir in 1 tbsp black treacle, turn up the heat slightly and let the mixture bubble away for 2-3 mins until it is a rich toffee colour, stirring occasionally to make sure it doesn't burn. Take the pan off the heat and beat in the rest of the double cream.
  • Remove the puddings from the oven. Leave in the tins for a few mins, then loosen them well from the sides of the tins with a small palette knife before turning them out.
  • You can serve them now with the sauce drizzled over, but they'll be even stickier if left for a day or two coated in the sauce. To do this, pour about half the sauce into one or two ovenproof serving dishes.
  • Sit the upturned puddings on the sauce, then pour the rest of the sauce over them. Cover with a loose tent of foil so that the sauce doesn't smudge (no need to chill).
  • When ready to serve, heat oven to 180C/fan 160C/gas 4. Warm the puddings through, still covered, for 15-20 mins or until the sauce is bubbling. Serve them on their own, or with cream or custard.

½ cup dark brown sugar
2½ tablespoons golden syrup (or molasses)
Pinch salt
6 ounces pitted dates (chopped)
1 cup water
1 teaspoon baking soda
1¼ cups all-purpose flour
1 teaspoon baking powder
½ teaspoon fine sea salt
4 tablespoons unsalted butter
¾ cup granulated sugar
2 eggs (at room temperature)
1 teaspoon vanilla extract

Steps:

  • Preheat the oven to 350 degrees F and butter an 8½-inch porcelain soufflé dish (or similar-sized baking dish).
  • Make the toffee sauce by bringing the cream, dark brown sugar, golden syrup (or molasses) and salt to a boil in a medium saucepan, stirring often to melt the sugar.
  • Lower heat and simmer, stirring constantly for about 5 minutes, until the mixture is thick and coats the spoon. Pour half the sauce into the prepared soufflé dish and place the dish in the freezer, and reserve the other half for serving.
  • To make the pudding, in a medium saucepan, heat the dates and water. Once the water begins to boil, remove from heat and stir in the baking soda. Set aside, but keep it slightly warm.
  • In a small bowl, whisk together the flour, baking powder, and salt.
  • In the bowl of a standing electric mixer, or by hand, beat the butter and granulated sugar until light and fluffy. Gradually beat in the eggs, then the vanilla. (Don't be alarmed if the mixture looks a bit curdled.)
  • Stir in half of the flour mixture, then the date mixture, then add the remaining flour mixture until just mixed. Don't overbeat the batter.
  • Remove the soufflé dish from the freezer and scrape the batter into the soufflé dish and bake for 50 minutes, or until a toothpick inserted into the center comes out with moist crumbs attached.
  • Remove the pudding from the oven, and let cool slightly before serving. Spoon portions of the cake into serving bowls and douse with additional warm toffee sauce. Whipped cream or vanilla ice cream are good accompaniments, although I enjoy it just as it is.

1 cup water
1 teaspoon baking soda
1 1/3 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon ground allspice

6 tablespoons butter, softened
3/4 cup packed brown sugar
2 eggs
1 teaspoon vanilla extract
6 tablespoons butter, cut into 6 pieces
1/2 cup packed brown sugar
1/2 cup heavy cream
2 teaspoons dark rum or 2 teaspoons whiskey

Steps:

  • For the pudding: Preheat oven to 350 degrees and grease a squate 9 inch baking pan. In a small saucepan mix together dates and water, bring to a boil. Add baking soda and stir until the dates begin to break down and mixture thickens slightly, 1 to 2 minutes, set aside.
  • In a medium mixing bowl stir together flour, baking powder, allspice, and salt, set aside. In a large mixing bowl with an electric mixer on medium speed cream butter and sugar until fluffy. Beat in eggs and vanilla.
  • On low speed gradually add flour mixture alternating with date mixture and beat until combined. Pour batter into prepared pan and bake until toothpick comes out with a few moist crumbs attached, about 40 minutes. Let pudding cool in pan on a cooling rack for 10 minutes. Meanwhile make toffee sauce.
  • For the sauce: In a small saucepan mix together butter, sugar, and cream. Cook over medium heat stirring constantly, until sugar dissolves and mixture boils. Reduce heat to low and cook without stirring for 2 minutes. Remove from heat and stir in alchohol.
  • Cut pudding into squares and serve warm with sauce.

Steps:

  • While still in pan and using skewer or toothpick, poke holes all over cake; pour 1/3 cup (75 mL) warm sauce evenly over top. Bake until cake tester inserted in centre comes out clean, about 15 minutes. Let cool in pan on rack for 10 minutes.
  • Invert cake onto platter. Poke holes all over; pour 1/3 cup (75 mL) more sauce over cake. (Make-ahead: Let cool completely. Wrap in plastic wrap; store in airtight container at room temperature for up 2 days. Cover remaining sauce and refrigerate for up to 2 days. Reheat to serve.).

Steps:

  • For the pudding, add the dates and bicarbonate of soda to the hot water and leave to soak until soft. Meanwhile, beat the butter and sugar together.
  • Add the syrup to the butter & sugar mix. Sift the flour, cinnamon and ginger together, and add to the mix as well, until smooth.
  • Pour mixture into a large tray, and bake for approx. 30 minutes at 150⁰C. A knife inserted into the middle of the mixture should come out clean when cooked.
  • For the sauce, boil the butter, sugar, syrup and vanilla pod & seeds for 10 minutes. Add the cream and boil for another 10 minutes.

4 large eggs
2 teaspoons vanilla extract
Butterscotch sauce, recipe follows
2 1/4 cups light brown sugar
7 tablespoons unsalted butter
1 cup half-and-half
1 teaspoon brandy
1/4 teaspoon vanilla extract
1 cup cold heavy cream, optional

Steps:

  • Preheat oven to 350 degrees. Line a 13 by 9-inch baking pan with parchment or waxed paper.
  • Combine the dates and water in a saucepan and bring to a boil. Turn off the heat and gradually stir in the baking soda (it will foam up), and set aside.
  • In a bowl, combine the flour and baking powder. In the bowl of a mixer, cream the butter until fluffy. Add the sugar to the butter, and cream until fluffy. Without stopping the mixer, add 2 of the eggs and mix until combined. Add the remaining 2 eggs and vanilla and mix until combined. Add about 1/3 of the flour mixture and 1/3 of the dates and mix until combined. Repeat until all the flour mixture and the dates are incorporated into the batter. Pour into the baking pan and bake about 40 minutes, until firm and set in the center. Let cool in the pan. When cool, turn out of the pan onto a baking sheet and peel off the parchment paper. The recipe can be made through this step up to 2 days in advance.
  • Butterscotch Sauce: Combine the brown sugar, butter, half-and-half, and brandy in a saucepan and bring to a boil. Boil 3 minutes, until combined. Remove from the heat and stir in the vanilla.
  • When ready to serve pudding, preheat the oven to 400 degrees. Pour the sauce evenly over the top of the cake. Bake until the sauce is bubbly and cake is heated through, about 5 minutes. Meanwhile, whip the heavy cream into soft peaks with the mixer. Cut the cake into squares and serve with whipped cream.
