My girls would not eat sweet potatoes when they were little till I tried french frying them. Now Paula loves them candied, fried, french fried, baked, etc. Erica still will not eat them except french fried, but she loves them french fried.

4 sweet potatoes
oil (for deep frying)

Steps:

Peel and slice sweet potatoes as you would for french fries.
Fry in deep fat as you would french fries.
Drain on paper towels.
Salt and enjoy.

2 sweet potatoes, cut into French fries
1 tablespoon olive oil
¼ cup Parmesan cheese
2 tablespoons chopped fresh cilantro
sea salt and ground black pepper to taste

Steps:

Preheat oven to 425 degrees F (220 degrees C).
Combine sweet potatoes and olive oil together in a bowl; toss to coat potatoes completely. Spread sweet potatoes in an even layer on a baking sheet.
Bake fries in the preheated oven, turning once, until cooked through and crisp, 20 to 25 minutes.
Transfer fries to a bowl and sprinkle Parmesan cheese and cilantro over the top; toss to coat. Season with sea salt and pepper to taste.

feel free to add whatever seasoning you like. garlic powder, taco seasoning, etc

Steps:

Preheat oven to 425. In a large mixing bowl, drizzle oil over the potatoes. Add seasoning mix and toss to coat. Place fries in one even layer cookie sheet. Bake 10 minutes, turn and bake 10 more minutes. Fries should be soft on the inside and browned on the outside.
