Twelve 4-inch links breakfast sausage
1 tablespoon vegetable oil
1 1/4 cups all-purpose flour, plus more for work surface
1 teaspoon baking powder
1/2 teaspoon sugar
1/4 teaspoon baking soda
Kosher salt
3 tablespoons unsalted butter, frozen in 1 piece
2 tablespoons finely chopped scallion greens
1/2 cup buttermilk
1 teaspoon cracked black pepper
Maple syrup, for serving

Steps:

  • Position an oven rack in the center of the oven, set a baking sheet on it and preheat to 400 degrees F.
  • Toss the sausage links with the oil in a large bowl. Add the sausages to the hot baking sheet, and spread out in 1 layer. Roast, turning halfway through, until lightly browned in spots and cooked through, about 15 minutes. Let cool completely. Cut each sausage in half crosswise.
  • Meanwhile, whisk together the flour, baking powder, sugar, baking soda and 1/4 teaspoon salt in a large bowl. Grate the frozen butter on the large holes of a box grater, and add to the bowl, along with the scallions. Add the buttermilk, and mix together gently with a fork. When a shaggy dough forms, turn it out onto a floured surface.
  • Working quickly, roll the dough out into a 14-by-8-inch rectangle about 1/8 inch thick. Trim each side by about an inch, to yield a 12-by-6-inch rectangle with clean edges. Cut twelve 1-inch-wide strips, then cut those strips in half crosswise. (You should have 24 strips, each about 1 inch by 3 inches.)
  • Wrap a biscuit strip around the belly of each sausage half, and place, seam-side down, at least 1 inch apart on a clean baking sheet. Sprinkle a small pinch of cracked black pepper on top of each one. (Refrigerate up to overnight if not baking right away.) Bake until golden brown, 15 to 18 minutes. Serve with maple syrup on the side.

1 6.4 ounce pkg. frozen brown-and-serve sausage patties, thawed and quartered
1.5 cup shredded white cheddar cheese (6 oz.)
8 eggs
3 cup milk
1.5 teaspoon dry mustard
0.5 teaspoon salt
0.25 teaspoon black pepper

Steps:

  • Preheat oven to 400°F. Quarter biscuits; spread on a large baking sheet. Bake 8 to 10 minutes or until golden. Cool on baking sheet on a wire rack. Butter a 3-qt. rectangular baking dish. Place half of the biscuit pieces in prepared baking dish. Top with sausage and half of the cheese. Top with remaining biscuit pieces.
  • In a large bowl whisk together eggs, milk, dry mustard, salt, and pepper. Pour egg mixture over layers in dish. Using the back of a spoon, gently press down on layers. Top with remaining cheese. Cover and chill overnight.
  • Preheat oven to 350°F. Bake, uncovered, 50 minutes or until golden and egg mixture is set, covering with foil the last 5 to 10 minutes if necessary to prevent overbrowning. Let stand 10 minutes before serving.

2 cups self-rising flour

Steps:

  • Preheat the oven to 400 degrees F. Line two baking sheets with parchment paper.
  • In a medium skillet over medium heat, cook the sausage until well-browned, breaking it up into small pieces. Let cool completely, either on the counter or in the freezer.
  • Mix together the butter and sour cream in a stand mixer. Mix in the flour, 1 cup at a time, mixing until fully combined. Add the sausage and cheddar, and mix until well incorporated.

Steps:

  • Preheat oven to 350 degrees and spray a 9x13 casserole dish with cooking spray.
  • Open up a package of biscuits and cut each into 6 pieces.
  • Spread cut biscuits in the bottom of the greased casserole dish.

3 cups all-purpose flour
1 tablespoon baking powder
1/2 teaspoon baking soda
1 teaspoon salt
1/2 cup butter (salted or unsalted, cut into small cubes)
2 cups cheddar cheese (shredded)
1 cup buttermilk
2 tablespoons butter (melted)
2 tablespoons green onions (sliced, green part only)

Steps:

  • Preheat oven to 425 degrees F. Grease a baking pan.
  • Cook and drain sausage.
  • In a large bowl, whisk together the flour, baking powder, baking soda, and salt.
  • Add the butter and, using a pastry cutter, fork, or your fingers, cut the butter into the dry ingredients until the mixture has pea-sized crumbs. Stir in the sausage and cheese (and green onions if you're adding them.)
  • Add the buttermilk and combine. I find it easiest to use a fork to gently stir the mixture until all of the dry ingredients are moistened. Then, use your hands to knead the mixture a few times in the bowl to bring the dough together.
  • Turn the dough out onto a parchment-lined counter and pat into an 8x10-inch rectangle. Cut the dough into 12 squares.
  • Transfer the biscuits to the baking pan, leaving 1-inches between each biscuit. Brush the tops of each biscuit with the melted butter.
  • Bake until the biscuits are golden brown, about 18 to 20 minutes.

½ cup whole milk or heavy cream
5 eggs

1 pound breakfast sausage
1½ cup country gravy mix packet (will make 2 cups but you only want to use 1½ cups)

Steps:

  • Preheat the oven to 350°F
  • Layer chopped biscuit dough on the bottom of a greased 9 x 13-inch pan.
  • Melt butter in a medium-sized skillet pan and add in the onion. Cook onion until translucent, about 3 minutes.
  • Add in sausage and continue cooking until sausage is cooked through and no pink remains.
  • Drain sausage and sprinkle it over the biscuits
  • Whisk together cream, eggs, garlic powder, and oregano then pour over sausage
  • Sprinkle shredded cheese on top of the egg mixture.
  • Prepare gravy mix according to directions and pour 1 1/2 cups over cheese.
  • Bake in the oven for 30 to 40 minutes or until bubbly and biscuits and eggs are cooked through.
  • Serve warm.
