CHEESE AND JALAPENO STUFFED CHICKEN BREAST
I love bacon jalapeño poppers and by adding the same ingredients to chicken breasts...you can have a whole meal with that jalapeño popper flavor. For less fat use low fat cheeses and center cut bacon.

Steps:
- pre-heat oven to 350 degrees.
- grease baking dish.
- cut a pouch in each chicken breast fillet, careful not to poke through
- spread 1 Tbsp cream cheese in each pouch.
- add 1/4 shredded cheese in each pouch.
- add diced jalapeños to each pouch (more or less than 1/2 a jalapeño per chicken breast depending on your spice level preference)
- sprinkle garlic salt, chili powder and pepper on top of fillets to taste.
- wrap 2 pieces of bacon around each fillet
- secure each bacon piece with 1 toothpick near the opening of the pouch to keep fillet together.
- place in oven
- bake for 30 minutes.
JALAPENO POPPER STUFFED CHICKEN BREASTS
A creamy, spicy filled breast. Flash browning on the outside doesn't cook them through. Preheat your oven to finish cooking.

- Combine the cream cheese, cheddar cheese, bacon, and jalapenos in a small bowl; mix well.
- Cut a pocket horizontally through the thickest side of each chicken breast; fill with 1/4 of the cheese mixture. Secure with toothpicks. Tip: If breasts are thick, before slitting, slightly poud the thickest part of the breast side. It, also, makes for a larger pocket. Don't pound too thin.
- Combine Panko bread crumbs, garlic powder, onion powder, pepper and Parmesan; place on a piece of waxed paper.
- Beat egg and water in a shallow bowl.
- Dip stuffed chicken breast in egg mixture, then into Panko mixture, coating well.
- Heat oil in a large skillet over medium-high heat. Brown chicken breasts on both sides until golden; place on a foil lined shallow baking sheet.
- Bake at 350 degrees in a preheated oven for about 15 minutes or until chicken is cooked through and juices run clear.

FETA STUFFED PESTO CHICKEN
This is a few different recipes thrown together. I had a bunch of feta cheese that needed to be used and we really wanted a chicken dinner. This is what we up with.

Steps:
- Pre-heat oven to 350.
- In a bowl, combine feta, tomato, onion, garlic, jalapeno, oregano, basil salt and pepper. Set aside.
- Using a sharp knife, cut into the fatest part of each breast and create a pocket. Be careful not to cut straight through.
- Put the pesto in a large ziplock bag and place the chicken in with it. Mix it around until the chicken is thoroughly coated.
- Place the coated chicken in a greased glass pan.
- Stuff the feta mix into the pockets of each chicken breast.
- Arrange the chicken so the openings of the pockets are on an angle (facing upward) so once they start baking the mix doesn't ooze out.
- Cook for 45 minutes.
FETA STUFFED JALAPENOS
I saw these beautiful red Jalapenos and couldn't resist them but not sure what to do with them - I found a recipe on the internet by "Claire". Tweaked it a bit. Depending on the size of your peppers you may need a bit more oil & vinegar (keep it in proportion)they must be covered with the oil/vingar while marinating. Simple and Oh so tasty Prep time does not inclued the minimum 4 hours marinating

Steps:
- Place the cleaned peppers in a jar or a bowl and cover them with the Olive oil & vinegar.
- Cover and place in the fridge for at least 4 hours or overnight.
- Preheat oven to 350.
- Drain the peppers and place them on a baking sheet single layer.
- Bake for 10 minutes or only long enough to soften them-do not let them brown.
- Cool and set aside.
- Mix together the feta & cream cheese.
- Fill each pepper with the cheese mixture.
- Serve as an appetizer or as a side dish with
- any meal.

- Preheat air fryer to 375°. In a small bowl, mix cream cheese, cheddar cheese and jalapeno. Cut a pocket horizontally in the thickest part of each chicken breast. Fill with cheese mixture.
