STUFFED DATES
These Stuffed Dates are an easy and healthy kid-friendly snack or party appetizer and perfect when you're craving something sweet. The filling and toppings are easily customizable using Medjool dates, nut butter, vegan cream cheese and are naturally gluten-free, refined sugar-free, vegan and paleo-friendly.

Steps:
- Use a knife to make a lengthwise slit into each of the dates and remove the pits.
- Use a spoon to fill each date evenly with the various nut butters.Top each with different toppings listed above.
- Sprinkle a little bit of Maldon or coarse sea salt on each.Add a tiny drizzle of honey on a few.Add a tiny drizzle of melted chocolate to one or two.
- Enjoy immediately or store in an airtight container in the fridge for up to 3 days.

- Make the filling: Line a baking sheet with parchment paper. Beat the cream cheese, granulated sugar, sour cream and vanilla in a large bowl with an electric mixer on medium speed until smooth. Spoon 1 tablespoon of the filling at a time onto the parchment so that you have 12 dollops. Freeze until solid, about 2 hours.
- Make the cookies: Sift together the flour, cocoa powder, baking powder, salt and baking soda in a medium bowl. Whisk together the granulated sugar, butter, buttermilk, food coloring, vanilla and eggs in another bowl. Fold the flour mixture into the sugar mixture with a rubber spatula until smooth. Cover the bowl with plastic wrap and refrigerate until chilled, about 30 minutes (it will still be soft).
- Preheat the oven to 350 degrees F. Line 2 baking sheets with parchment.
- Coat your hands generously with confectioners' sugar and scoop a heaping tablespoon of the cookie dough into your hand. Put one of the frozen cream cheese dollops in the middle of the dough and place another tablespoon of the dough on top of the cream cheese. Shape the dough around it to completely enclose the cream cheese, and then roll to coat in the confectioners' sugar. Repeat with the remaining dough and cream cheese, coating your hands in confectioners' sugar as needed.
- Place the cookies on the prepared baking sheets about 2 inches apart. Bake until the cookies are firm around the edges and can be easily lifted with a spatula, 10 to 12 minutes. Let the cookies cool on the trays for 10 minutes, and then transfer to a cooling rack and cool completely.

- 1. Cookies: Stuff dates with nut halves, set aside. Cream shortening and sugar until light and beat in egg. Sift flour, baking powder, soda and salt and add alternately with sour cream to creamed mixture. Stir in dates and drop onto greased cookie sheet (only one date per cookie). Bake at 400^ for 8-10 minutes. Cool and top with Golden Frosting.
- 2. Golden Frosting: Lightly brown butter or margarine in a small saucepan. Remove from heat and gradually beat in powdered sugar, corn syrup and vanilla. Slowly add milk or water until frosting is of spreading consistency.

GRANDMA'S DATE FILLED COOKIES
These cookies have two layers of delicious and light sugar cookies sandwiched with date filling. I even loved these as a kid, when dates weren't COOL!

Steps:
- Mix in a sauce pan the dates, sugar and TBSP of flour, water, and lemon juice. Cook this for about 5 minutes on a medium heat, until all are blended well.
- Mix together the shortening, sugar, and eggs.
- Stir in the 2 Tbsps. thick cream and l teaspoons vanilla.
- Sift together the 2 1/2 cups of flour, baking soda and salt. Add to shortening mix to form dough.
- Chill dough for at least 1 to 2 hours.
- Roll out dough in thin layers in small batches and cut with round cookie cutter.
- Put mixture (about a tbsp.) in the center between 2 thin cookies pressed together.
- Bake at 350 degrees on lightly greased sheet pan for 8-10 minutes or until bottoms are lightly browned.

- Place the softened cream cheese and honey in a medium sized bowl. Beat with an electric hand mixer for about 30 seconds – 1 minute, until smooth and creamy. Place in the refrigerator for about 10 minutes, until chilled.
- Pit the dates. Carefully slice the dates lengthwise with a sharp paring knife, and then remove the seed. Set the date aside.
- Fill the dates with the cream cheese using a piping bag and a round nozzle. (In case a piping bag isn’t available, it’s possible to use a Ziploc bag – just snip off the end, fill with the cream cheese mixture, and pipe.) It’s also possible to skip the piping, and fill the dates with a small teaspoon.
- Place the crushed nuts in a small bowl. Place one date, cream cheese top down, in the crushed nuts. Then turn them around and place in a serving bowl or platter. Do the same for all the dates.
