HONEYMOON GERMAN SKILLET DINNER
This is a great all in one skillet dinner. My best friend prepared this for me on the first day home from her honeymoon. It was the first time I ate dinner with them after they married. I eat it with fond memories all the time. It is a regular in our home. Even if you dont like sauerkraut, you will like this meal

Steps:
- Take a dutch oven or large skillet, must have lid. Melt butter in bottom on med heat. Add sauerkraut and spread to cover, add chopped onion on top of this layer, then sprinkle the rice on top of this, crumble raw hamburger over the top of this, salt and pepper. Then according to your taste pour 2 to 3 cans of tomato sauce over this. Important.do not stir. Cover with lid.
- Bring to a boil and turn down to nice slow simmer. Simmer for 25 minutes. Make sure it is simmering slow enough not to burn the bottom.
- Dinner is done, serve with hot rolls and salad.
- This is great food!

Steps:
- Heat oil in 12-inch nonstick skillet over medium-high heat. Cook vegetables in oil about 5 minutes, stirring frequently, until hot.
- Mix broth, vinegar, sugar and cornstarch; stir into vegetables. Heat to boiling. Boil, stirring constantly, until thickened.
- Stir in beans. Cook until beans are hot. Sprinkle with bacon bits.

HOT GERMAN POTATO SALAD
We had a German Theme Week in our craft club one month and this is what I made. I thought is was going to be horrible with the vinigar in it, but much to my supprise it was WONDERFUL! The longer it set the better it got. EVERY WOMAN there asked me for the recipe. Needless to say it was a hit! NOTHING left to bring home.

Steps:
- Cook the potatoes in a large pot of water until tender, about 5 minutes from the time the water starts to boil.
- Drain and cool under cold running water.
- Slice the potatoes 1/4 inch thick and place them in a large bowl.
- Add the eggs, mix well, and set aside.
- Sauté the bacon in a 10-inch skillet over high heat until browned, about 7 minutes.
- Remove the bacon from the skillet with a slotted spoon and set aside.
- Pour off all but 2 tablespoons of the bacon fat and return the skillet to high heat.
- Add the onions and cook, scraping the bottom of the skillet occasionally, until the onions are golden, about 3 to 5 minutes.
- Add the Meat Magic, then whisk in the flour.
- Slowly add the stock, vinegar, and sugar, whisking constantly.
- Cook, whisking frequently, until the mixture is thick, about 5 to 6 minutes.
- Remove from the heat.
- Fold the dressing into the potato and egg mixture, add the green onion tops and cooked bacon, and combine thoroughly.

Can't go wrong with Betty! Crocker, that is. This is just so delicious that I make it quite often. It's wonderful with pork chops, wienerschnitzel (did I spell that right?), or just by itself. Flavorful with just the right amount of tanginess!

- Heat 1 inch salted water (1/2 teaspoon salt to 1 cup water) to boiling.
- Add potatoes and return to boiling point.
- Reduce heat.
- Cover and cook for 20 to 25 minutes or until tender; drain well.
- Cook bacon in medium skillet until crisp.
- Remove bacon from skillet and drain on paper towels.
- Cook and stir onion in bacon drippings until tender.
- Stir in flour, sugar, salt, celery seed, and pepper.
- Cook over low heat, stirring constantly, until mixture is bubbly; remove from heat.
- Stir in water and vinegar.
- Heat to boiling, stirring constantly.
- Boil and stir for 1 minute; remove from heat.
- Crumble bacon into hot mixture.
- Slice in the warm potatoes.
- Cook, stirring gently, to coat potatoes, until hot and bubbly.

- Microwave bacon uncovered in square microwavable dish, 8x8x2 inches, until crisp, 4 1/4 to 4 1/2 minutes; drain. Stir onion into bacon fat. Microwave uncovered until onion is tender, about 2 minutes. Stir in flour, sugar, salt, celery seed, pepper, water and vinegar. Microwave uncovered, stirring every 2 minutes, until mixture is thick and bubbly, about 5 minutes.
- Slice potatoes into hot mixture; stir gently. Microwave uncovered until potatoes are hot, about 1 minute. Crumble bacon into potato mixture; stir.

I have been making this for 30 years. It is always included on my Oktoberfest menu. Goes great with my German fried cabbage and Kielbasa.

- Boil potatoes in salted water until just tender.
- Drain and set aside.
- In large skillet cook bacon that has been.
- cut into small pieces. When about halfway.
- done, add onion and saute until both are light brown.
- While this is cooking, combine sugar, vinegar, broth
- egg, mustard and salt & pepper and mix well.
- Pour this mixture into the skillet once your bacon and onions are done.
- Do not drain bacon grease.
- Simmer a few minutes until just thickened.
- Remove from heat.
- Add drained potatoes to skillet and Mix well.
- Adjust seasoning.
- Serve warm with Kielbasa and Cabbage.

- In a large skillet, cook the bacon over medium heat until it is crisp. Remove bacon to paper towels. Drain the skillet, reserving 1/4 cup drippings. Saute celery and onion in drippings until tender., In a large bowl, combine the sugar, flour, salt, mustard, vinegar and water until smooth. Add to the skillet. Bring to a boil.
