Steps:
- Line an 8" pan or baking sheet with parchment paper.
- Melt dark chocolate: Bring a pot of water to a simmer and place a steel pot on top (use a double boiler if you've got one). Add uniformly chopped pieces of chocolate or chocolate chips (8 oz) to the pot and stir with rubber spatula. You are trying to melt the chocolate and not burn it. You don't want the boiling water to touch the second pot that's sitting on top of it or it will curdle. Keep stirring at a low heat until it's melted.
- Don't let any water get in contact with the chocolate or it will become unworkable.
- Melt slowly over low heat while stirring gently (if the heat is too high it will become lumpy)
- Pour chocolate into lined pan, sheet pan, or baking dish and lightly shake the pan (or use a spatula) to make the chocolate an even thickness. Add nuts and sprinkle sea salt over the top. Place in refrigerator for 1 hour.
- Serve with Mixed Berry Gazpacho and Fresh Whipped Cream or Ice Cream. Happy Chocolate Eating! Beckie

Steps:
- Line a baking sheet with a silicone baking mat or foil. Combine sugar with 2 tablespoons water in a small saucepan. Stir over medium-low heat until sugar dissolves. Bring to a boil and cook, occasionally swirling pan and brushing down sides with a wet pastry brush, until caramel is dark amber, about 5 minutes. Remove from heat. Immediately add butter; whisk until melted. Add almonds; stir until well coated. Transfer to baking sheet, spreading out to separate nuts. Let cool. Break up any large clumps of nuts. Set aside 1/4 of nuts.
- Stir chocolate in a medium bowl set over a saucepan of simmering water until melted. Remove from heat, add nuts from baking sheet, and stir quickly to combine. Spread chocolate-nut mixture on same baking sheet, keeping nuts in a single layer. Top with the reserved nuts; sprinkle with salt. Chill until chocolate is set, about 3 hours.

- Prepare by setting a large piece of parchment paper on counter top. Roughly around 2 feet * 1 feet.
- Heat chocolate over double boiler, Once it's half melted, add the vanilla extract, instant coffee, and a tablespoon of chopped pistachios (optional) to it. Stir. Remove from heat before the chocolate is completely melted. There is also another method to temper the chocolate where you melt 3/4 of the chocolate, once it is completely melted, take it off the heat and add the remaining 1/4 of the chocolate and mix well until all chocolate is melted.Chocolate melting or tempering is a delicate process and though it is very simple, attention to details regarding temperature etc. will go a long way. Here is one of the articles you may refer to for tempering: https://www.epicurious.com/recipes/food/views/how-to-temper-chocolate-356869
- Pour the chocolate on the parchment paper and spread it think using a spatula. This needs to be done sooner, while the chocolate is warm. Make a very thin layer. In case the chocolate gets bit dry as it gets cold, you can return it back to the double boiler and re-heat it.
