- In a large microwave-safe bowl, combine the marshmallows, peanut butter, chocolate chips and butter. Cover and microwave on high for 1-1/2 minutes. Stir until well blended (the mixture will be lumpy). Add cereal and peanuts; stir until well coated. Spread into a greased 13-in. x 9-in. pan. , For the frosting, combine chocolate chips, butter and milk in another microwave-safe bowl. Cover and microwave on high for 1 minute. Add sugar and vanilla. With an electric mixer, beat frosting until smooth. Spread over the cereal mixture. Cover and refrigerate until firm, about 2 hours. Cut into squares.

- Bring 4 cups whole or low-fat milk to a simmer in a saucepan over medium heat. Mix 3/4 cup sugar, 1/2 cup unsweetened cocoa powder and 3 to 4 ounces finely chopped bittersweet chocolate in a bowl, then whisk into the milk. Reduce the heat to low and simmer, stirring, until the chocolate melts and the cocoa is thick, about 2 minutes. Divide among 4 mugs and garnish each with homemade marshmallows (see below) or whipped cream.

- Add large marshmallows and cook until marshmallows are completely melted.
- Remove from heat, add cereal and mix well.

- In a large microwave-safe bowl, melt butter on high heat for about 45 seconds. Add marshmallows; stir to coat. Microwave on high for 45 seconds; stir. Microwave for 45 seconds longer or until smooth. Stir in peanut butter. Immediatly add cereal; stir gently until coated. Press into greased 13x9x2in baking pan.
- In a small microwave safe bowl, heat chocolate chips and shortening on 70% power for 1 minute. Heat in 10 to 20 second intervals until melted; stir until smooth. Spread over cereal mixture. Cool completely.

PECAN CHOCOLATE CHIP RICE CRISPY SQUARES
I put this together this morning because I was craving something relatively healthy but still bordering on decadent. I think this fit the bill perfectly. Don't put these in the fridge to cool, let them cool in the air if it's not too hot in your house. Once these are cold they are hard to cut into pieces. Once you cut them into squares store in the fridge.

- In a medium saucepan over medium heat mix the Xylitol and brown rice syrup together.
- Heat until hot and bubbly. Remove from heat and add the nut butter and Chocolate Hazelnut butter mixing well.

- Combine the cocoa, sugar and pinch of salt in a saucepan. Blend in the boiling water. Bring this mixture to an easy boil while you stir. Simmer and stir for about 2 minutes. CHOCOLATY RICE CRISPY SQUARES
I love rice crispy squares but don't eat marshmallows. So I came up with these squares to satisfy my craving with a little chocolate thrown in for good measure. You can mix semi-sweet white and dark chocolate or just use the white or just the dark. It's totally up to you. You can add chocolate chips, chopped nuts, dried fruit or whatever you think would add to the taste of this recipe. Remember to keep these in the refrigerator. They need to stay cold so they don't melt and fall apart.

- Chop up 7 oz of chocolate of your choice. Put in a double boiler and heat until melted.
- Add the rice crispy cereal and mix well to coat the rice crispies.
