HOMESTYLE HOT COCOA

Homestyle Hot Cocoa image

Growing up in snowy Canadian winters, my mom would always make my brothers and me hot cocoa after a night of tobogganing. When I got older - and had long since abandoned real cocoa for the instant variety - I had a craving one night for a more wholesome treat. Here's my recipe for a creamier, homestyle cup of cocoa. Perfect for those snowy winter nights!

PECAN CHOCOLATE CHIP RICE CRISPY SQUARES

Pecan Chocolate Chip Rice Crispy Squares image

I put this together this morning because I was craving something relatively healthy but still bordering on decadent. I think this fit the bill perfectly. Don't put these in the fridge to cool, let them cool in the air if it's not too hot in your house. Once these are cold they are hard to cut into pieces. Once you cut them into squares store in the fridge.

CHOCOLATY RICE CRISPY SQUARES

Chocolaty Rice Crispy Squares image

I love rice crispy squares but don't eat marshmallows. So I came up with these squares to satisfy my craving with a little chocolate thrown in for good measure. You can mix semi-sweet white and dark chocolate or just use the white or just the dark. It's totally up to you. You can add chocolate chips, chopped nuts, dried fruit or whatever you think would add to the taste of this recipe. Remember to keep these in the refrigerator. They need to stay cold so they don't melt and fall apart.

  • Grease a glass baking dish with coconut oil and set aside. 2. In a small saucepan, boil 1 1/4 cups water. 3. Then, in a high-powered blender, add the gelatin and 1/2 cold water. 4. Allow it to sit and "bloom" for a few minutes -- that's fancy talk for allowing it to gel.

Note: I LOVE coconut milk powder and think these are the most delicious with half coconut milk powder and half cocoa powder. If you would like, you can use only cocoa powder for a really chocolatey hot chocolate square. I add the coconut first and top off with the cocoa...
