CHOCOLATE FUDGE SAUCE

Chocolate Fudge Sauce image

I use Golden Syrup for the Chocolate Fudge Sauce. However, if you can't find it, light corn syrup or light agave nectar will work well, too. Although Dark Chocolate with 70% cocoa content may seem a little too dark for any milk chocolate lover's liking, that is not the case-I find it works perfectly, especially since it is diluted a bit by the cream and the other ingredients. 70% cocoa content is ideal, but if you don't have that on hand, use whatever you have- I wouldn't go below 64% cocoa content, though.

Provided by Sophisticated Gourmet

Categories     Chocolate

Time 10m

Number Of Ingredients 7

3.5 oz / 100g dark chocolate with 70% cocoa content, finely chopped
2 Tablespoons / 15g unsweetened cocoa powder (natural or dutch-processed)
⅓ cup / 116g golden syrup (I use Lyle's) / light corn syrup / light agave nectar
⅓ cup / 75g heavy cream or double cream
⅓ cup / 30g confectioners' (Powdered) sugar
½ teaspoon pure vanilla extract
Pinch fine-grain sea salt

Steps:

  • Place the chopped dark chocolate and cocoa powder in a heatproof bowl over simmering water (do not let the bowl touch the water) and heat until the chocolate has melted.
  • With the pan off the heat, stir in the golden syrup, followed by the heavy cream, confectioner's sugar, vanilla, and pinch of salt.
  • Transfer to a glass jar or heatproof container with a lid, and serve over the ice cream of your choice. Can be stored in the refrigerator for a few days (that is, if you're not sharing!). Re-warm before serving.

HOT CHOCOLATE SOUFFLéS WITH CHOCOLATE CREAM SAUCE

Hot chocolate soufflés with chocolate cream sauce image

Light as a feather, these chocolatey melt-in-the-mouth soufflés are sure to please

Provided by Good Food team

Categories     Dessert, Dinner, Treat

Time 30m

Number Of Ingredients 11

142ml pot single cream
25g caster sugar
100g dark chocolate (70% cocoa), broken into pieces
25g butter
melted butter , for greasing
50g caster sugar , plus 2 tbsp extra
175g dark chocolate (70% cocoa), broken into pieces
2 tbsp double cream
4 egg yolks
5 egg whites
icing sugar , to serve

Steps:

  • Heat oven to 220C/fan 200C/gas 7 and place a baking tray on the top shelf. For the sauce, heat the cream and sugar until boiling. Remove from the heat, stir in the chocolate and butter until melted, then keep warm.
  • Brush 6 x 150ml ramekins with melted butter, sprinkle with the 2 tbsp caster sugar, then tip out any excess. Melt the chocolate and cream in a bowl over a pan of simmering water, cool, then mix in the egg yolks. Whisk the egg whites until they hold their shape, then add the sugar, 1 tbsp at a time, whisking back to the same consistency. Mix a spoonful into the chocolate, then gently fold in the rest.
  • Working quickly, fill the ramekins, wipe the rims clean and run your thumb around the edges. Turn oven down to 200C/fan 180C/gas 6, place the ramekins onto the baking tray, then bake for 8-10 mins until risen with a slight wobble. Don't open the oven door too early as this may make them collapse.
  • Once the soufflés are ready, dust with icing sugar, scoop a small hole from their tops, then pour in some of the hot chocolate sauce. Replace the lids and serve straight away.

HOT CHOCOLATE SAUCE FOR ICE CREAM (OLD RECIPE)

Hot Chocolate Sauce for Ice Cream (Old recipe) image

Just one of those little recipes I found in my mother's notebook. Enjoy!!

Provided by Marcia McCance

Categories     Chocolate Sauces

Number Of Ingredients 6

2 squares of baker's chocolate
1 c boiling water
1/2 c sugar
1 Tbsp corn starch
1 Tbsp cold water
1 tsp vanilla extract

Steps:

  • 1. Melt the chocolate in a sauce pan on very low heat Note: 6 Tablespoons of Cocoa + 2 tablespoons melted butter or coconut oil = 2 1-oz squares of baking chocolate -- just in case you need it
  • 2. Add the boiling water to the sugar and dissolve
  • 3. Add the water/sugar S-L-O-W-L-Y to the melted chocolate and bring to boil stirring constantly
  • 4. Mix the cornstarch with the Tbsp of cold water, then when the chocolate reaches the boiling point add the cornstarch S-L-O-W-L-Y to it then: boil for seven minutes (keeping a watchful eye and stirring as needed)
  • 5. add the vanilla and serve hot on ice cream
  • 6. I was wondering if I used milk (or evaporated milk) instead of water if it might add a nice flavor to the sauce and make it more like chocolate fudge sauce -- this would require a watchful eye because milk can burn -- just thinking

THE BEST HOT FUDGE SAUCE IN THE WORLD

The Best Hot Fudge Sauce in the World image

This rich, deeply fudgy old fashioned fudge sauce attains incredible complexity and depth two ways. First, the addition of a touch of alcohol brings out alcohol-soluble flavors. Starting with a lightly caramelized base affords more depth and that bit of chew and stretch you expect from an excellent fudge sauce. A full recipe yields over a quart, so you can either half the recipe or make the full recipe and share with friends. NOTE: All ounce measurements are by WEIGHT and not VOLUME.

Provided by onlinepastrychef

Categories     Dessert Sauces

Time 35m

Number Of Ingredients 11

4 oz unsalted butter, (1 stick)
8 oz granulated sugar, (1 slightly generous cup)
11.75 oz (by WEIGHT) light or dark corn syrup, (1 cup)
16 oz heavy cream, (1 pint or 2 cups)
3/4 teaspoon kosher salt
5.3 oz whole milk, (about 2/3 cup)
.67 oz cocoa powder, (1/4 cup)
1.3 oz water, (2 Tablespoons plus 1 teaspoon water)
1 oz light rum, (2 Tablespoons)
1 teaspoon vanilla extract or vanilla paste
8 oz excellent quality semi-sweet chocolate, chopped (I used Ghirardelli 60%)

Steps:

  • Place the butter, sugar, corn syrup, heavy cream, salt and milk in a large, heavy-bottomed saucepan. Heat over medium heat until it comes to a boil.
  • Meanwhile, whisk together the cocoa powder, water, rum and vanilla into a thin paste.
  • Place the cocoa paste in a large bowl.
  • Chop the chocolate into small pieces (or use excellent quality chocolate chips or paillettes) and add to the bowl.
  • When the dairy comes to a boil, regulate the heat so it maintains a slow boil but doesn't boil up in the pan.
  • Stir the dairy frequently and boil until it reaches a light caramel color, about 20-30 minutes (less time if you half the recipe). You don't want the color to be as dark as a Sugar Daddy, but it should be significantly darker than sweetened condensed milk. You can see what color it should be above in the post.
  • Once the dairy is a lovely shade of deep tan, pour it into the bowl with the chopped chocolate and cocoa paste. Allow it to sit for a minute or two and then whisk until smooth.
  • Strain it just to make sure it is completely smooth.
  • Store in jars in the fridge.
  • If you used fresh dairy, the hot fudge sauce will keep for a good 2-3 weeks in the refrigerator. If your dairy was close to the expiration date, use the sauce up within 5-7 days.

GRILLED BANANAS WITH RUM ICE CREAM AND MEXICAN HOT CHOCOLATE SAUCE

Grilled Bananas with Rum Ice Cream and Mexican Hot Chocolate Sauce image

Yield Serves 4

Number Of Ingredients 15

4 firm-ripe bananas
1/2 stick (1/4 cup) unsalted butter, melted and cooled
1/4 cup firmly packed brown sugar
For rum ice cream:
2 cups heavy cream
2 cups milk
1 vanilla bean, halve lengthwise
a 2-by 1/2-inch piece lemon zest, removed with a vegetable peeler
2/3 cup firmly packed brown sugar
8 large egg yolks
1/4 cup good-quality dark rum such as Bacardi Black
For Mexican hot chocolate sauce:
1/4 pound (about 1 1/2 tablets) Mexican chocolate* such as Ibarra, chopped
1 cup half-and-half
available at some specialty foods shops

Steps:

  • Prepare grill.
  • Peel bananas and halve lengthwise. In a shallow baking pan large enough to hold bananas in one layer stir together butter and brown sugar and add bananas, tossing gently to coat. Transfer bananas with a metal spatula to an oiled rack set 5 to 6 inches over glowing coals and grill until browned and cooked through, about 2 minutes on each side. (If bananas are difficult to handle you may grill them on 1 side only.)
  • Serve bananas like a banana split with ice cream and chocolate sauce.
  • To make rum ice cream:
  • In a 2 1/2- to 3-quart heavy saucepan combine cream and milk. Scrape seeds from vanilla bean into cream mixture, dropping in bean. Add zest and bring mixture just to boil.
  • In a large metal bowl whisk together brown sugar and yolks until combined well. Add hot cream mixture to yolk mixture in a slow stream, whisking, and return custard to pan. Cook custard over moderately low heat, whisking constantly, until thickened and coats back of a wooden spoon, about 3 minutes. (Do not let custard boil or it will curdle.)
  • Pour custard through a very fine sieve into cleaned metal bowl and cool slightly. Stir in rum and chill, covered, until cold. Freeze custard in an ice-cream maker. Makes about 1 1/2 quarts.
  • To make Mexican hot chocolate sauce:
  • In a heavy saucepan heat chocolate and half-and-half over low heat, stirring frequently, until chocolate is melted. (The sauce will have a very thin consistency, like that of hot chocolate.) Serve sauce warm. Makes about 1 cup.

  • In a 1-quart heavy-bottomed saucepan, combine cream, water, honey, brown sugar, salt and chopped chocolate over low heat. Bring it to a simmer gently while whisking frequently until sugar is dissolved and chocolate is melted. Letting it heat slowly like this will help the chocolate melt smoothly.
  • Once it simmers, increase heat to medium and let boil gently for 3-5 minutes while whisking constantly. For a thinner sauce boil for 3 minutes, for a thicker fudgier sauce boil for 5 minutes. It will be smooth and glossy. Make sure to stir constantly and get into the bottom edges of the pan as the chocolate can burn easily. The mixture will be thick and luscious. You’ll notice that the bitter, roasted notes will become more pronounced after the sauce has cooked, making it taste even more chocolaty.
  • Remove pan from heat and stir in vanilla extract. Let cool about 15 minutes and serve warm or pour it immediately into a sterilized heatproof mason jar, seal tightly and let it cool completely at room temperature. Store it in the refrigerator for up to 3 weeks. Reheat very, very gently before serving over your favourite ice cream.

  • Combine the butter, cream, golden syrup or honey, brown sugar, dark chocolate cocoa powder, and salt (if using unsalted butter) in a small saucepan over medium heat and bring to a simmer. Cook on low, stirring, for 3 to 5 more minutes after everything has melted.
  • Remove from heat and stir in chopped chocolate, stirring until melted. Add in the vanilla and stir it again. It's ready!
  • You can reheat the sauce in the jar using short bursts in the microwave (10 to 15 seconds on HIGH), stirring each time until warm (don’t overheat it or it will burn). Alternatively, place the jar in a steamer basket over an inch of simmering water. Stir until warmed.
  • Pour leftovers into a jar (I like these jars) and refrigerate. Hot fudge sauce keeps chilled in the fridge for a month or two.
