This sweet-tart cherry sauce with a hint of cloves is just delightful. I use it with ham, but it also works beautifully as a dessert sauce.

2 cans (14-1/2 ounces each) pitted tart cherries
1 cup sugar
1/4 cup cornstarch
1/4 to 1/2 teaspoon ground cloves
1 to 2 drops red food coloring, optional

Steps:

  • Drain cherries, reserving juice; set cherries aside. In a large saucepan, combine the sugar, cornstarch and cloves; whisk in reserved cherry juice. Bring to a boil; cook and stir for 2 minutes or until thickened. Remove from the heat; stir in cherries and food coloring if desired.

1/2 cup sugar
1 tablespoon orange rind, finely shredded
3 teaspoons cornflour
1/2 cup orange, hjice
2 tablespoons vodka

Steps:

  • Combine undrained cherries, sugar and rind in small pot.
  • Stir over medium heat till mixture boils.
  • Blend cornflour with juice.
  • Stir into cherry mixture.
  • Stir over medium heat till sauce boils and thickens.
  • Remove from heat, stir in vodka.

1 1-pound bag frozen unsweetened pitted dark sweet cherries, thawed, drained, juices reserved
1/4 cup kirsch (clear cherry brandy)
1/4 cup (about) dry red wine
3 tablespoons sugar
1 tablespoon cornstarch
1/8 teaspoon almond extract
1 1/2 pints vanilla ice cream

Steps:

  • Pour juices from cherries into glass cup. Add kirsch. Add enough red wine to measure 1 cup. Stir 3 tablespoons sugar and 1 tablespoon cornstarch in heavy small saucepan until no lumps remain. Gradually whisk in wine mixture, then cherries. Cook over medium-high heat until sauce boils, thickens and is translucent, stirring frequently, about 5 minutes. Remove from heat. Stir in almond extract. (Sauce can be prepared 1 day ahead. Cover and refrigerate. Rewarm over low heat before serving.)
  • Divide vanilla ice cream among bowls. Spoon warm sauce over and serve immediately.

  • In a saucepan, combine sugar and pepper with 1 cup of water, and bring to a boil.
  • Put cherries in a large bowl, and pour hot syrup over them. Let cool for 1 minute before adding kirsch, creme de cassis and vinegar. Stir to combine, and refrigerate overnight or up to one week.
