ONE-POT GARLICKY SHRIMP & SPINACH



One-Pot Garlicky Shrimp & Spinach image

Shrimp, spinach and garlic brown and cook quickly for a simple one-pot weeknight dinner. A fast pan sauce gets life from zesty lemon juice, warm crushed red pepper and herby parsley. Serve with a slice of whole-wheat baguette to swipe up every last drop of sauce.

3 tablespoons extra-virgin olive oil, divided
6 medium cloves garlic, sliced, divided
1 pound spinach
¼ teaspoon salt plus 1/8 teaspoon, divided
1 ½ teaspoons lemon zest
1 tablespoon lemon juice
1 pound shrimp (21-30 count), peeled and deveined
¼ teaspoon crushed red pepper
1 tablespoon finely chopped fresh parsley

Steps:

  • Heat 1 tablespoon oil in a large pot over medium heat. Add half the garlic and cook until beginning to brown, 1 to 2 minutes.
  • Add spinach and 1/4 teaspoon salt and toss to coat.
  • Cook, stirring once or twice, until mostly wilted, 3 to 5 minutes.
  • Remove from heat and stir in lemon juice. Transfer to a bowl and keep warm.
  • Increase heat to medium-high and add the remaining 2 tablespoons oil to the pot. Add the remaining garlic and cook until beginning to brown, 1 to 2 minutes.
  • Add shrimp, crushed red pepper and the remaining 1/8 teaspoon salt; cook, stirring, until the shrimp are just cooked through, 3 to 5 minutes more.
  • Serve the shrimp over the spinach, sprinkled with lemon zest and parsley.

1/4 cup dry white wine

Steps:

  • In a medium skillet, add 1 tablespoon of olive oil and heat until a slight shimmer occurs on the surface. In a separate bowl combine the shrimp, 1 tablespoon of olive oil and the sweet ginger garlic seasoning, tossing lightly until shrimp are thoroughly coated. Add the shrimp to the hot skillet, quickly sautééing until they are cooked and turn opaque. Pour in wine to quickly bubble and deglaze the skillet, scraping up the delicious brown "bits" on the bottom. Remove shrimp to a small bowl and cover to keep warm. In the same skillet, add in the final 1/2 tablespoon of olive oil and toss in the spinach or kale, quickly stirring until the leaves are just wilted. Throw the shrimp back in for a final "toss", then plate up on a small serving dish.

6 large shrimp
1/8 teaspoon chili powder
1/8 teaspoon salt
1/2 pound spinach (about 1 bunch)
2 scallions
1 teaspoon fresh lime juice
2 tablespoons water
1 teaspoon grated peeled fresh gingerroot
1/2 teaspoon sesame oil
Accompaniment: lime wedges

Steps:

  • Preheat oven to 450°F. Leaving shells intact, pull legs off shrimp and with a sharp knife halve shrimp lengthwise. Arrange shrimp, shell sides down, in one layer in a shallow baking pan. In a small bowl stir together chili powder and salt and sprinkle evenly over shrimp. Shrimp may be prepared up to this point 3 hours ahead and chilled, covered.
  • Discard stems from spinach and diagonally cut scallions into 1/4-inch-thick slices. Drizzle shrimp with lime juice and roast in middle of oven until just cooked through, about 5 minutes.
  • In a large nonstick skillet bring water with gingerroot to a simmer over moderate heat and add spinach. Cook spinach, stirring, until slightly wilted, about 20 seconds. Remove skillet from heat and immediately stir in scallions and oil until combined well. Season spinach with salt and pepper.
  • Mound spinach in center of each of 4 plates and arrange shrimp halves around it. Serve shrimp and spinach with lime wedges.

1 1/4 lbs extra large shrimp (21/25), (peeled and deveined)
1 tsp dried basil
Salt and freshly ground black pepper
2 Tbsp butter, (divided)
1 Tbsp minced garlic ((3 cloves))
3/4 cup low-sodium chicken broth
1/2 cup heavy cream
2 tsp cornstarch mixed with 1 Tbsp chicken broth
3 oz baby spinach, (chopped (2 packed cups))
1/2 cup (1.5 oz) shredded parmesan cheese

Steps:

  • Sprinkle shrimp with basil, season lightly with salt and pepper and toss.
  • Melt 1 Tbsp butter in a 12-inch non-stick skillet over medium-high heat.
  • Add shrimp in a single layer and cook until bottom is pink, then flip and cook opposite side of shrimp until cooked through and pink, about 3 minutes total.
  • Transfer shrimp to a plate then melt remaining 1 Tbsp butter in same skillet over medium heat.
  • Add garlic and saute until just lightly golden brown, about 30 seconds then pour in chicken broth.
  • Add spinach and stir and cook until it starts to wilt, about 1 minute.
  • Stir in cream and cornstarch mixture and cook, stirring constantly, until mixture starts to simmer and thicken slightly, about 2 minutes.
  • Stir in parmesan cheese and cook until cheese has melted, season lightly with salt if needed.
  • Remove from heat and toss in shrimp. Serve over spaghetti or spaghetti squash if desired.

2 teaspoons cornstarch
1/3 cup no-salt-added chicken broth, undiluted

1 tablespoon rice wine vinegar
2 tablespoons reduced sodium ketchup
2 teaspoons sugar
1 teaspoon dark sesame oil
1/4 teaspoon ground red pepper
2 tablespoons chopped walnuts
1 teaspoon peanut oil
1 (10 ounce) package fresh spinach
1 garlic clove, minced
1 large sweet red pepper, cut into 1/2 inch strips

Steps:

  • Peel, devein and butterfly shrimp.
  • Combine shrimp, 1 1/2 tablespoons sherry and gingerroot.
  • Cover and marinate in refrigerator for 30 minutes.

1 teaspoon crushed black peppercorns
3 tablespoons minced fresh ginger
1 tablespoon minced garlic

1/4 cup finely slivered fresh basil
4 cups steamed basmati, jasmine or long-grain rice

Steps:

  • Mix sugar and fish sauce together, then stir in 1/2 cup water. Add the pepper, ginger and garlic. Place in a nonstick skillet and cook over high heat about five minutes, until the mixture starts to become syrupy.
