2 firm ripe fresh mango, peeled and diced
1 fresh jalapeno diced
1 red bell pepper, diced
1 onion, diced fine
1 clove minced garlic
1 teaspoon minced ginger
1 tablespoon chopped cilantro
1 fresh lime, juice and zest
1/2 cups white vinegar
1/2 cup sugar
1/4 teaspoon salt

Steps:

  • Place all the ingredients in a large pot.
  • Bring to a boil over high heat, stirring to dissolve sugar.
  • Reduce to simmer, and simmer 5 minutes.
  • Take off the heat and let cool
  • Once cooled, serve it up and enjoy!

2 cups fresh peaches, pitted and chopped
2 cloves garlic, minced
2 tablespoons chopped fresh ginger root
¼ cup chopped fresh basil

Steps:

  • In a large bowl, mix together the mangoes, peaches or nectarines, garlic, ginger and basil or cilantro.
  • Add the chilies and lime juice to taste; mix well. Allow to chill 2 hours before serving.

2 small mangos (peeled and chopped)
2 serrano peppers (chopped)
1 jalapeno pepper (chopped)
1 habanero pepper (chopped)
1 small sweet onion (chopped)
2 medium red tomatoes (chopped)
4 cloves garlic (chopped)
¼ cup chopped cilantro
Juice from 1 lime
1/2 cup red wine vinegar (or more for a thinner hot sauce)
Salt and pepper to taste

Steps:

  • Add all of the ingredients to a food processor. Pulse the mixture several times until you achieve your desired consistency.
  • Pour the mixture into a pan and bring it to a quick light boil. Reduce the heat and simmer for 20 minutes.
  • If you would like a thinner sauce, add in a bit more vinegar, about a 1/4 cup at a time, to achieve your desired consistency.
  • Cool, then strain, if desired, or leave it as a thicker hot sauce. Store in the refrigerator in airtight containers. The flavors will develop the longer you let it sit.

1 Jalapeno (about 2 tablespoons, seeds removed and minced)
¼ cup cilantro leaves (finely chopped)
Juice from 1 large lime (about 2 tablespoons)
1/4 teaspoon ground cumin (optional)
Salt and pepper to taste

Steps:

  • Chop and add mangoes, red onions, pepper, jalapeno and cilantro to large bowl
  • Stir to combine
  • Juice lime and pour over salsa
  • Season with salt, pepper and ground cumin if using
  • Stir to combine
  • Cover and place in refrigerator at least 15 minutes before serving
  • Serve with tortilla chips and lime wedges

2 mangoes, ripe, peeled and cubed
1/2 cup fresh pineapple, cubed with juice
1/4 red onion, diced
1 -2 minced garlic clove
3 green onions, tops and all, thinly sliced
1/2 red bell pepper, diced (yellow or orange)
1 jalapeno pepper, diced
1 lime, juice of
2 tablespoons fresh cilantro, minced (to taste)
1 dash sea salt
1 tablespoon coriander

Steps:

  • Peel and cut mango into cubes, discard seed.
  • Dice pineapple, saved juice.
  • All other ingredients can be diced in the food processor. Careful not to over "pulse" to too fine a texture.
  • Combine all ingredients and let sit for one hour or more before serving.
  • Serve with tortilla chips.
  • Notes:.
  • Use more or less of your favorite ingredients.
  • Sometimes the jalapenos are not very spicy, feel free to add hot sauce (Tobasco) to spice it up if desired.

2 Tsp Lime Zest
2 Tsp Agave Nectar
1 Tsp Chili Powder
Cilantro (optional)

Steps:

  • Chop the mango, bell pepper, onion, radish and half of the jalapeno.
  • Place all ingredients into a bowl, reserve the other half of the jalapeno and mince it.
  • In a small bowl, whisk to combine the lime juice and zest, minced jalapeno, agave nectar, and chili powder.
  • Pour dressing over prepared salsa and top with chopped cilantro if desired.
  • Serve immediately or store in an airtight container in the fridge for 1 - 3 days.
