1/2 cup Sriracha
1/2 cup unseasoned rice vinegar
1/4 cup mirin (sweet Japanese rice wine)
1/4 cup red currant or strawberry jelly
12 large chicken drumsticks
Kosher salt
1 cup rice flour
1 tablespoon cornstarch
Ingredient info: Sriracha, mirin, and rice flour can be found at many supermarkets and at Asian markets.

Steps:

  • Bring Sriracha, rice vinegar, mirin, and jelly to a boil in a small heavy saucepan over high heat. Reduce heat to medium; simmer, adjusting heat if necessary, until mixture is thick and reduced to 3/4 cup, about 10 minutes. DO AHEAD: Can be made 1 week ahead. Cover; chill. Rewarm before using.
  • Place drumsticks in a large bowl and season generously with salt. Cover and refrigerate for 1 hour. Preheat oven to 450°F. Whisk rice flour and cornstarch in a medium bowl. Place a wire rack on a rimmed baking sheet. Using a paper towel, pat drumsticks dry. Dredge in rice flour mixture, shaking off excess. Arrange on prepared rack.
  • Roast drumsticks, turning frequently, until skin is browned and crisp, 50-60 minutes. DO AHEAD: Can be made 1 day ahead. Let cool, cover, and chill. Rewarm in a 450°F oven for 10-15 minutes before continuing.
  • Combine hot drumsticks and 1/4 cup sauce in a large bowl; toss to coat. Return drumsticks to rack and roast, turning once, until skin is crisp and sauce is beginning to brown, 8-9 minutes. Brush with additional sauce and serve remaining sauce alongside.

8 chicken drumettes
2 eggs, beaten
¼ cup all-purpose flour for coating
3 tablespoons soy sauce
3 tablespoons water
1 cup white sugar
½ cup vinegar

Steps:

  • Dip chicken in egg beat, then flour. Fry in a large skillet until crispy, about 15 minutes. Drain and place in a 9x13 inch baking dish.
  • Preheat oven to 350 degrees F (175 degrees C).
  • To Make Sauce: In a small bowl combine the soy sauce, water, sugar and vinegar. Mix together and pour over chicken.
  • Bake in the preheated oven for 30 minutes, or until cooked through and juices run clear.

1 1/2 cups dry red wine
1 cup dark brown sugar, packed
2 tablespoons dark brown sugar, packed
1/2 cup low sodium soy sauce
2 tablespoons ginger, finely grated fresh
1 garlic clove, minced
8 chicken drumsticks, skin on
coarse salt

Steps:

  • Bring wine, sugar, soy sauce, ginger, and garlic to a boil in a saucepan.
  • Reduce heat, and simmer until mixture has thickened to the consistency of honey, 35 to 40 minutes.
  • Let cool.
  • Using a sharp knife, make three diagonal slashes through the skin and flesh on both sides of each drumstick (this will help the flavors permeate the meat).
  • Preheat grill to medium-low. (If you are using a charcoal grill, coals are ready when you can hold your hand 5 inches above grill for just 7 seconds.)
  • Place drumsticks on grill, and brush with sauce.
  • Close cover, and grill 4 minutes.
  • Flip chicken, and brush with sauce.
  • Continue to cook, flipping and brushing with sauce every 4 to 5 minutes, until cooked through, about 20 minutes total.
  • Season with salt.

1/2 cup ketchup
1/4 cup soy sauce
2 teaspoons bottled minced garlic (or 1 1/2 tsp garlic powder, I use 2 cloves fresh minced)
1 -2 tablespoon bottled hot sauce
12 chicken drumsticks
hot cooked rice

Steps:

  • For sauce~ in a small saucepan, combine preserves, ketchup, soy sauce, garlic and hot pepper sauce.
  • Cook and stir over medium heat until preserves are melted.
  • Arrange drumsticks in a single layer in 13x9 baking pan.
  • Pour sauce over drumsticks, turning to coat.
  • Bake uncovered in a 350º oven for 40 to 45 minutes or until chicken is done, spooning sauce over drumsticks once during baking.
  • Serve drumsticks over rice.
  • If desired, spoon sauce from baking pan over chicken and rice.

1/2 cup balsamic vinegar
1/2 cup honey
1/2 cup light brown sugar, packed
1/4 cup soy sauce
5 fresh rosemary sprigs
5 garlic cloves, halved
10 to 12 chicken drumsticks
2 tablespoons toasted sesame seeds
1/4 cup chopped fresh flat-leaf parsley leaves

Steps:

  • Combine the balsamic vinegar, honey, brown sugar, soy sauce, rosemary sprigs, and garlic cloves in a large, resealable plastic bag. Shake and squeeze the contents of the bag to dissolve the honey and the brown sugar. Add the chicken drumsticks to the bag and seal, squeezing out as much air from the bag as possible. Marinate in the refrigerator for 2 hours.
  • Preheat the oven to 450°F. Line a rimmed baking sheet with aluminum foil.
  • Remove the chicken drumsticks from the bag, reserving the marinade, and arrange them on the prepared baking sheet. Bake until the skin is caramelized and very dark in spots, 30 to 35 minutes.
  • Meanwhile, place the marinade in a small saucepan. Bring the marinade to a boil, then reduce the heat to a simmer and cook over low heat until thick, about 15 minutes.
  • Use a pastry brush to brush some of the cooked marinade on the cooked chicken. Place the chicken on a serving platter. Sprinkle with the sesame seeds and the chopped parsley.

8 chicken drumsticks
4 tablespoons red wine vinegar
2 tablespoons tomato paste
2 tablespoons soy sauce
2 tablespoons honey
1 tablespoon Worcestershire sauce
1 clove garlic
1 pinch cayenne pepper

Steps:

  • Slash chicken legs 2-3 times with a sharp knife.
  • Place in glass baking dish side by side to marinade.
  • Mix remaining ingredients together and pour over chicken.
  • Refrigerate 1 hour.
  • Cook on hot grill about 20 minutes, turning and brushing with the marinade.
  • Check to make sure they are done and be careful not to burn them.

2 tablespoons rosemary, minced or 2 teaspoons dried rosemary
1/3 cup asian chili-garlic sauce
1 tablespoon Dijon mustard
3 tablespoons brown sugar
3 lbs chicken drummettes
2 tablespoons balsamic vinegar

Steps:

  • In large bowl stir preserves, garlic sauce, brown sugar, vinegar, minced rosemary and mustard.
  • Add the drumettes and toss well to coat.
  • Cover and marinate in the fridge stirring occasionally for 1 hour.
  • Grill turning often basting and cooking a total of about 30 minutes.
  • Dont bast at the last 10 minutes of cooking.
