2 green onions, chopped
1 eggs, beaten
1 portobello mushroom, halved and sliced

3 tablespoons soy sauce
1 teaspoon citric acid powder

Steps:

  • Measure broth into a saucepan, and bring to a simmer over medium-low heat. Add tofu and green onions. Slowly drizzle in the beaten egg to make long strands of egg. Add mushrooms and cabbage, and simmer for 5 minutes. Remove from heat, and season with chili sauce, vinegar and soy sauce. Stir in citric acid if using.

3 tablespoons vegetable oil
3/4 cup red bell pepper, cut into julienne strips
1 1/2 cups chopped green onions
2 cups vegetable stock
2 cups water
2 tablespoons soy sauce
2 teaspoons red wine vinegar
1/2 teaspoon crushed red pepper flakes
2 tablespoons cornstarch
3 tablespoons water
1 teaspoon sesame oil
1/2 lb snow peas (fresh or frozen) (optional)
1 lb firm tofu, drained and cut into 1/2 inch cubes
1 (8 ounce) can sliced water chestnuts, drained
salt and pepper

Steps:

  • Heat the oil in a soup kettle and saute the green onions and bell peppers together until tender.
  • Add water, vegetable stock, and soy sauce.
  • Bring to a boil, then reduce to a simmer, cover lightly, and cook for 5 minutes.
  • Blend cornstarch with 3 tablespoons water.
  • In a bowl, blend the vinegar, pepper flakes, cornstarch blend, and sesame oil.
  • Stir into the hot soup until incorporated, and then add the tofu, snow peas, and water chestnuts.
  • Again cover, and cook for about 5 minutes or until thick and bubbly.
  • Turn off the heat.
  • Adjust salt and pepper to taste, serve immediately.

3 cups chicken broth
½ cup water
½ cup sliced bamboo shoots, drained
8 dried shiitake mushrooms, rehydrated
1 clove garlic, crushed

2 teaspoons soy sauce
¼ teaspoon red pepper flakes
2 ounces firm tofu, diced

Steps:

  • Stir vinegar and cornstarch together in a bowl.
  • Combine chicken broth, water, bamboo shoots, shiitake mushrooms, garlic, ginger root, soy sauce, and red pepper flakes in a saucepan over medium-high heat. Bring to a boil. Steps:

  • In a large (5-quart) pot, combine broth, soy sauce, crushed red pepper, and 2 cups water. Bring to a boil over medium heat. Add mushrooms; reduce heat, and simmer until tender, about 10 minutes.
  • In a small bowl, whisk together 3 tablespoons vinegar and cornstarch. Add to pot; simmer, stirring, until soup is thickened, about 1 minute.

1/2 pound lean pork, cut into thin strips or 1 (4-ounce) boneless, skinless chicken breast cut into thin strips

3 tablespoons rice vinegar
1/2 teaspoon chili paste or cracked black pepper

Steps:

  • Soak mushrooms and lily flowers in boiling hot water for 20 minutes. Drain and reserve soaking liquid.
  • In a large pot, combine soaking liquid and chicken stock. Bring to a boil and season with salt. Simmer 5 minutes, add tofu, exotic mushrooms and bok choy. Slowly add egg to soup, stirring gently. Then add pork or chicken. Cover and cook about 5 minutes.

4 dried Chinese fungi (about 1 ounce), such as wood ears or cloud ears
2 tablespoons canola oil
1-inch piece fresh ginger, peeled and grated
1 tablespoon red chile paste, such as sambal oelek
1/2 cup canned bamboo shoots, sliced
1/4 pound barbecued pork, shredded
1/4 cup soy sauce
1/4 cup rice vinegar
1 teaspoon salt
1 teaspoon ground white pepper
Pinch sugar
2 quarts Chinese Chicken Stock, recipe follows
1 square firm tofu, drained and sliced in 1/4-inch strips
3 tablespoons cornstarch mixed with 1/4 cup water
1 large egg, lightly beaten
Chopped green onions and cilantro leaves, for garnish
1 (4-pound) whole chicken
1 bunch green onions, halved
4 garlic cloves, smashed
3-inch piece fresh ginger, whacked open with the flat side of a knife
1 onion, halved
1 teaspoon whole white peppercorns
About 3 quarts cold water

Steps:

  • Put the wood ears in a small bowl and cover with boiling water. Let stand for 30 minutes to reconstitute. Drain and rinse the wood ears; discard any hard clusters in the centers.
  • Heat the oil in a wok or large pot over medium-high flame. Add the ginger, chili paste, wood ears, bamboo shoots, and pork; cook and stir for 1 minute to infuse the flavor. Combine the soy sauce, vinegar, salt, pepper, and sugar in a small bowl, pour it into the wok and toss everything together - it should smell really fragrant. Pour in the Chinese Chicken Stock, bring the soup to a boil, and simmer for 10 minutes. Add the tofu and cook for 3 minutes.
  • Dissolve the cornstarch in the water and stir until smooth. Mix the slurry into the soup and continue to simmer until the soup thickens. Remove the soup from the heat and stir in 1 direction to get a current going, then stop stirring. Slowly pour in the beaten eggs in a steady stream and watch it spin around and feather in the broth (it should be cooked almost immediately.) Garnish the hot and sour soup with chopped green onions and cilantro before serving.
  • Put the chicken in a large stockpot and place over medium heat. Toss in the green onions, garlic, ginger, onion, and peppercorns. Pour about 3 quarts of cold water into the pot to cover the chicken by 1-inch. Simmer gently for 1 hour, uncovered, skimming off the foam on the surface periodically.
  • Carefully remove the chicken from the pot and pass the stock through a strainer lined with cheesecloth to remove the solids and excess fat. Cool the chicken stock to room temperature before storing in the refrigerator, or chill it down over ice first.
  • Yield: About 2 quarts

1 teaspoon sesame oil, plus 1 teaspoon
1 teaspoon thin soy sauce, plus 2 tablespoons
1 teaspoon cornstarch
Peanut oil, to cook
4 dried chiles, chopped
1 tablespoon minced ginger
8 cups chicken stock
1 teaspoon sugar
1 cup bamboo shoots, julienne (buy whole shoots and soak in water for 30 minutes, then cut)
1/2 cup dried wood ear, re-hydrated and julienned (definitely fresh if available)
2 eggs lightly beaten
2 tablespoons cornstarch, mixed with cold water to form a paste
1/4 cup rice vinegar
1/4 cup chopped scallions
2 tablespoons chopped cilantro
Salt and white pepper
Tofu Fritter, recipe follows
1 pound silken tofu
3 eggs, separated, whites beaten to stiff peaks
2 tablespoons sliced scallions
1 teaspoon sesame oil
1/2 tablespoon minced ginger
2 tablespoons minced lap chong (Chinese sausage)
Salt and white pepper
Rice flour, to coat

Steps:

  • Combine the pork with the sesame oil, soy, and cornstarch. Let stand for 30 minutes. In a hot stockpot, add oil and sear the pork, stirring quickly then set aside. Add the chiles and ginger, and stir. Add the stock, sugar, bamboo and wood ear and bring to a boil. Season. While boiling, drizzle in the egg to form ribbons. Add the cornstarch and stir constantly to thicken. Add vinegar, soy, sesame oil, scallions and cilantro including the pork and check for seasoning. I love my soup tart and spicy so more vinegar and white pepper can be added. Add Tofu Fritters to each bowl of soup and serve.
  • Preheat a fryer to 400 degrees F.
  • In a mixing bowl, whisk together the tofu, yolks, scallions, sesame oil, ginger, and sausage. Season and fold into egg whites. Using 2 spoons, make quenelles and gently place in a dish of rice flour and coat using your hands. Place in deep fryer and fry to golden brown, about 2 to 3 minutes. Drain on paper towels and season, place in soup, and immediately serve.

5 cups chicken broth, homemade or low-sodium canned
2 tablespoons dried broken tree ear mushrooms
10 dried shitake mushrooms
2 cloves garlic, crushed and peeled
1/2-inch slice fresh ginger
3 scallions
1 tablespoon soy sauce
3 tablespoons black vinegar or balsamic vinegar plus more to taste
1/2 teaspoon freshly ground black pepper
1/4 teaspoon kosher salt plus more to taste
3 tablespoons cornstarch dissolved in 3 tablespoons cold water
1 large egg lightly beaten
1/2 teaspoon Asian toasted sesame oil
4 ounces firm tofu (bean curd), cut into 1/2-inch cubes

Steps:

  • Freeze the pork tenderloin until firm, about 30 minutes; slice it into very thin slices, then into narrow strips. Refrigerate the pork. Put the tree ear mushrooms in a small bowl and the shiitake in another. Bring a small pot of water to a boil. Pour the hot water over the mushrooms and set them aside to re-hydrate for about 30 minutes.
  • Meanwhile, combine the broth, garlic, ginger, in a large sauce pan. Crush the white part of 1 scallion with the side of a knife, add to the pan, simmer, covered for 15 minutes.
  • Thinly slice the remaining scallions and reserve. Remove the mushrooms from the water and discard the liquid. Squeeze out any excess moisture from the shiitake and thinly slice.
  • Remove the garlic, ginger, and scallion from the broth and discard. Add the mushrooms, soy, vinegar, pepper, and salt and bring to a simmer. Whisk in the cornstarch mixture, bring to a boil, and then simmer over medium heat for 5 minutes. Pour the egg into the soup and stir once to make delicate threads. Stir in the remaining scallions, oil, tofu, and pork, return to a simmer. Remove from the heat to prevent the meat from getting tough, adjust seasonings to taste. Serve immediately.

Hot and Sour soup is one of my favorite foods. I grew up in the NYC metro area so it was always easy to get delicious soup anytime. Unfortunately I'm currently living in a part of the country where that is not the case! I'm taking it on myself to come up with recipes that are satisfying when I'm homesick. This is a combination of several recipes I tried, but mainly Tyler Florence's. The pork is easier to cut if you put it in the freezer for ten minutes first.

8 ounces shiitake mushrooms, sliced
4 ounces oyster mushrooms, sliced
2 tablespoons oil
1 -2 tablespoon chili paste
1 tablespoon ginger paste (or minced ginger)
4 garlic cloves, smashed
1/2 cup bamboo shoot, thinly sliced (one small can's worth)
1/4 cup soy sauce
1/4 cup rice vinegar
1 teaspoon salt
1/2 teaspoon white pepper (or more to taste)
1 pinch sugar
6 cups chicken broth
3 tablespoons cornstarch, dissolved in 1/4 cup water
1 piece firm tofu, drained, sliced and chopped (optional)
2 large eggs, lightly beaten
3 scallions, chopped

Steps:

  • Heat the oil in a large pot over medium-high flame.
  • Add the smashed garlic, ginger paste, chili paste, shiitake and oyster mushrooms, and bamboo shoots. Cook 1-2 minutes, stirring constantly.
  • Mix the soy sauce, vinegar, salt, pepper, and sugar in a small bowl, pour it into the pot. Cook 2-3 minutes to let flavors blend.
  • Pour in the chicken broth, bring the soup to a boil, and simmer for 10 minutes.
  • Meanwhile, dust pork with cornstarch. You will probably need about 2-3 tbsp, depending on how much pork you have. Season with a few shakes of white pepper and mix thoroughly.
  • Heat a pan with 1 tbsp oil and fry pork until mostly cooked through. It will finish cooking in the soup but you want the outside a little brown. Add to soup.
  • If you haven't already, dissolve the 3 tbsp cornstarch in the 1/4 cup water and stir until smooth. Pour into the soup and continue to simmer 5 more minutes, until soup thickens. If using tofu, add at this step.
  • Remove the soup from the heat and stir in 1 direction until the soup is spinning on its own. Then, slowly pour in eggs in a steady stream using a fork to stir if necessary to break up pieces. (The egg should be cooked almost immediately.).
  • Add scallions and enjoy!

I'm very excited to be sharing what is probably the most delicious soup I still haven't done a video for--unless I have and forgot. Yes, it's hot, and yes, it's sour, but it's also so much more, and other than a little bit of slicing and dicing, this is relatively fast and simple to make. This is almost always served as an appetizer in a Chinese restaurant, but if you added some pork to this, or some little fun-sized meatballs, it would make a fantastic meal. Serve with extra sliced green onions on top.

¾ ounce dried shiitake mushrooms
2 tablespoons soy sauce, or more to taste
¼ cup seasoned rice vinegar
1 teaspoon ground white pepper, or to taste

2 teaspoons vegetable oil
1 teaspoon minced fresh ginger root
¼ cup sliced green onions
4 cups chicken broth

Steps:

  • Soak dried shiitake mushrooms in hot water, stirring occasionally, until soft, 15 to 20 minutes. Drain well and slice into thin strips.
  • Whisk soy sauce, vinegar, ground white pepper, and sesame oil together in a small bowl for hot and sour mixture; set aside until needed.
  • Whisk cornstarch and water together in another small bowl for slurry; set aside until needed.
  • Heat vegetable oil in a saucepan over medium-high heat. Add ginger, sliced green onions, and shiitake mushrooms. Cook, stirring, for about 2 minutes. Pour in chicken broth and bring up to a simmer. Reduce heat to medium and simmer for 5 minutes.
  • Stir in carrot, red pepper, bamboo shoots, tofu, and the hot and sour mixture. Let simmer for 5 minutes.
  • Raise heat to medium-high and bring to a boil. Stir the soup slowly with a spoon while transferring in the beaten eggs in a steady stream to create thin ribbons. Keep stirring until the soup comes back to a boil. Reduce heat to medium.
  • Stir the cornstarch slurry to make sure it's well blended, then slowly drizzle it into the soup while stirring constantly. Soup should thicken up within 1 to 2 minutes. Turn off heat, taste for seasoning, and serve.

5 cups vegetable broth
1/2 cup drained canned bamboo shoot, rinsed and julienned
2 teaspoons fresh ginger, minced
1/4 teaspoon salt
3 tablespoons red wine vinegar, to taste
crushed red pepper flakes
3 tablespoons cornstarch, mixed with
3 tablespoons water
1 large egg
1 large egg white
2 1/2 tablespoons black soy sauce or 3 tablespoons light soy sauce, plus a pinch of sugar
4 ounces firm tofu, cut into 1/3 inch dice
1 teaspoon sesame oil
1 spring onion, finely sliced

Steps:

  • In separate bowls, cover the lily buds and tree ear mushrooms with hot water; let soak until softened, about 30 minutes; drain and thoroughly rinse the lily buds and mushrooms; trim the tough ends from the buds and halve them crosswise.
  • In a large pot, combine the broth, lily buds, mushrooms, bamboo shoots, ginger and salt; cover and bring to a boil over medium-high heat; reduce the heat and simmer for 10 minutes; stir in the vinegar and 1 tsp red pepper and boil over medium-high heat for 2 minutes; beat the cornstarch mixture into the soup in a steady stream; in a bowl, combine the egg and egg white and beat into the soup; stir in the soy sauce, tofu and sesame oil and cook over medium heat until warmed through; season with red pepper and garnish with spring onion.

2 (14 1/2 ounce) cans reduced-sodium chicken broth
2 tablespoons soy sauce
1/4-1/2 teaspoon crushed red pepper flakes
2 cups water
8 ounces fresh shiitake mushrooms, stemmed and caps thinly sliced (about 4 cups)
3 -4 tablespoons rice vinegar
2 tablespoons cornstarch
1 egg, lightly beaten
7 ounces firm tofu or 7 ounces soft tofu, drained and cut into 1/4 inch cubes
2 tablespoons finely grated fresh ginger
3 scallions, sliced thinly

Steps:

  • In a large pot, combine broth, soy sauce, pepper, and water.
  • Bring to a boil over medium heat.
  • Add mushrooms. Reduce heat and simmer for 10 minutes or until tender.
  • Meanwhile, whisk together vinegar and cornstarch in a small bowl.
  • Add vinegar mixture to the pot and simmer, stirring, for about one minute or until thickened.
  • Add egg through a slotted spoon while stirring.
  • Stir in tofu.
  • Remove from heat, cover, and let stand for 1 minute.
  • Press ginger through a small sieve to release juice into the soup. Discard solids.
  • Sprinkle with scallions and serve.
